For dinner tonight, try Ina Garten's Lemon and Garlic Roast Chicken recipe from Barefoot Contessa on Food Network.

1 (5 to 6-pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme
4 lemons
3 heads garlic, cut in 1/2 crosswise
2 tablespoons butter, melted
1/2 pound sliced bacon
1 cup white wine
1/2 cup chicken stock

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the thyme, reserving enough thyme to garnish the chicken dish, 1 lemon, halved, and 2 halves of the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Cut 2 of the lemons in quarters and scatter the quarters and remaining garlic around the chicken. Lay the bacon slices over the chicken to cover.
  • Roast the chicken for 1 hour. Remove the bacon slices from the top of the chicken and set aside. Continue roasting the chicken for an additional 1/2 hour, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.
  • Remove all but 2 tablespoons of the fat from the bottom of the pan. Add the wine and chicken stock and bring it to a boil. Reduce the heat, and simmer for 5 minutes, or until reduced by half.
  • Slice the chicken on a platter. Garnish the chicken platter with the bacon slices, roasted garlic, reserved thyme and 1 lemon, sliced. Serve with the gravy.

I found this recipe, created by Giada De Laurentiis, on the Food Network website. It was featured in her show Everyday Italian, in an episode titled Feel Good Food. It had 387 reviews with a overall total rating of 5 stars (out of a possible 5). So I had to try it and was pleasantly surprised. It's very easy to prepare, and it produces a tasty, moist roasted chicken. The sauce was great served over rice, too. For this recipe, you'll need kitchen string or butcher twine.

1 teaspoon salt

1 orange, quartered
1 lemon, quartered
1 head garlic, halved crosswise

2 (14 ounce) cans reduced-sodium chicken broth
1/4 cup frozen orange juice concentrate, thawed
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 tablespoon chopped fresh oregano leaves

Steps:

  • Position the rack in the center of the oven, and preheat oven to 400°F.
  • Pat the chicken dry and sprinkle the cavity with salt and pepper. Stuff the cavity with the orange wedges, lemon wedges, and garlic halves. Tie the chicken legs together with kitchen string to help hold its shape. Sprinkle the chicken with salt and pepper.
  • Place a rack in a large roasting pan. Place the chicken, breast side up, on the rack in the pan. Roast the chicken for 1 hour, basting occasionally and adding some chicken broth to the pan, if necessary, to prevent the pan drippings from burning.
  • Whisk the orange juice, lemon juice, oil, oregano, and chopped garlic in a medium bowl to blend. Brush some of the juice mixture over the chicken, after it has baked for 1 hour. Continue roasting the chicken until an instant-read meat thermometer inserted into the innermost part of the thigh registers 170°F, basting occasionally with the juice mixture and adding broth to the pan, about 45 minutes longer.
  • Transfer the chicken to a platter. Tent with foil while making the sauce (do not clean the pan).
  • Place the same roasting pan over medium-low heat. Whisk in any remaining broth and simmer until the sauce is reduced to 1 cup, stirring often, about 3 minutes. Strain into a 2-cup glass measuring cup and discard the solids. Spoon the fat from the top of the sauce.
  • Serve the chicken with the pan sauce.

1/2 cup plus 2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 teaspoons garlic powder
2 teaspoons kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
One 3 1/2- to 4-pound chicken, cut into pieces
2 tablespoons unsalted butter
1 teaspoon honey, plus more if needed
1 teaspoon chopped fresh oregano
4 cloves garlic, minced
Juice of 2 lemons (about 1/4 cup) plus 1/2 teaspoon lemon zest
One 4-ounce jar diced pimientos, drained
1/4 cup chopped fresh parsley
Lemon wedges, for garnish

Steps:

  • Whisk together the olive oil, lemon juice, garlic powder, salt and pepper in a small bowl. Add the chicken pieces to a large resealable plastic bag and pour the marinade over the top. Seal the bag, removing as much air as possible, and massage the marinade around the chicken to coat evenly. Refrigerate for at least an hour and up to overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the chicken from the marinade and transfer, skin-side up, to a large cast-iron skillet. Pour half the marinade all over the chicken in the skillet. Sprinkle the chicken with a generous pinch of salt and pepper. Roast until the chicken is deeply browned, the meat is cooked through and the juices run clear, about 40 minutes. (An instant-read thermometer inserted in the thigh, avoiding bone, should read 165 degrees F.) Remove the chicken to a platter and let rest while you make the sauce.
  • For the sauce: Melt the butter in a saucepan over medium heat. Whisk in the honey, oregano, garlic, lemon juice and zest and 1/4 cup skimmed drippings from the skillet and bring to simmer. Taste and season with salt and pepper, and if too tangy, add a bit more honey. Pour the sauce over the chicken, then garnish with the pimientos, chopped parsley and lemon wedges and serve.

4 chicken breast halves, with skin
8 slices lemons, very thin, seeded
12 leaves fresh sage (can use rubbed sage)
olive oil
4 teaspoons fresh lemon juice
2 garlic cloves, coarsely chopped
1 cup chicken broth

Steps:

  • Preheat oven to 450°F.
  • Slide fingertips under chicken skin to loosen.
  • Arrange 2 lemon slices and 3 sage leaves (or some rubbed sage) under skin on each breast.
  • Smooth skin over to close.
  • Place chicken in shallow baking pan.
  • Brush with oil.
  • Drizzle 1 teaspoon lemon juice over each breast.
  • Sprinkle with chopped garlic, salt and pepper.
  • Pour 1/2 cup broth into pan around chicken.
  • Roast chicken until brown and cooked through, basting once or twice with pan juices, About 25 minutes.
  • Transfer chicken to platter.
  • Place baking pan atop burner.

  • Boil over high heat until broth reduces almost to glaze, scraping up browned bits, about 4 minutes.
  • Spoon sauce over chicken and serve.

1 lemon, halved and juiced, halves reserved
1 teaspoon rosemary
1 teaspoon sweet paprika
3/4 teaspoon ground cumin
1/2 teaspoon hot paprika
fresh ground pepper
1/4 cup extra virgin olive oil
1 (3 lb) chicken
2 tablespoons unsalted butter, softened

Steps:

  • Preheat the oven to 350.
  • On a work surface, mince the garlic with 1 teaspoon of kosher salt.
  • Transfer the garlic to a small bowl and whisk in the lemon juice, rosemary, sweet paprika, cumin, and 1/2 teaspoon pepper, whisk in the olive oil.
  • Using your fingers, gently loosen the skin from the chicken breasts, thighs and drumsticks; try not to tear the skin.
  • Season the cavity of the chicken with salt and pepper and put the chicken in a roasting pan.
  • Using a small spoon, pour all but 1 tablespoon of the seasoning mixture under the skin of the chicken, rubbing it into the breasts, thighs and drumsticks.
  • Rub the butter under the skin of the breast meat.
  • Rub the remaining 1 tablespoon of the seasoned oil all over the chicken and season it with salt.
  • Put the reserved lemon halves in the cavity of the chicken and tie the legs together with twine.
  • Roast the chicken for about 1 1/2 hours, or until the juices from the cavity run clear and the chicken is browned and crisp.
  • Let the chicken rest in the roasting pan for 15 minutes.
  • Tilt the chicken to drain the juices from the cavity into the pan; transfer the chicken to a carving board.
  • Pour the pan juices into a bowl and skin the fat from the surface.
  • Strain the juice into a small saucepan and keep warm over low heat.
  • Carve the chicken and serve with the pan juices.
