1/2 cups milk
1 cup heavy cream
1/2 vanilla bean
2 cinnamon sticks
1 heaping tablespoon all-purpose flour
3/4 cup sugar
6 eggs
1 teaspoon minced lemon zest
1 pint raspberries
1 pint blueberries
1 prebaked tart shell (recipe follows)

Steps:

  • Heat milk and cream with vanilla bean and cinnamon sticks. Scald and let cool, then strain out vanilla bean and cinnamon sticks. Into strained mixture, whisk in flour, sugar, eggs and lemon zest and transfer mixture to a pitcher or a pour spout.
  • Assemble berries in pre-baked, room-temperature tart shell. Raspberries should be top down (with opening down). Tightly packed but only one layer of fruit.
  • Pour just enough batter over berries to almost come up even with fruit. Be careful not to put too much, but enough to fill in all the spaces and come 5/6ths of the way up the berries.
  • Bake 15 to 20 minutes at 350 degrees until set and slightly brown on top.

1/2 cup unbleached all-purpose flour
1/3 cup plus 2 tablespoons sugar
1/4 teaspoon ground cinnamon
Pinch salt
3 eggs plus 1 egg yolk
1 cup whole milk
1/4 vanilla bean, split lengthwise
2 tablespoons unsalted butter
Pinch salt
1 1/2 cups peeled and diced Granny Smith apple (about 1 large apple)
2 tablespoons sugar
1 teaspoon grappa, Calvados, or other fruit brandy
Confectioners' sugar for dusting
1/3 cup creme fraiche

Steps:

  • Preheat the oven to 400 degrees F.
  • Make the batter: Sift the flour, sugar, cinnamon and salt into a bowl. In a separate bowl, whisk the eggs, egg yolk, and milk until well blended. Add about 1/3 of the egg mixture to the flour mixture and whisk until smooth, then gradually incorporate the remaining egg mixture. Whisk until well blended. Cover with plastic wrap and refrigerate while you prepare the apples.
  • Cook the apples: With the tip of a knife, scrape the vanilla bean seeds from the pod into an ovenproof 10-inch cast iron or stainless steel skillet. Add the pod and the butter and cook over moderately high heat until the butter turns nut brown. Add a pinch of salt. Add the apples and cook, stirring often, until slightly softened, about 2 minutes. Remove the vanilla bean pod and discard. Sprinkle the apples with the sugar, reduce the heat to moderately low, and cook until the apples are almost cooked through and the sugar has melted and is coating the apples in a light syrup. Add the grappa or other brandy off the fire while pouring, place back on the fire, wait for flame to die down, the swirl the pan briefly. Spread the fruit evenly in the skillet.
  • Working quickly, pour batter evenly over the fruit. Bake until the edges of the clafouti are puffed and browned and the center is set, about 15 minutes.
  • Put some confectioners' sugar in a sieve and generously dust the surface of the clafouti. Serve warm directly from the pan with a dollop of creme fraiche.
  • Michael's Notes: If you plan to serve individual clafoutis from mini pans, heat the pans in the oven until quite hot, about 5 minutes, then divide the cooked fruit among the pans, top with the batter, and bake. Cooking time will vary depending on the size of the pans.
  • To make a cherry clafouti, use 1 1/4 cups pitted cherries. Substitute 1 teaspoon grated lemon zest for the cinnamon and Grand Marnier for the grappa.

  • Preheat the oven to 375 degrees F.
  • Butter a 10 x 3 x 1 1/2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.
  • Beat the eggs and the 1/3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.
  • Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.

  • Combine milk and vanilla bean in a pot and steep for at least 1 hour.

2 tbsp cherry, plum or apricot jam
finely grated zest and juice of 1 lemon
50g plain flour
3 large eggs
450ml skimmed milk
½ tsp ground cinnamon
3 tbsp golden caster sugar

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C. Lightly oil a shallow 1.3 litre baking dish. Gently heat the cherries and jam in a large saucepan, stirring all the time until the jam melts over the cherries. Tip them into the dish and sprinkle with the lemon zest and juice.
  • Whizz the flour, eggs, milk, cinnamon and sugar in a food processor for 30 seconds until smooth. Pour over the cherries, then put the dish on a baking tray and bake for 25-30 minutes or until the custard is set and the jam is beginning to bubble through. Dust with icing sugar and serve hot.

3 cups (350 grams) raspberries
1/2 cup plus 1 tablespoon granulated sugar (divided)
1 teaspoon dried lavender buds ((optional))
1/2 cup (120 millilitres) whole milk
1/2 cup (114 grams) crème fraiche, more for serving (optional)
4 large eggs
Pinch salt
1/3 cup (43 grams) all-purpose flour
Confectioners' sugar (for serving)

Steps:

  • Heat the oven to 375 degrees F. Butter a 9-inch ceramic baking dish, or a 2-quart gratin dish, or a 9-inch cake pan.
  • In a medium bowl, toss the raspberries with 1 tbsp sugar. Let them sit while you prepare the remaining ingredients
  • In a food processor or blender, combine the remaining ½ cup sugar with the lavender; process until the lavender is mostly ground, about 2 minutes. Then pour the milk, crème fraiche, eggs, and salt, and process to combine. Add the flour and pulse just to combine.
  • Arrange the sugared berries in the prepared baking dish, then pour the egg mixture over them. Bake until the cake is golden and the center springs back when lightly touched, about 35 minutes.
  • Transfer the baking dish to a wire rack and let the cake cook for at least 15 minutes before serving. Then dust it with confectioners' sugar, slice it, and serve it with a dollop of whipped crème fraiche if you like (I used Greek yogurt to serve along).

  • Preheat the oven to 180ºC/gas 4.
  • Mix all the batter ingredients with a pinch of sea salt in a blender or food processor until totally smooth, then set aside for 20 to 30 minutes.

  • Peel, core and thinly slice apples.
