Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, sour cream, refried beans, and taco seasoning in a bowl. Fold jalapeno pepper into the dip; spread into a 9x13-inch baking dish.
- Bake in preheated oven for 30 minutes. Top with shredded cheese and continue cooking until the cheese has melted, about 5 more minutes.

MEXICAN 7 LAYER TACO DIP (WITH BEEF)

- Using a 9″ skillet pan, pan fry ground beef on medium heat. Season beef with one pack of taco seasoning (approximately 3 tablespoons) and 3 tablespoons of water. Mix together. Spread seasoned beef evenly into bottom of 9×13 glass dish. In a small glass bowl, microwave refried beans for 30 seconds and stir. Lay refried beans on top of the layer of seasoned beef. Mix cream cheese, sour cream and second pack of taco seasoning (approximately 2 tablespoons). More if desired. Spread cheese mixture evenly on top of refried beans. Top next layers with toppings of your choice. In the pictures above, the next layers are shredded cheese, lettuce, tomatoes, onions and green onions. Set in refrigerator for at least 30 minutes before serving.
SECRET RESTAURANT REFRIED BEAN DIP
When I buy a can of refried beans they never taste as good as restaurant refried bean dip. I found this recipe and it tasted great!

- 1. Finely chop jalapeno and shred cheese. Sqeeze one fresh lime.
- 2. Mix refried beans and sour cream.
- 3. Add all ingredients together and mix.
- 4. Microwave on high for one minute intervals until all cheese is melted.
- 5. Serve with your favorite chips, my favorite chips are Juanitas! You can also add some salsa for flavor. My favorite (after many tested) salsa is Herdez! Next to homemade Herdez is the best!

- Preheat the oven to 350° and have ready an 8"x8" square baking dish. Mix together the Cheddar and Monterrey Jack Cheese and set aside.
- Add the cream cheese and sour cream to a large bowl and stir to combine with a wooden spoon or handheld mixer on medium speed. Add the refried beans, half of the cheese mixture, taco seasoning, and hot sauce to the bowl, and stir (or mix on low) until well combined.
- Transfer the bean dip to the baking dish and top with the remaining cheese. Bake for 20 minutes, uncovered. Top with green onion garnish (if using), serve, and enjoy!

- Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
- Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

- Grease a microwave-safe 9x12 inch baking dish, and set aside.
- Heat a skillet over medium-high heat, and cook and stir the beef until crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Mix together the cooked ground beef, refried beans, oregano, and cumin in a bowl. Spoon the mixture into uncooked manicotti shells, and place the filled shells into the baking dish. Combine the water and picante sauce in a bowl, and pour over the shells.
- Cover the dish with microwave-safe plastic wrap, cut a few holes in the wrap with a knife to vent, and microwave on High power for 10 minutes. Carefully pull back the plastic wrap to avoid steam, and turn the shells over with tongs. Replace the plastic and microwave an additional 15 to 20 minutes on Medium power, until the shells are cooked and the liquid has been absorbed.
- Pull off the plastic wrap, and spoon sour cream over the shells. Sprinkle with Monterey Jack cheese and chopped green onions for garnish.

- In your Instant Pot, add the peruano beans and water, along with the chiles de arbol.
- Close the lid and seal the valve. Set the pot on High (manual pressure) for 45 minutes.
- Once the beans are done, do a natural release for 10 minutes, then quick release any remaining pressure.
- Pour the contents of the Instant Pot into the blender along with the salt and chili powder, and puree until smooth.
- Pour into a bowl and sprinkle with queso fresco and enjoy with tortilla chips.
- Cover and refrigerate leftovers - heat up the next day, and stir well to distribute the heat before diving in.
