Grilled Lemon Rosemary Pork Chops with Arugula Salad image

Grilled pork chops with garlic, lemon and rosemary paste with simple arugula salad dressed with lemon and olive oil, topped with shaved Pecorino Toscano cheese.

2 cloves garlic
½ teaspoon coarse kosher salt, plus a pinch
2 teaspoons lemon zest
2 teaspoons chopped rosemary
4 bone-in pork chops, about 1.75 pounds
Freshly ground pepper
1 tablespoon extra-virgin olive oil
2 teaspoons lemon juice
½ teaspoon Dijon mustard
4 cups baby arugula
1 ounce Pecorino Toscano or Pecorino Romano cheese

Steps:

  • Preheat grill to medium-high heat. Mince garlic. Sprinkle ½ teaspoon salt over the garlic and mash with the side of a chef's knife to create a paste. Set ¼ teaspoon of the paste aside in a large bowl for the dressing and add the remaining pinch of salt to it. Scrape the remaining garlic paste into a small dish for the lemon rosemary paste. Add lemon zest and rosemary and stir to combine.
  • Rub rosemary mixture over both sides of the pork chops. Sprinkle with pepper.
  • Grill Pork chops until just barley pink in the center, 3 to 5 minutes per side.
  • Whisk lemon juice, olive oil and Dijon in the large bowl with the garlic paste.
  • Add arugula to the dressing. Toss to coat. Serve pork chops with the arugula and top with the Pecorino.

1/2 cup lemon juice
2 teaspoons grated lemon zest
2 tablespoons olive oil

Steps:

  • In a small bowl, whisk garlic, lemon juice, zest, oil, rosemary, basil and pepper. Pour 1/3 cup marinade into a large resealable plastic bag; add the pork. Seal bag and turn to coat; refrigerate for at least 2 hours or overnight, turning occasionally. 1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup chicken stock
1 garlic clove, minced
2 tablespoons orange marmalade

Steps:

  • Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. 2 tsp finely chopped rosemary
4 cloves garlic , crushed
juice and zest ½ lemon
4 boneless pork steaks , trimmed of fat
1 red onion , finely sliced
2 tbsp sherry vinegar
2 x 400g/14oz can chickpeas , rinsed and drained
110g bag mixed salad leaves

Steps:

  • Mix olive oil, rosemary, garlic, lemon juice and zest in a large bowl. Add pork, turn to coat and season well. If you have time marinate in the fridge for 30 mins.
  • Heat a large non-stick frying pan. Lift the pork out of the marinade, shaking off any excess and reserving the marinade for later. Cook the pork in the pan for 3-4 mins each side or until cooked through. Rest on a plate while you make the salad.
  • Pour the reserved marinade into the pan with the onion. Cook for 1 min over a high heat before adding the vinegar, plus 3 tbsp water. Bubble down for 1 min, until the onion has softened a little and the dressing thickened slightly. Stir through chickpeas, some salt and pepper and any of the resting juices from the pork. Put salad leaves into a bowl, tip in the pan contents and gently toss, before eating immediately with the pork.

2 medium grapefruit
2 medium oranges
2 medium lemons
1/2 cup olive oil
3 teaspoons dried rosemary, crushed
1 teaspoon salt, optional
2 garlic cloves, minced
1 boneless pork loin roast (5 pounds), trimmed

Steps:

  • Cut fruit in half; squeeze to remove juice, reserving rinds. In a small bowl, combine the fruit juices, oil, rosemary, salt if desired and garlic. Pour half into a large resealable plastic bag.
