¼ cup butter, divided
1 head green cabbage, shredded
ground black pepper to taste

Steps:

  • Heat 3 tablespoons butter in a large pot over medium-low heat until mostly melted. Add cabbage. Place remaining 1 tablespoon butter on top of the cabbage. Cover and cook until cabbage is tender, about 10 minutes. Uncover and stir cabbage to coat evenly with butter. Remove from heat and let stand, covered, about 3 minutes. Season with black pepper.

Burnt Butter Frosting image

This unusual frosting recipe is made with burnt butter! It is excellent on yellow cakes, and I always get rave reviews. Do not substitute margarine for butter in this recipe!

½ cup butter
4 cups confectioners' sugar
4 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • Place the butter in a saucepan over medium-high heat. Cook, stirring constantly, until the butter is a nice tan color. If it gets dark brown or black you have allowed it to burn too long. When butter has been "burned" remove the saucepan from the heat.
  • Slowly mix in confectioners' sugar and vanilla. Beat on high speed of an electric mixer until light and fluffy. Beat in the milk a tablespoon at a time until desired spreading consistency is achieved. Use frosting immediately, as this frosting will set up quickly.

4 tbsp duck fat or sunflower oil
2 medium hispi cabbage , outer leaves trimmed, then quartered lengthways
50g butter , diced
75g dried breadcrumbs
3 tbsp dried onion flakes
½ tsp garlic powder
1 tsp dried chilli flakes
70g toasted hazelnuts , chopped
2 tbsp chopped sage

Steps:

  • Mix all the crumb ingredients together in a bowl with a pinch of salt and set aside.
  • Heat oven to 180C/160C fan/gas 4. Heat the duck fat in a large flameproof roasting tin. Sear the cabbage wedges in the tin until the cut sides are crisp and slightly burnt, then turn them so they are cut-side up and scatter over the crumb mix. Dot over the butter and bake for 15 mins until the crumb is golden.

  • Grind kombu in a spice mill or with a mortar and pestle to a fine powder. (You should have about ¾ tsp.) Heat oil in a medium heavy skillet (such as carbon steel or cast iron) over medium-high and add half of cabbage, cut side down (reserve remaining half for another use). Cook cabbage, undisturbed, until underside is almost blackened (the edge of the sides will start to brown as well), 10–15 minutes.
  • Reduce heat to medium-low, add butter to skillet, and shake pan to help butter get in, around, and under cabbage. As soon as butter is melted and foaming, tilt skillet toward you and spoon browning butter over cabbage, being sure to bathe the area around the core (thick and dense, this part will take the longest to cook), 30 seconds. Stop basting and let cabbage cook, undisturbed, 3 minutes, then baste again, 30 seconds more. Repeat cooking and basting process twice more (butter will continue to get darker as it cooks, and that's okay; add a knob or two more to bring it back from the brink), adding kelp to brown butter just before final basting. At this point, cabbage should be tender (a cake tester or skewer inserted into the core should meet with no resistance) and the outer leaves have pulled away from one another. If cabbage is not done, repeat cooking and basting process once more.
  • Transfer cabbage to a cutting board and cut into two quarters. Pull leaves open slightly and tuck basil here and there between a few leaves. Drizzle with vinegar and season with salt. Let cabbage sit a minute or two for basil to soften before serving.

  • Prepare grill for medium-high heat (or heat a large cast-iron skillet over medium-high). Cut cabbage in half through core; cut each half into 3 wedges, keeping core intact. Drizzle with 3 Tbsp. oil and rub to coat; season all over with salt.
  • Grill cabbage until deeply charred on cut sides and a paring knife slides easily through center, 6–8 minutes per side. Transfer to a cutting board and let cool 5 minutes (this will allow the cabbage to soften further). Cut some wedges in half crosswise; leave the rest whole.
  • Combine garlic, tahini, honey, cumin, and ¼ cup oil in a medium bowl. Finely grate zest from lemon into bowl, then cut lemon in half and squeeze juice into bowl. Add a big pinch of salt and whisk until smooth. Whisking constantly, add 3–4 Tbsp. cold water; tahini sauce should be creamy but pourable.
  • Arrange cabbage wedges on a platter and spoon tahini sauce over. Scatter dill over cabbage, then sprinkle with sesame seeds. Drizzle a little oil over everything to finish.
