CRISPY CAULIFLOWER FLORETS WITH CITRUS SALT



Crispy Cauliflower Florets with Citrus Salt image

Vegetable oil, for frying
5 large eggs
2/3 cup cornstarch
1 1/2 teaspoons salt
3/4 teaspoon pepper
1 large head cauliflower, cut into florets
1/2 teaspoon red pepper flakes
2 lemons, zested

Steps:

  • Fill a large pot half full with vegetable oil. Heat to 350 degrees F.
  • In a large bowl, whisk together eggs, cornstarch, 1/2 teaspoon salt, and pepper. Toss in florets to coat.
  • In a small bowl, mix together remaining salt, red pepper flakes and lemon zest. When oil is ready, remove half the florets from the batter and add to the oil. Cook until golden, about 4 to 5 minutes, turning occasionally. Drain to paper towels. Sprinkle generously with seasoned salt. Repeat with second batch of florets. Serve immediately.

1 bunch kale, stemmed and torn into pieces
3 tablespoons olive oil, divided, or to taste
3 tablespoons grated Parmesan cheese
1 tablespoon ground red chile pepper
1 teaspoon ground oregano
salt to taste
2 tablespoons butter
¼ cup bread crumbs
1 head cauliflower
1 teaspoon chipotle spice rub, or to taste
1 orange, peeled and cubed
2 tablespoons red wine vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Spread kale on the baking sheet. Drizzle 1 tablespoon olive oil on top. Coat with Parmesan cheese, red chile pepper, oregano, and salt.
  • Bake in the preheated oven until crisp, 15 to 20 minutes. Transfer to a plate.
  • Heat butter in a small skillet until melted and starting to brown, about 5 minutes. Stir in bread crumbs. Remove from heat.
  • Slice cauliflower into 1/2-inch "steaks". Rub 1 tablespoon olive oil and chipotle spice rub on top.
  • Heat a large skillet over medium heat. Add cauliflower; cook and stir until browned, about 2 minutes per side. Transfer to the baking sheet.
  • Bake in the preheated oven until just tender, about 15 minutes.
  • Place cauliflower steaks on a large serving platter; top with crisp kale and orange.
  • Whisk remaining 1 tablespoon olive oil and vinegar together in a small bowl. Drizzle over orange. Sprinkle bread crumbs on top.

Steps:

  • Trim the cauliflower of leaves and stalk.
  • Put it into boiling salted water and boil gently for 15 minutes or until tender.
  • Remove, drain and separate into florets.
  • Place in a serving dish.
  • Pour over the melted butter, seasoned with salt and pepper, into which half an orange and half a lemon have been squeezed.

I make this the night before and let it chill up in the fridge then leave it out for an hour or so before serving. The clean flavor of citrus is so nice next to all of the other Thanksgiving flavors. Just lightly grate the exterior of the fruit so you get the zest and leave the bitter white layer of pith behind.

One 14-ounce can sweetened condensed milk
1/4 teaspoon kosher salt
Zest from 1 lemon, plus slices to garnish
Zest from 1 lime
Zest from 1/2 orange, plus slices for garnish
5 large egg yolks
4 large eggs
1 teaspoon vanilla extract
Cookies, for serving, optional

Steps:

  • Preheat the oven to 325 degrees F.
  • In a medium saucepan, stir together the condensed milk, 1 1/2 cups water and the salt. Bring to a simmer and cook until the ingredients are fully integrated, 5 to 8 minutes. Remove from the heat. Add the citrus zests and allow to cool.
  • In a medium bowl, whisk together the egg yolks, eggs and vanilla. Pour the condensed milk mixture over the eggs and whisk to blend.
  • Fill the ramekins about three-quarters each with the liquid and place the water bath in the center of the oven. Bake until they are almost firm in the center when lightly shaken, 45 to 50 minutes. Refrigerate until cooled.
  • Serve the ramekins topped with slices of fresh orange and lemon, or by themselves with some cookies.
