Steps:
- Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 450 degrees F.
- Rinse the game hens and pat dry with paper towels. In a small bowl, mix together the olive oil, shallots, orange zest, lemon zest, thyme, mint, 1 teaspoon salt and 1 teaspoon pepper. Rub 2 tablespoons of the zest mixture over the skins of the game hens. Place the remainder of the zest mixture under the skin and into the cavities of the hens. Using kitchen twine, truss the legs together. Place the hens in a shallow 9 by 13-inch baking dish. Add the chicken stock, Marsala wine, lemon juice, orange juice, and cranberries. Roast for 30 to 35 minutes, or until the leg juices run clear. Remove the game hens and set aside. Place the flour in a small saucepan. Whisk in the pan juices. Bring the juices to a boil over medium heat. Reduce the heat and simmer for 8 to 10 minutes until slightly thickened. Whisk in the butter and season, to taste, with salt and pepper.
- To serve, remove the kitchen twine and place the hens on 2 serving plates. Drizzle with the citrus-herb sauce.

Steps:
- Grate the outer layer of peel from the orange and the lemon; juice half the lemon, and place all marinade ingredients in a food processor and blend until smooth.
- Butterfly the game hens: cut out the backbone with sharp kitchen shears, turn the hen over (breast up) and bend the breast backward where it attaches to the breastbone; place your thumbs on either side of the breastbone and press down while pulling up on the outer sides of the breast with your fingers (I find this difficult--I just take the heels of my hands and smash it).
- Place hens in a plastic bag with the marinade, force out excess air, seal tight and leave in the refrigerator overnight.
- Set up grill for indirect cooking. Remove hens from marinade and grill, covered, for about 30 minutes or until breast meat registers 165-170F on an instant-read thermometer (mine took about 45 minutes).

- In a medium mixing bowl combine water, orange juice, sugar, salt and spices. Whisk to combine thoroughly.
- Rinse hens and trim off any excess fat or skin (do not remove all of the skin, only extra hanging pieces). Place them in gallon sized resealable storage bags (2 to a bag) and divide the brine evenly between the two. The spices may settle in the liquid, so give it a swirl as you're pouring it in.
- Squeeze all the air out of the bags and place in a baking dish to prevent any liquid from leaking. Marinate in the refrigerator overnight.
- When you are ready to cook the hens, preheat your oven to 400 degrees F.Place the hens in a roasting pan and reserve the marinade. Tuck an orange quarter inside of each hen, then truss with twine (simply wrap the drumstick ends together and secure with twine).

- Thaw Cornish game hens, if frozen. Finely shred enough lemon peel from 1 of the lemons to make 2 teaspoons peel. In a small bowl combine herbs, salt, pepper, and lemon peel; set aside. Cut one and a half of the lemons into slices; cut remaining lemon half into four wedges.
- To prepare Cornish hens, remove giblets, if present. If desired, remove skin from hens. Rinse hens; pat dry. Place hens on a plate or baking dish. Place 1 lemon quarter in each hen cavity. Lay lemon slices over top. Wrap tightly with plastic wrap and chill in the refrigerator for 12 to 24 hours.

(Place breasts, bone side down over drip pan.) Cover and grill for 50 to 60 minutes or until meat is tender, no longer pink, and instant-read thermometer inserted into thigh muscle registers 180 degree F. (For a gas grill, preheat grill.
