Ladolemono is a Greek sauce that requires no cooking and has few ingredients. It is perfect with seafood, but you can also use it on vegetables or chicken.

Juice of 2 lemons (approximately 4 tablespoons)
1/2 cup extra virgin olive oil
1 pinch sea salt
Optional: 1 clove of garlic (minced or sliced)

Steps:

  • Combine all the ingredients in a blender. Blend on high for a few seconds until the sauce becomes thick and creamy.
  • Add to your favorite fish, vegetable or chicken dish as a seasoning.

LEMON BUTTER SAUCE



Lemon Butter Sauce image

This lemon garlic butter sauce is rich, flavorful, and SO easy to make! Serve it on pasta, couscous, roasted veggies, and more.

¼ cup unsalted butter (cut into pieces)
1 garlic clove (grated)
¼ teaspoon sea salt
2 tablespoons lemon juice
Freshly ground black pepper
Parsley (for garnish)
Pinch red pepper flakes (optional)

Steps:

  • Melt the butter in a small saucepan over low heat. Add the garlic and salt and cook for 1 minute. Remove from the heat and add the lemon juice. Season with freshly ground pepper and sprinkle with parsley and red pepper flakes, if using.
  • Serve with steamed artichokes for dipping or toss with pasta. See the blog post above for additional serving suggestions.

1/4 cup extra-virgin olive oil
1/4 teaspoon crushed red pepper flakes
2 sprigs fresh thyme
1 clove garlic, thinly sliced
1 strip lemon zest, removed with a vegetable peeler plus 1 teaspoon lemon juice
1 strip orange zest, removed with a vegetable peeler plus 1 tablespoon orange juice
Kosher salt and freshly ground black pepper
1 cup Castelvetrano olives

Steps:

  • Heat the olive oil in a small saucepan over medium heat. Add the red pepper flakes thyme, garlic, lemon zest, orange zest, salt and pepper to taste and cook, stirring occasionally, until the garlic is pale golden, about 2 minutes. Stir in the olives and cook, stirring, until just warm, about 2 minutes. Turn off the heat. Stir in the lemon juice and orange juice and transfer to a decorative jar or serving bowl. Serve warm or at room temperature.

ROASTED ASPARAGUS WITH LEMON VINAIGRETTE

3/4 pound fresh asparagus, woody stems removed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1/2 teaspoon Dijon mustard
1/2 lemon, juiced
1 tablespoon olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl toss the asparagus in the olive oil, and liberally season with salt and pepper. Spread the stalks out on a baking sheet, in a single layer, and roast until tender but still firm and moist, about 10 minutes.
  • Meanwhile, make the vinaigrette: In a small bowl, vigorously whisk together the mustard and lemon juice. Slowly drizzle in the olive oil, whisking quickly to emulsify the olive oil into the juice mixture. Season with salt and pepper, to taste.
  • Transfer the asparagus to a serving platter, toss with the vinaigrette and serve. The dish may be eaten warm or cold.

1/4 cup lemon juice

2 large garlic cloves, minced

1 pint cherry tomatoes, halved
3 tablespoons basil, julienned
salt & freshly ground black pepper (to taste)
1 lb fresh linguine
1/4 cup grated parmesan cheese (opitonal)

Steps:

  • Combine the lemon zest, lemon juice, Extra Virgin Olive Oil, garlic cloves, Kalamata olives and cherry tomatoes.
  • Cook pasta and reserve 1/4 cup (60mL) pasta water.
  • Drain and toss pasta with olive oil mixture and reserved pasta water.
  • Toss with basil and Parmesan cheese, season with salt and pepper.
  • Garnish with extra Parmesan cheese if desired.

1 teaspoon butter
1 tablespoon extra virgin olive oil
1 garlic clove, minced

1 tablespoon capers, rinsed
ground black pepper or ground mixed peppercorns

Steps:

  • Prepare vegetable per your method of choice and put aside after preparation. Meanwhile in a small saucepan over medium heat, melt the butter; add the oil and garlic and cook, stirring for 1 minute. Then stir in the olives, lemon juice and capers and cook until heated through, about 2 minutes. Pour the sauce over vegetables, season with pepper; toss well to coat.
  • Lime juice can be substituted for lemon juice for a different take on the same theme.

Having recently discovered the joys of extra virgin olive oil and its good effects on health, I have to share with you this very flavourful sauce I came across in the Weekend magazine dated July 14th'2006. Enjoy this with fennel roasted whole fish. Note: You may use 4 small blood oranges incase you don't have the navel ones.

3 navel oranges
1 -2 small lemon
1/8 teaspoon salt (to taste)
fresh ground white pepper, to taste
3 -4 tablespoons fruity extra virgin olive oil

Steps:

  • Using a thin and sharp knife, cut the stem and flower ends crosswise off the oranges and lemons.
  • Keep an orange with one flat side down on the cutting board.
  • Work from top to down, cutting the skin and white pith in the strips off the flesh so that the flesh of the orange is intact.
  • Hold this peeled orange now over a bowl.
  • Cut along each side of the membrane to remove the sections.
  • Place these removed sections in a bowl.
  • Squeeze the membrane to extract any juice and then discard it.
  • Likewise, repeat this process with the remaining oranges and lemons.
  • Sprinkle salt lightly over them.
  • Then, sprinkle some white pepper.
  • Stir in olive oil and toss lightly.
  • Keep aside until serving time.
  • Enjoy!
