RUM GLAZED GRILLED SHRIMP



Rum Glazed Grilled Shrimp image

Delicious for summertime grilling. A light and tasty glaze. If using wooden skewers, soak in lime juice or white wine for some extra flavor.

¼ cup honey
½ teaspoon lime juice
3 tablespoons spiced rum
½ teaspoon grated orange zest
1 tablespoon orange juice
1 teaspoon grated fresh ginger
1 tablespoon chopped fresh cilantro leaves
¼ teaspoon salt
¼ teaspoon ground black pepper
1 ½ teaspoons cornstarch
20 jumbo shrimp, peeled and deveined
4 (10 inch) skewers

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Mix together the honey, lime juice, spiced rum, orange zest, orange juice, ginger, cilantro, salt, black pepper, and cornstarch in a large bowl until the glaze is smooth and the cornstarch is thoroughly blended with the rest of the ingredients. Pour half the glaze into a smaller bowl for basting. Rinse and pat the shrimp dry, and gently stir into the large bowl to thoroughly coat the shrimp with the glaze.
  • Remove from the glaze, and discard the used glaze. Thread 5 shrimp onto each skewer, and sprinkle with salt and black pepper.
  • Grill the shrimp until bright pink and opaque and the glaze has cooked onto the shrimp, about 4 minutes per side. Baste with additional unused glaze before turning the shrimp over.

"This recipe is fantastic for any time you want to cook out with Caribbean inspired flavors such as rum, allspice, citrus, cinnamon, Scotch bonnet peppers and cilantro. While not quite jerk, the influence is definitely there. I love to serve these freakishly good tasting grilled shrimp over a bed of mashed sweet potatoes topped with fresh grilled pineapple slices that have been marinated in dark brown sugar. Serve all this up with a few pitchers of mojitos and you may think you are on vacation or at least just wished you were. Pass the rum please."

2 lbs extra large shrimp, peeled with tails left on, butterflied and deveined
3/4 cup dark rum
1/2 cup pina colada nonalcoholic drink mix
1/4 honey
1 teaspoon vanilla extract
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 cup chopped cilantro
3 tablespoons fresh grated ginger
4 garlic cloves, minced
1 scotch bonnet pepper, stemmed, seeded and minced (substitute habanero)
2 dashes liquid smoke
1 lemon, zest of

Steps:

  • Mix the marinade ingredients in a nonreactive bowl
  • Then add shrimp and marinate for at least 10 minutes but no longer than 30.
  • Preheat grill to medium heat and grill shrimp for about 2 - 4 minutes per side, being careful not to over cook them as they will become tough and chewy.
  • ENJOY!

1 lb cleaned and peeled grilled shrimp
1 teaspoon olive oil
1 teaspoon soy sauce
1 tablespoon marmalade or 1 tablespoon apricot jam
2 tablespoons olive oil
1/4 cup sweet onion
1 clove garlic, minced
1/4 inch fresh ginger, minced
2 tablespoons Worcestershire sauce
1 cup water or 1 cup vegetable stock
1 cup passion fruit or 1 cup orange juice
2/3 cup citrus marmalade
1/2 lb couscous
1 dash cayenne pepper
1 teaspoon freshly grated orange zest
1/2 cup dry roasted macadamias, coarsely crushed
1/4 cup dried cranberries
3 tablespoons basil or 3 tablespoons cilantro
salt and pepper

Steps:

  • Mix the first 4 ingredients together and marinate for 15 minutes grill over high heat for about 2-4 minutes.
  • Depends on size.
  • Don`t overcook.
  • Cool.
  • Set aside.
  • In a large heavy saucepan, heat olive oil over medium heat and saute onion, ginger and garlic until soften.
  • Stir in Worcestershire sauce, stock, juice marmalade and cayenne stir.
  • Bring to a boil.
  • When boiling, stir in zest and couscous, turn off heat, remove pot from hot burner and let sit, tightly covered, for 10 minutes.
  • Add nuts, dried cranberries, herbs and shrimp toss to fluff.
  • Chill.
  • Taste and adjust seasoning.
