This cake is moist and delicious. It's okay to substitute another cola such as Pepsi for the coke, but under no circumstances should diet versions of the drink be used.

2 cups flour
2 cups sugar
1 cup butter, melted
2 tablespoons unsweetened cocoa
1 cup Coca-Cola (with fizz)
1/2 cup buttermilk
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon vanilla extract
1 1/2 cups miniature marshmallows
6 tablespoons butter
1 cup dark brown sugar
2/3 cup creamy peanut butter
1/4 cup milk
2/3 cup chopped peanuts

Steps:

  • To make the cake: preheat the oven to 350*F Grease and flour a 9 X 13 X 10 inch sheet cake pan.
  • Combine the flour and sugar in a large bowl.
  • In a separate bowl, combine the butter, cocoa and Coke, and pour over the flour and sugar mixture.
  • Stir until well blended.
  • Add the buttermilk, eggs, baking soda and vanilla.
  • Mix well.
  • Stir in the marshmallows.
  • Pour into the prepared pan, and bake for 40 minutes.
  • Remove the cake from the oven and frost while still barely warm.
  • To make the frosting: in a bowl cream the butter, sugar and peanut butter.
  • Beat in the milk.
  • Fold in the peanuts.
  • Spread over the cake.
  • Place the frosted cake under the broiler about 4 inches from the heat source.
  • Broil just a few seconds, or until topping starts to bubble.
  • WATCH COMSTANTLY, being careful not to scorch the frosting.
  • Let cool at least 30 minutes before serving.

2/3 cup smooth peanut butter
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees and spray a 9x13-inch baking pan with baking spray.
  • In a large bowl, whisk together flour and sugar.
  • In a medium bowl, whisk together melted butter, cocoa powder, and Coke. Pour into bowl with flour and stir until mixed well.
  • Add buttermilk, eggs, baking soda, and vanilla and mix well.
  • Stir in mini marshmallows and pour into prepared pan. Bake for 35 to 40 minutes. Let cake cool for 10 minutes before frosting.
  • To make frosting, beat butter, brown sugar, and peanut butter with an electric mixer until blended.
  • Beat in the milk and then stir in the peanuts. Spread frosting on cake.
  • Place cake under the broiler for a minute or two, or until the frosting just starts to get browned.

I don't remember where I got this from, but have been making it for years. It's easy and quick, and can bake while you are having supper. The recipe for the cake portion is already listed on Zaar Recipe #58603, however this one has the topping. It is also very delicious plain.

2 eggs
1 cup sugar
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons butter
1/2 cup brown sugar
1/4 cup butter, soft
1 cup unsweetened coconut

Steps:

  • Preheat oven to 350*. Grease a 9 x 9 baking dish.
  • In a small bowl, beat eggs for 4 minutes.
  • Slowly add sugar. Beat 4 minutes.
  • Add vanilla and mix thoroughly.
  • In a separate bowl combine dry ingredients.
  • Add to the egg mixture and mix just until blended.
  • Heat milk and butter just until milk starts to foam.
  • Add to batter and mix well.
  • Bake for 25 minutes at 350*. Frost while warm.
  • Topping:.
  • Cream butter and sugar.
  • Add coconut and mix well.
  • Spread on cake while warm.
  • Broil for 4 - 5 minutes, or until golden brown.
  • You MUST keep an eye on this as it will burn very easily.

Broiled Peanut Butter Frosting
6 tablespoons softened butter
1 cup dark brown sugar
2/3 cup chunky peanut butter
1/4 cup milk
2/3 cup chopped salted peanuts

Steps:

  • Preheat oven to 350 degrees F. Butter and flour a 9x13x2-inch pan. Combine flour and sugar. Combine melted butter, cocoa and Coke. Add to flour mixture, stirring well. Add buttermilk, eggs, baking soda, and vanilla. Mix well. Fold in marshmallows. Pour into prepared pan. Bake 30-35 minutes. Remove cake from oven and frost while still warm. 1 package yellow cake mix
1 cup sour cream
3 eggs
1/3 cup butter, melted (5 1/3 Tbsp.)
1/4 cup milk
1 cup jelly or 1 cup jam, your favorite flavor
1 cup butter, softened
4 ounces cream cheese, softened
1/2 cup creamy peanut butter
1 (16 ounce) box powdered sugar
chocolate chips or Reese's pieces, for garnish

Steps:

  • MAKE THE CUPCAKES: Preheat oven to 325*F; line 24 muffin cups with paper or foil liners.
  • Combine the cake mix, sour cream, eggs, melted butter, and milk; beat with an electric mixer on low speed for 30 seconds.
  • Increase mixer speed to medium; beat 2 minutes more.
  • Divide batter evenly in the prepared tins; bake for 30 minutes, or until the tops spring back when lightly pressed and a toothpick inserted in the center comes out clean.

This is the recipe my mom used to make my birthday cake when I was a little girl, and the recipe for my son's cake when he requests chocolate. It is very similar to the other Chocolate Coca-Cola Cakes, but the main difference is the little bit of cinnamon that is in it. It is our favorite chocolate birthday cake. For a prettier cake, you can use double-boiler seven minute frosting....it's not chocolate, but it does make a very pretty cake! It is a nice white frosting...almost like a meringue type frosting. Cook time does not include the 7 minutes for the white icing!

3 tablespoons cocoa
1 cup Coca-Cola

  • In a heavy saucepan combine 1/2 cup margarine or butter, 1/2 cup oil, 3 tbsp cocoa, and 1 cup coke. Bring to a boil. Pour over the dry ingredients mixed earlier. Mix until blended.
  • In a small bowl, mix together 1/2 cup buttermilk and 1 tsp baking soda. Then add it to the mixture.
  • Add 2 eggs and 1 tsp vanilla and beat inches Then fold in the marshmallows.
  • Bake in a 13 x 9 x 2 inch pan for 30 to 35 minutes (or until a toothpick inserted in the middle comes out clean) in a 350 degree oven.
  • For the frosting: Place 1/2 cup margarine or butter, 3 tbsp cocoa, and 5 tbsp coke in a saucepan and bring to a boil. Add the confectioners sugar and vanilla. Mix well. If it is too thick, and a drop or two more of coke.
  • If you want the white 7 minute frosting: (These ingredients are not listed above!) In the top of a double boiler, combine 1 1/2 cups sugar, 1/4 cup + 1 tbsp cold water, 2 egg whites, 1 tbsp light corn syrup, and a dash of salt. Beat at a low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat constantly on high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla and beat 2 minutes or until frosting is thick enough to spread.
