CLAY POT CHICKEN RECIPE

Deliciously moist and tender chicken thighs with a few vegetables, all baked in a clay pot, make this a one pot meal that's super easy and quick.

6 fresh Chicken thighs, boneless and skinless
3 cloves Garlic
3 Carrots, sliced
1 small Onion, cut in quarters or smaller.
4 small Red Potatoes, quartered
3-4 pats of butter.
½ teaspoon Salt
½ teaspoon Black Pepper

Steps:

  • Fully submerge both parts of your clay baking pot under water. Soak for 30 minutes.
  • Prepare your vegetables.
  • Place the carrots in the bottom of the baker.
  • Add the potatoes.
  • Add the onions.
  • Add the garlic cloves.
  • Arrange the chicken thighs on top of the vegetables.
  • Sprinkle chicken with salt.
  • Sprinkle with black pepper.
  • Place the pats of butter on top of the chicken pieces.
  • Place the top on the baker.
  • Place the baker in a COLD oven.
  • Set oven temperature to 425F degrees. Let chicken bake for 60 minutes.
  • Remove lid from baker, let chicken bake for 10-15 more minutes to slightly brown.
  • Internal temperature of the chicken should be 165F degrees to be done.
  • Remove from oven when done. Let chicken rest for 15 minutes before serving.

Cooked and served in a clay pot, which maintains moistness in the meat during baking and retains heat while serving, this succulent, tender chicken is irresistible.

3 pounds to 4 pounds whole chicken
1 medium onion, coarsely chopped
2 cloves to 3 cloves of garlic, chopped
1 cup parsley, stems removed
1 tablespoon fresh rosemary (optional)
1 tablespoon butter or canola oil
Salt and pepper
Paprika for garnish

Steps:

  • Soak top and bottom of clay pot in cold water for 10 minutes, or follow soaking directions provided with the clay pot. Do not preheat oven. Rinse chicken in cold water, pat dry with paper towel. Lightly oil outside of chicken and sprinkle salt & pepper inside cavity and on the outside skin. Place chicken breast side up in clay pot and fill cavity of chicken with onion, garlic, parsley, fresh rosemary, and oil. Sprinkle paprika on top of chicken. Cover and put in a cold oven. Turn oven to 425 degrees F.; bake 90 minutes. Remove the top during the last 10 minutes of baking to brown. Remove from oven and place on hot pads or a towel. Do not put on a cold surface. Serve directly from clay pot as it retains heat well.

1 (3-pound) frying chicken, giblets removed and reserved
1 tablespoon olive oil
12 small onions, peeled
3 garlic cloves, peeled
6 sprigs parsley, plus extra for garnish
1/4 pound prosciutto, small dice
2 whole bay leaves
3 large tomatoes, peeled, seeded and chopped
1/2 cup dry white wine
1/3 cup tawny or ruby Port
2 tablespoons brandy
1 tablespoon Dijon mustard
Freshly ground pepper

Steps:

  • Preheat an oven to 350 degrees F. Rub the chicken all over with the oil, and loosely stuff the cavity with 3 onions, 1 garlic clove and 1 sprig of parsley. Set aside. On the bottom of a 3-quart terra-cotta jug or deep heavy casserole, spread half the prosciutto, 2 sprigs parsley, 4 onions, 1 garlic clove, 1 bay leaf and all of the giblets. Place the chicken head-first in the pot, or breast-side up in a casserole. Scatter the remaining onions, garlic, 3 sprigs parsley, prosciutto and bay leaf around and on top of the chicken. In a small bowl, combine the tomatoes, wine, Port, brandy, mustard, and pepper, and pour over the chicken. Cover the pot or casserole and bake for 1 1/2-2 hours, or until chicken is cooked through.
  • Remove pot from the oven, and carefully remove the onions and reserve. Drain the liquid from the pot into a large skillet. Lift out the chicken and transfer to a roasting pan fitted with a rack.
  • Use a slotted spoon to lift out the giblets from the pot, along with any remaining whole onions and add them to the reserved onions.
  • Set the skillet of liquid over high heat, bring to a boil, reduce to a simmer and cook for 10 minutes, or until liquid is reduced by half, stirring often. Preheat a broiler. Place the chicken under the broiler for 3 to 4 minutes, or until browned. To serve, cut the chicken into pieces and arrange on a large platter. Scatter the onions and giblets around the chicken, and spoon some of the warm sauce over the top. Garnish with parsley sprigs and pass extra sauce.

Don't see too many clay oven or clay pot recipes. This is a favorite of mine. It makes a chicken with a golden brown, very crisp skin.

1 (3 1/2-4 lb) whole chickens
1 lemon, quartered
1 teaspoon dried tarragon

Steps:

  • Soak clay oven in water to cover for 10 to 15 minutes.
  • Place lemon in chicken cavity. Tuck wings under, and tie legs together with string, if desired. Place chicken in clay pot, breast side up, and sprinkle with tarragon. Cover with lid.
  • Place in a COLD oven. Turn oven to 450 degrees Fahrenheit, and bake 1 hour. Uncover and bake 15 more minutes or until meat thermometer inserted into chicken thigh registers 180 degrees.

CLAY POT HONEY-LEMON CHICKEN

1 (3 1/2-pound) fryer chicken
1/4 cup plus 2 tablespoons fresh lemon juice (reserve lemon shell)
1 3/4 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 tablespoon melted butter, plus 4 tablespoons, softened at room temperature
2/3 cup honey
1 1/2 tablespoons soy sauce
4 tablespoons all-purpose flour
Serving suggestion: orzo, rice pilaf, or cooked white rice

Steps:

  • Prepare a clay roaster by soaking in cold water for 15 minutes.
  • Wash the chicken well inside and out under cool running water. Pat dry with paper towels. Rub chicken all over with 2 tablespoons of the lemon juice and season evenly on all sides with the salt and pepper. Place the reserved lemon shell inside the chicken cavity. Place the chicken inside the prepared clay roaster and brush with the melted butter. Cover the roaster and transfer to a cold oven. Set the oven temperature to 400 degrees F and cook for 45 minutes.
  • Combine the remaining 1/4 cup of lemon juice, honey, and soy sauce in a small saucepan and cook over medium heat until heated through. In a small bowl, make a paste from the remaining 4 tablespoons of butter and the flour. Whisk the butter-flour mixture into the melted honey-lemon-butter mixture. Continue to cook until the sauce has thickened slightly. Remove the clay cooker from the oven and pour the honey-butter mixture all over the chicken, making sure to evenly cover the breast and any exposed areas. Cover the roaster and return the chicken to the oven for 45 minutes, or until it is cooked through and very tender. Transfer the chicken to a platter or carving board, cut into pieces and serve immediately. Transfer the sauce to a gravy boat for serving, or spoon some of the sauce over each piece of chicken.

VIETNAMESE CLAY POT CHICKEN

This is a delicious and well known Vietnamese dish which you can prepare in your own home. Many traditional Vietnamese recipes are prepared in a clay pot, which is first soaked in water before being placed in a cold oven. As the pot heats up in the oven, tiny water particles are released, causing a pressure-steaming effect to cook the food. The result? Intensified flavour and tenderness, retention of nutrients and vitamins, and a wonderful aroma when the lid is removed. If using your clay pot for the first time, submerge it and the lid overnight in cold water, then proceed with the recipe. Thereafter the pot and lid need only be soaked for 15 minutes prior to using. It is important to use an unglazed clay pot, not a terra cotta baking pot with glazed interior and unglazed exterior. When removing the hot clay pot from the oven, always set it on a cloth pad or towel rather than a cold surface, or the sudden change in temperature may crack the pot. Preparation time for this recipe does not include soaking the pot or the time needed to marinate the chicken.

2 small yellow onions, quartered
12 ounces baby bok choy, chopped coarsely
1/2 cup chicken stock
4 ounces fresh shiitake mushrooms, halved (optional)
4 garlic cloves, crushed
1 tablespoon vietnamese fish sauce, plus
1 teaspoon vietnamese fish sauce
1 tablespoon soy sauce, plus
1 teaspoon soy sauce
1 tablespoon hoisin sauce, plus
1 teaspoon hoisin sauce
2 tablespoons lime juice, plus
2 teaspoons lime juice
2 tablespoons finely chopped fresh lemongrass (white part only)

Steps:

  • Remove the skin from the chicken.
  • Mix all marinade ingredients together in a large bowl, add the chicken pieces and stir gently.
  • Cover and place in the fridge for at least three hours, but not more than 24 hours.
  • Place chicken, marinade, quartered onions, bok choy and chicken stock into the soaked clay pot, and mix gently.
  • Cover and place the clay pot into a cold oven.
  • Turn oven temperature to 360F - 375F (moderate heat).
  • Bake for 1 hour or until chicken is tender.
  • If using shiitake mushrooms, add 15 minutes before the end of cooking time.

HERB AND LEMON CHICKEN IN A CLAY POT

This recipe utilizes a clay cooker, such as a Romertopf. (for alternative cooking method without a clay pot, see diner524's review) The chicken stays juicy but still gets a crispy skin on top. Remember the clay pot and lid need to be soaked in cold water for 15 minutes before using. Try to find an Herbes de Provence that includes lavender flowers. This is good with steamed rice, or roasted vegies. The juices from the clay pot are good over the rice or vegies.

2 tablespoons unsalted butter, room temperature
1 1/2 teaspoons herbes de provence
4 lbs chicken, whole
1 large lemon, cut in half
salt and pepper, to taste
1 medium yellow onion, peeled and cut into 8 wedges
1 stalk celery, cut into 8 pieces
1 large carrot, cut into 8 pieces
3 garlic cloves, peeled and left whole
1/2 cup chicken broth (or white wine)

Steps:

  • Mash Herbes de Provence into the softened butter until well blended.
  • Rinse chicken inside and out and pat dry with paper towels.
  • Soak clay pot and lid in cold water for 15 minutes.
  • Meanwhile, place 1/2 lemon in cavity of chicken and truss chicken with kitchen twine. Fold wings under. Rub butter mixture over chicken. Sprinkle with salt and pepper.
  • Slice remaining 1/2 lemon into 3 or 4 slices.
  • After soaking, line bottom of pot evenly with onion, celery, carrot, garlic and lemon slices. Place chicken, breast side up, on top of vegies.
  • Pour broth over chicken and cover pot with soaked lid.
  • Place in a COLD oven and set heat at 450°F.
  • Cook for 1 hour and 15 minutes, or until the legs move easily and skin is browned.
  • (Lid can be removed the last 10 minutes, for crisper skin.).
  • Transfer to a platter and let rest 10 minutes before carving. Serve with the pan juices and vegies, if desired.

8 boneless skinless chicken breasts
45 ml grated coconut
30 ml vegetable oil
1 small onions or 2 shallots, finely chopped
2 garlic cloves, crushed
5 cm lemongrass
2 1/2 cm fresh gingerroot, thinly sliced
2 fresh chili peppers, seeded and chopped
1 teaspoon tamarind paste
400 g coconut milk
300 ml chicken stock
2 kaffir lime leaves (optional)
15 ml granulated sugar
15 ml rice wine vinegar or 15 ml white wine vinegar
2 ripe tomatoes
1 bunch fresh coriander (to garnish)

Steps:

  • Preheat the oven to 180 degrees Celcius.
  • Dry fry the coconut in a large wok until evenly browned. Add the vegetable oil, shallots or onion, garlic, lemon grass, ginger, chillies and tamarind paste. Fry for 2 - 4 minutes to release the flavours. Add the chicken pieces to the wok and brown evenly with the spices for 2 - 3 minutes.
  • Strain the coconut milk, and add the thin part with the chicken stock, lime leaves, if using, sugar and vinegar. Transfer to a glazed clay pot, cover and bake in the centre of the oven for 50 minutes or until the chicken is tender. Stir in the thick part of the coconut milk and return to the oven for 5-10 minutes.
  • Place the tomatoes in a bowl and cover with boiling water to loosen and remove the skins. halve the tomatoes, then remove the seeds and chop into large dice.
  • Add the chopped tomatoes to the finished dish, sprinkle with the chopped coriander and serve.
  • Plain rice is the usual accompaniment, but I normally serve with Naan Bread.
