CLEMENTINE JELLY
Christmas in a glass. You can use virtually any type of juice for jelly but clementines are delicious this time of year.

- Pour the clementine juice into a pan on a high heat to warm through - don't let it boil. Add a little sugar to sweeten - not too much, you still want that zippy clementine flavour.
- Peel the ginger and grate a tiny bit into the pan. Grate a bit more onto a chopping board, then squeeze it over the pan of juice so you get a few drips of ginger juice in there. Take the juice off the heat.
- Sprinkle the gelatine over the juice, then whisk in quickly.
- Arrange 6 small serving glasses on a tray. Peel the clementines, slice into thin rounds and put 2 in each glass. Sieve the juice mix into each glass, allow to cool, then refrigerate for about 3 hours, or until set.
- To serve, mix the vanilla into the yoghurt and dollop a spoonful on top of each jelly, then grate or shave a few pretty bits of chocolate on top.

- Put the gelatine sheets into a bowl of cold water to soften for a few mins. Put 100ml clementine juice into a small pan and gently heat. When the gelatine feels soft and the juice is just simmering, remove the juice from the heat and squeeze out any excess water from the gelatine sheets. Drop the sheets into the hot juice and swirl to melt. Make sure there are no visible lumps of gelatine before you move onto the next stage.
- Stir the hot juice into the rest of the juice with the prosecco, then transfer to a jug. Pour between 6 small glasses. Sit the jellies in a small tray or dish, cover with a sheet of cling film and chill for at least 4 hrs (or up to 48 hrs) until set.
- When ready to serve, use a pair of tweezers to carefully put a piece of gold leaf on the surface of each jelly.

CRANBERRY & CLEMENTINE JELLY
Tangier than red current jelly, this fruity condiment works well cold cuts, or to enrich gravy. It also makes a great Christmas gift.

- Tip the berries and clementines into a preserving pan, and pour in 1 litre of water. Gently heat, stirring frequently, for 30 mins until the berries are soft. As the mixture softens, lightly crush to release all the juice from the berries. You can do this with a potato masher.
- Cool the mixture, then tip it into a jelly bag suspended over a large bowl, or into a large plastic sieve lined with muslin. You need a plastic sieve, as the acidity in the fruit will affect anything metal. Leave overnight so that the juices run through.
- The next day, measure the liquid. You should end up with 1.4 litres. If you have less, make up the mixture with water. If more, boil to evaporate the excess. Meanwhile, sterilise your jars and put a small plate in the freezer to chill.
- Return the liquid to the pan and add the sugar. Heat until dissolved, then bring to the boil, skimming off any scum that rises to the surface, and allow to cook for about 20 mins. Use a sugar thermometer to take the temperature up to 105C or, after 15 mins, start checking it's set by dropping the mixture onto a chilled plate. When it is ready, the mixture will appear set when you push your finger through. The drips that come off the spoon will also look syrupy. Spoon off any remaining scum and stir in the Port. Pot into the jars, then leave to set. Will keep for at least a year.

- Mix clementine juice and calcium water in a medium pan. Measure the sugar and thoroughly mix pectin into the sugar.
- Bring the clementine juice and calcium water mixture to a boil. Add sugar-pectin mixture, stir vigorously 1 to 2 minutes while the mixture comes back to a boil. Remove from the heat and immediately pour into a clean glass jar. Cover and refrigerate until the jelly is set.
- If you intend to use the jelly quickly, say within a week or two, you can store the jelly in a regular clean jar. However, if you wanted to make this jelly as a preserve, don’t forget to sterilize the jar before pouring the jelly into it for longer storage.
