Steps:
- rub inside of large bowl with garlic clove.
- place mustard, anchovies, garlic puree and lemon juice in a bowl, mix well to make a paste.
- add Worcestershire sauce and egg yolks, mix well with whisk.
- add vinegar and mix well.
- incorporate olive oil in thin streams while whisking constantly. add half of Parmesan cheese and mix again.
- add lettuce to salad bowl containing salad dressing, season with salt and pepper, toss to mix well.
- sprinkle with more lemon juice if desired.
- add croutons and bacon to salad and toss again.
- sprinkle with remaining cheese and serve.
LEMON CAESAR SALAD
The classic salad was named for it's creator Chef Caesar Cardini. This updated rendition is thickened with sour cream instead of a coddled egg. This is taken from the Pillsbury Sensational Salads Cookbook 1991.

- In medium bowl using wire whisk, blend all dressing ingredients except sour cream and oil.
- Gradually add oil, whisking constantly until smooth.
- Add sour cream, whisking until smooth.
- In large bowl, combine all salad ingredients; toss gently. Pour dressing over salad, toss to combine.

Steps:
- Rub the inside of a salad bowl with garlic clove and discard clove.
- Stir anchovy pieces, olive oil, Worcestershire sauce, and spices to make a dressing.
- Coat lettuce with dressing.
- Break cottled egg (directions below) over salad squeeze lemon and add croutons, (directions below) and cheese.
- Toss and serve.
- To make croutons: Butter both sides of bread and sprinkle with garlic powder.
- Cut into cubes and toast either in a dry skillet or in a 400F oven until golden and dry. about 10-15 minutes.
- To make coddled egg: Place cold egg in warm water.
- Cover with boiling water for 30 seconds
- Immerse in ice water to stop cooking process.

- Rub inside of bowl with bruised garlic clove - discard clove.
- Mix mustard, anchovies, garlic puree and lemon juice in bowl to make a thick paste.
- Using a whisk add egg yolks and Worcestershire sauce, mix well.
- Add vinegar, then slowly add oil while whisking constantly.
- Add half the Parmesan and whisk again.
- Tear lettuc leaves into smaller pieces and add to salad bowl containing dressing.
- Add salt and pepper as desired, tossing salad until evenly coated.
- Add croutons and crumbled bacon.
- Toss again then sprinkle remaining cheese and serve.

KITTENCAL'S FAMOUS CAESAR SALAD
I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is *that* good! --- although I do think the dressing is better with the anchovy it can certainly be made without them. In a pinch I have even substituted buttermilk for the half and half cream, just use about the same amount --- this dressing gets stronger with refrigeration time so a small amount of fresh garlic goes a long way! ---- usually one recipe without doubling is perfect for one large romaine lettuce, if you are serving a large crowd of people you might want to double -- salad dressing will not work for this use *only* mayonnaise, I find Hellman's brand mayonnaise works the best and for the perfect companion to this salad see my recipe#125034-------------LOWER-FAT OPTION use reduced fat mayonnaise and fat-free half and half or low-fat milk --- also see my recipe#66596

- In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
- Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
- Adjust seasonings to taste.
- Thin with buttermilk (or milk) for a thinner consistency if desired.
- Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
- Toss desired amount of dressing with Romaine lettuce and croutons.
- Sprinkle with more grated Parmesan cheese if desired.

EL TORITO SOUTHWESTERN CAESAR SALAD
El Torito Restaurant's Caesar salad has been a popular favorite for decades; I obtained the recipe in 1994 when it was published in the Los Angeles Times and have made it many times since. The recipe contains some Mexican ingredients such as pepitas, which are roasted pumpkin seeds, avilable at Trader Joes, as well as at Mexican markets. The cotija cheese ia a Mexican grating cheese. If not available use any hard grating cheese such as Parmesan.

- Cut tortillas into matchstick-size strips; then heat oil for deep-frying . Add tortilla strips and cook for a few seconds until crisp; remove with a slotted spoon, drain and set aside.
- Tear romaine lettuce into bite size pieces and place greens on six salad plates.
- Ladle Cilantro-Pesto dressing on each salad and sprinkle each dish with cotija cheese and tortilla strips.
- Arrange four red pepper strips like spokes on top of each salad and garnish with pepitas.
- For the Dressing.
- Place chile, pepitas, garlic, pepper, salt, oil, vinegar and cotija cheese in a blender or food processor; and blend for about 10 seconds, then add cilantro, bit by bit, until smoothly blended.
- Place mayonnaise and water in large stainless-steel bowl and whisk until smooth.
- Add blended chile mixture and mix thoroughly.
- If the dressing is made ahead, place in an airtight container and refrigerate. May be stored up to three days.
