- Preheat oven to 350°F and butter a 9×13" baking dish. Set aside. Make sure your potatoes are mostly thawed and drain any excess water.
- In a medium-sized bowl, combine potatoes, sour cream, cream of chicken, green onions (or onion powder), salt, pepper, 1/4 cup melted butter and shredded cheese. Stir until combined. Then spread into the baking dish. Top with extra cheese if desired.
- Top with crushed cornflakes or crumbs. Drizzle remaining melted butter on top. Bake for 30-40 minutes, or until golden brown and bubbling hot. If using cubed potatoes instead of shredded hash browns, bake for about 40 minutes.
- Let rest for 5 minutes before serving. Then enjoy while warm!

- Preheat oven to 375 degrees and grease a 9 x 13 inch baking dish.
- Add the potatoes to a large pot of cold water. Bring the mixture to a boil and cook for 10-12 minutes or until fork tender., then drain and add to the baking dish
- Meanwhile, bring the chicken broth and butter to a boil in a medium sauce pan.
- In a measuring cup, whisk together the milk, flour, garlic powder, and onion powder. Pour the milk mixture into the boiling broth and continue to cook, whisking constantly, until the mixture is thickened. Season to taste with salt and pepper.
- Lower the heat and stir in sour cream and 1 1/2 cups of the cheddar until melted.

- Grease a 9x13 glass baking dish and set aside.
- In a very large bowl, whisk together the melted butter and cream of onion soup. Then whisk in the sour cream, 8 oz (2 cups) of the shredded extra sharp cheddar cheese and the salt and pepper.
- Fold in the diced hash brown potatoes.
- Spread the potato mixture evenly into the prepared baking dish. Top with the remaining 1 cup of shredded cheddar cheese.

- Preheat oven to 350° and grease a 9x13 casserole dish.
- Preheat a large sauce pot over medium heat and saute 1/2 lb of diced bacon until most of the fat is rendered and it starts to crisp.
- Add diced onion and saute until softened. Press garlic and stir it into the bacon and onion mixture.
- Sprinkle flour all over bacon and onions and stir until completely incorporated throughout.
- Slowly pour in chicken stock while stirring and mix until flour is incorporated.
- Pour in milk and let it cook until sauce starts to thicken. Season with salt and pepper and add cream cheese and sour cream.
- Stir until cream cheese is incorporated and add shredded cheese. Keep stirring slowly until cheese is melted and take off heat.
- Stir in diced green onions.
- In a separate cooking pan, saute remaining diced bacon for the topping. (Don't make it too crispy because it will continue to cook on top of the casserole.)
- Pour diced hash browns into a large mixing bowl and add the cheesy sauce. Mix it together until evenly incorporated throughout.

- Spread more cheese over the top and cooked bacon pieces over cheese. Bake for about 40 minutes.

A delicious recipe from Southern to the Core cookbook received from BusyMomof3 in the 2011 Cookbook Swap, must admit to cooking this but I add ham and spring onion (scallion in place of onion) to the mix so consider this the base mix and delicious. On preparation time it can vary hugely dependig on if you use a mondolin or food processor or by hand and then depending on your knife skills, so I have tried to take a middle line here on the timing.
