EARLS CLAM CHOWDER (GLUTEN FREE)



Earls Clam Chowder (Gluten Free) image

An excellent thick creamy clam chowder. This recipe is my gluten free version of the recipe used at Earl's restaurant.

1 lb bacon, diced (GF)
1 white onion, diced
2 stalks celery, diced
2 large carrots, peeled and diced
1 large tomatoes, diced
1 teaspoon black pepper
1/2 teaspoon thyme
1 bay leaf
3 tablespoons margarine
3 tablespoons cornstarch
1 cup vegetable stock
4 cups half-and-half cream
5 large potatoes, peeled, diced and cooked
3 (14 ounce) cans clams, drained (reserve juice)

Steps:

  • In a large frying pan over medium high heat, cook the bacon. When the bacon is almost crispy, add the onion, celery, carrots, tomatoes and spices.
  • Lower the heat and cover, sweating until the carrots are soft.
  • In a large saucepan, melt the margarine over medium heat.
  • Add the starch and whisk.
  • Add the vegetable stock, then the half and half, then the clam juice. Add bacon/vegetable mix.
  • Heat to almost boiling, then cover and let simmer for 20 minutes.
  • Add the clams and the cooked potatoes. Simmer just until heated thoroughly.

  • While potatoes are baking, drain clams and reserve juice in a 2-cup measuring cup. Set clams aside.
  • Set aside cooked potatoes to cool slightly. (You can also use leftover baked potatoes in this recipe.)
  • In large sauce pan, melt butter and add onion over medium to medium-high heat, stirring occasionally until onions are translucent and cooked most of the way through. Cook about 7 to 8 minutes.

  • Add the potatoes, water and Herb-Ox to a medium pan and bring to a boil. Boil the potatoes for 8 minutes, or until tender. Drain the potatoes over a large bowl to save the cooking liquid - this will be added back to the chowder. Set both the potatoes and liquid aside while preparing the rest of the chowder.
  • In a large pot, cook the salt pork over medium high heat to render 1/4 C fat. When 1/4 cup of fat is rendered, remove the salt pork from the pot and discard. Lower the heat to medium and add the onions and celery. Cook for about 5 minutes or until softened.
  • Stir in the flour to coat the vegetables in the flour and cook for 1 minute. Stir in the clam juice, reserved potato cooking liquid, bay leaves, thyme and white pepper. Simmer for about 5 minutes over medium heat until the soup thickens. Stir in the clams, potatoes and half and half. If you want a thicker chowder, stir together the cornstarch and water to make a slurry. Stir the slurry into the chowder until it reaches your desired thickness. Simmer for another 5 minutes but do not let it boil. Serve immediately and refrigerate leftovers.
