Easy Date Slice Recipe - Melt & Mix image

Super simple Easy Date Slice Recipe - just melt and mix, done!

1 1/2 cups or 200g chopped dates (dry not fresh)
1 1/3 cups or 200g self raising flour - sifted
1/3 cup or 70g light brown sugar
150 g salted butter - cubed
2 tbsp. golden syrup
rind of 1 lemon - finely grated

Steps:

  • Preheat oven to 180c or 350f.
  • Grease and line an 18cm x 18cm or 7inch x 7inch (base measurement) baking tin and set aside.
  • Combine butter, sugar and golden syrup in a medium heatproof bowl (place a piece of kitchen towel/paper on top but not touching the contents - this will save your microwave from splatters).
  • Microwave on high for 1 - 1 1/2 mins until butter is melted, remove from microwave and mix to melt sugar and combine.
  • Meanwhile place flour, dates and lemon in a medium bowl, mix to combine.
  • Add melted butter mixture to dates and flour, and mix well to combine.
  • Press mixture into prepared tin, smoothing the top - I use a mini silicone spatula for this.
  • Bake for 13 - 15 mins, until top is golden brown.
  • Allow to cool in tin for 30 mins before cutting into 12 squares.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

A chewy, oaty tray bake with sticky dates and apples - bound to be a big hit.

Number Of Ingredients 7

225g butter , plus a little extra for greasing
140g cooking apple , peeled, cored and chopped
140g stoned date , chopped
280g light soft brown sugar
175g plain flour
1 tsp bicarbonate of soda
100g porridge oat

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
  • Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
  • Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
  • Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

8 ounces dates (pitted)
1/2 cup brown sugar
1/2 cup hot water
2 cups plain flour
2 cups rolled oats
1 cup brown sugar
8 ounces butter

Steps:

  • Cook the first 3 ingredients to a pulp and leave to cool.
  • Mix remaining ingredients together like a crumble.
  • Spread half of the mixture on the bottom of a tray.
  • Cover with the dates. Then sprinkle remainder on top.
  • Bake 30 mins at gas 4 or 180c.

3 1/2 cups light brown sugar
1 cup dried dates, chopped
1 cup self-rising flour
1/2 cup muesli (granola)
2 tablespoons roasted sunflower seeds
1 teaspoon poppy seed
2 tablespoons sultanas (golden raisins)
2/3 cup natural low-fat yogurt (plain)
1 egg, beaten
1 3/4 cups icing sugar, sifted (confectioner's sugar)
lemon juice
1 -2 tablespoon toasted pumpkin seeds

Steps:

  • Preheat the oven to 350F/180C/Gas4. Line a 11x17 shallow baking pan with baking parchment.
  • Mix together all the ingredients except the icing sugar, lemon juice and pumpkin seeds.
  • Spread the mixture evenly in the pan and bake for about 25 minutes, until golden brown. Remove from oven and allow to cool.
  • To make the topping, put the icing sugar in a bowl and stir in just enough lemon juice to give a thick, spreading consistency.
  • Spread the lemon topping over the baked mixture and sprinkle generously with pumpkin seeds.
  • Allow icing to set before cutiing into squares or bars.
