Grilled Halibut with Brown Butter-Citrus-au Poivre Vinaigrette image

Provided by Bobby Flay

Categories     main-dish

Time 20m

Yield 4 servings

Number Of Ingredients 8

Four 6-ounce halibut fillets
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, cut into pieces
1 small shallot, thinly sliced
Juice and 1 teaspoon zest from 1 orange, plus zest for garnish
Juice and 1 teaspoon zest from 1 lemon, plus zest for garnish
1 teaspoon chopped fresh thyme, plus sprigs for garnish

Steps:

  • Heat a charcoal or gas grill to high.
  • Brush the halibut fillets on both sides with the canola oil and sprinkle with salt and pepper. Grill, covered, until golden brown on the bottom, about 2 minutes. Flip and cook, covered, until the fish is firm and just cooked through, another 2 minutes. Transfer to a platter.
  • While the fish cooks, combine 2 tablespoons of the butter and the shallot in a medium skillet over medium heat. Cook, stirring, until the shallot softens, about 3 minutes. Add the remaining butter and cook, swirling the pan, until the butter is nut brown. Add the orange and lemon juice and zest, as well as the thyme, 1/4 teaspoon black pepper and salt to taste. Drizzle the brown butter over the fish. Sprinkle orange and lemon zest and thyme sprigs over the top. Serve immediately.

CITRUS GRILLED HALIBUT (COOKING FOR 2)

Citrus Grilled Halibut (Cooking for 2) image

Provided by Betty Crocker Kitchens

Categories     Entree

Time 30m

Yield 2

Number Of Ingredients 6

1 pound halibut, skinned
4 cloves chopped garlic
2 lemons
2 limes
Freshly ground pepper (1 to 2 teaspoons; to taste)
Nonstick cooking spray (or olive oil if you prefer)

Steps:

  • Heat the grill to medium-high. Spray a large piece of aluminum foil with nonstick cooking spray, and turn it up along the edges.
  • Cut the lemons and limes in half and squeeze all of the juice into a large measuring cup, being careful to remove any seeds. Peel and chop the garlic. Then, whisk the juices, garlic, and pepper together. Pour about one-quarter of the mixture into the aluminum foil; place the fish on top; and then pour the rest of the liquid over the fish. Loosely wrap it up, folding over the foil to keep the moisture in while grilling but with enough openings for the juice to mostly evaporate.
  • Grill for about 5 minutes on one side and then open the foil to flip the fish once mid-way through, for a total of 10 to 15 minutes until cooked through (time will vary depending on grill temperature and thickness of the fish).

GRILLED HALIBUT WITH LEMON-HERB CRUST

Grilled Halibut With Lemon-Herb Crust image

I was looking for recipes to cook halibut seeing as I caught 2 from a deep sea fishing trip off of Vancouver Island. The first one I caught was 46 lb and the second one was 27 lb. I found this recipe from a Hellman's pamphlet. I made a couple of changes to suit our taste. We love doing halibut this way. The topping keeps the fish moist. We had our halibut cut into 1 lb. servings so we bbq it in one piece and then cut it into portions. The recipe says it serves 4 but my husband and I split it ourselves.

Provided by DeeDee

Categories     Halibut

Time 25m

Yield 4 serving(s)

Number Of Ingredients 11

1/2 cup breadcrumbs
2 tablespoons grated parmesan cheese
1 tablespoon lemon zest
salt & pepper
1 tablespoon butter or 1 tablespoon margarine, melted
2 tablespoons mayonnaise
1 tablespoon chopped fresh tarragon
1 chopped green onion
1 chopped plum tomato
1 lb halibut fillet, about 1/2 inch thick, skin left on
2 tablespoons lemon juice

Steps:

  • In a small bowl, combine bread crumbs, parmesan, lemon zest, salt and pepper.
  • Add melted butter and toss with a fork to form a crumbly mixture.
  • In another small bowl, combine mayonnaise, green onion and tomato. (The recipe says to add 1 tablespoons chopped fresh tarragon but I never have it so I omit it).
  • Arrange fish, skin side down, on a platter. Spread each fillet with mayonnaise mixture. Press crumbs mixture onto each fillet.
  • Preheat barbecue on high for 10 minutes. Reduce to medium-high and barbecue fish skin side down until fish flakes easily with a fork and topping is nicely brown - about 10-12 minutes.
  • Drizzle lemon juice over fillets and serve immediately.

SPICED HALIBUT WITH SPINACH AND CHICKPEA STEW

Spiced Halibut With Spinach and Chickpea Stew image

This highly aromatic dish is inspired by pkaila, a Tunisian condiment made by frying spinach in plenty of oil for a long time (traditionally hours) until it becomes almost black in color. This slow-frying transforms the spinach into a rich and flavorful version of itself. Here, the spinach isn't fried in so much oil, or for as long, but it still delivers a uniquely rich and wholly unexpected depth to the dish. The spinach stew can be made ahead of time but, if you do so, season the fish and chickpeas close to the time when you are going to cook them. The Persian lime powder is optional. You can buy it, or start with a whole dried Persian lime: Roughly crush it with the side of a knife and then grind to a fine powder in a spice grinder.

Time 1h15m

Yield 4 servings

Number Of Ingredients 31

1/3 cup/60 milliliters olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon dried Persian lime powder (optional, see note)
2 garlic cloves, crushed
2 teaspoons lemon zest
3/4 teaspoon kosher salt
4 skinless, boneless halibut fillets, patted dry (about 1 pound/410 grams total)
1 can chickpeas (15.5 ounces/400 grams), drained and patted dry
2 tablespoons vegetable oil, for frying
Olive oil
3/4 cup (80 grams) finely chopped yellow onion
3 garlic cloves, crushed
2 mild green chile peppers, such as Anaheim, finely chopped
1 teaspoon ground cumin
1/2 teaspoon dried Persian lime powder (optional)
1/2 teaspoon ground coriander
1 fresh cinnamon stick, roughly crushed
1 1/4 packed cups/50 grams cilantro (coriander)
1/2 packed cup/25 grams flat-leaf parsley
1 pound/400 grams baby spinach
1 1/4 teaspoons flaky sea salt
2 cups/500 milliliters chicken or vegetable stock
1 1/2 teaspoons granulated sugar or caster sugar
3 tablespoons lemon juice
1 lemon (peel the skin to get 3 strips and juice to get 2 tablespoons)
1 mild green chile pepper, such as Anaheim, halved lengthwise and finely sliced
2 spring onions, finely sliced on an angle
2 tablespoons olive oil
2 packed tablespoons/5 grams cilantro (coriander), roughly sliced
Flaky sea salt and black pepper

Steps:

  • Marinate the fish and chickpeas: In a small bowl, mix the first 7 ingredients together. Add 2 1/2 tablespoons of marinade to a bowl with the halibut and mix well. Add 2 tablespoons of the marinade to a separate bowl with the chickpeas and stir to combine. Set both aside at room temperature.
  • Prepare the spinach stew: Add 1/3 cup plus 1 tablespoon/75 milliliters of the olive oil to a large pot over medium heat with the onion and gently fry for 8 minutes, or until soft. Add the garlic, chile pepper, spices and cinnamon stick and continue to cook for 5 minutes, stirring often.
  • Meanwhile, add the herbs and some of the spinach to a food processor and blitz until finely chopped. Repeat in batches until all the greens are finely chopped. Add the chopped spinach and herbs to the pot with the onions, along with 3 tablespoons of oil and the flaky salt. Cook for 15 minutes, stirring often, until the spinach turns a deep green color, almost gray.
  • Add the chicken stock, sugar, lemon juice and 1/3 cup/100 milliliters water to the pot. Bring to a rapid simmer and then lower the heat. Cook for 20 minutes until thickened slightly.
  • Make the salsa: Finely slice the lemon skin into very thin strips, then mix with the lemon juice and remaining salsa ingredients and set aside.
  • When you're ready to serve, heat a large nonstick frying pan on a high heat, then add 1/2 tablespoon of vegetable oil. Add the chickpeas and fry for 6 minutes, stirring every now and then until crisp and golden-brown. Transfer to a plate and wipe the pan clean.
  • Return the pan to a medium-high heat with the remaining 1 1/2 tablespoons of vegetable oil. Add the halibut fillets, spaced apart, and fry for 3 minutes on one side, then flip and fry for another 2 minutes on the other side until both sides are crisp and golden brown.
  • Add about two-thirds of the chickpeas to the stew and stir together, then transfer the stew to a large platter with a lip. Place the halibut fillets on top of the stew, then scatter over the remaining fried chickpeas. Finish with the salsa and serve at once, sprinkled with more flaky sea salt if you like.

ROASTED HALIBUT WITH LEMONS, OLIVES AND ROSEMARY

Roasted Halibut With Lemons, Olives and Rosemary image

Fish can be finicky dinner-party fare, especially for the distracted cook. Step away for a moment to sip your cocktail and your fillets might go from pearly to parched. This dish, though, inspired by one from Southern Italy, elegantly feeds a crowd. The fish, halibut, is seasoned with chile, salt and olive oil, then topped with rosemary, lemon and olives and roasted. It's a lighter main dish that won't leave anyone hungry.

Provided by Melissa Clark

Categories     dinner, easy, quick, weekday, main course

Time 10m

Yield 2 servings

Number Of Ingredients 7

2 (8-ounce) halibut fillets, preferably at least 1-inch thick
1 1/2 teaspoons extra virgin olive oil, more to taste
Kosher salt
Ground chile pepper, preferably Turkish or Aleppo
2 rosemary branches
1 small lemon, very thinly sliced
1/4 cup sliced, pitted calamata or other good-quality black olives

Steps:

  • Heat oven to 450 degrees. Place fish in a baking dish, brush fillets with 1 teaspoon of oil and season with salt and chile pepper. Top each fillet with a rosemary branch and several slices of lemon. Drizzle remaining oil over lemon slices and sprinkle with additional salt. Scatter olives over fish and pan.
  • Bake until just opaque, about 10 minutes. If lemon slices have not browned or singed (this will depend on how thinly you slice them), place pan under broiler for 1 to 2 minutes. Serve drizzled with more olive oil; sprinkle with more salt and chili, if desired.
