This is a great Thanksgiving and Christmas dessert that everyone will love! Serve warm with vanilla ice cream.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Roll cinnamon rolls onto a work surface to desired thickness; press into the bottom of a 9x13-inch baking dish.
- Mix oats, brown sugar, flour, 1 tablespoon cinnamon, and salt on a bowl; add margarine and mix until crumbly.
- Spread apples over cinnamon roll crust. Mix white sugar and 1 teaspoon cinnamon together in a bowl and sprinkle over apples; top with oat mixture.
- Bake in the preheated oven until apples are tender, 40 to 50 minutes.
- Place icing in a microwave-safe bowl; heat in microwave until warmed, 20 to 30 seconds. Pour icing over crisp.

APPLE CINNAMON STREUSEL ROLL
This idea came to me one night and I just couldn't get it out of my head, now I would like to share it with my foodie friends.

Steps:
- 1. BREAD Machine Method: Heat milk and butter in micro for 2 1/2 min. Pour into bread pan. Break egg in bowl you used for heating milk, whisk, and pour into bread pan. Add flour, salt, sugar and yeast. Set bread machine to DOUGH cycle.
- 2. STREUSEL topping: Mix together 1/3 c. flour, 1/4 c. brown sugar, and 1/4 c. of softened butter to make a crumbly mix. You can add nuts or raisins if desired.
- 3. When dough has risen, remove and roll out into rectangle. Brush or rub softened butter over entire dough except one long edge, leave about a 1" length plain. Next sprinkle some cinnamon on, do not over sprinkle, it will leave a bitter flavor. Then sprinkle on a generous amount of brown sugar. You can also add raisins or nuts.
- 4. Beginning with a long side, roll dough up into a log. Then slice into 1" strips, you want to have at least 12.
- 5. Now place a muffin tin paper in each tin and spray with non stick spray, especially the bottom. Put one slice of cinnamon roll dough in each and press down with fingers. Cover and let rise till doubled in size.
- 6. Peel and core apples. Slice about 1/4" thick, I used my mandolin. Place in skillet with butter and cook until tender.
- 7. Once rolls have risen, drizzle with maple syrup.
- 8. place one apple slice on top, place crumb topping and/or raisins and nuts if desired. Bake 375° for 15-18 min.
- 9. Let cool before removing from paper.
APPLE-CINNAMON STRUDEL

- Preheat oven to 400 degrees; line a baking sheet with parchment paper or foil. On a lightly floured work surface, unfold pastry; roll out to a 12-by-14-inch rectangle. Place on sheet; refrigerate.
- In a large skillet, melt butter over medium; reserve 1 tablespoon in a small bowl. To skillet, add apples, 1/2 cup sugar, and cinnamon. Increase heat to medium-high; cook, tossing occasionally, until apples are tender and liquid has evaporated, about 15 minutes. Spread filling on a second rimmed baking sheet; let cool completely.
- With one short side of dough facing you, mound filling horizontally in a strip across the center, leaving a 1-inch border on both long sides. Fold top part, then bottom part of dough over filling. Turn pastry over, seam side down.
- Brush pastry with reserved melted butter; sprinkle with remaining 2 tablespoons sugar. Using a paring knife, cut steam vents in center of pastry. Bake until golden brown, 35 to 40 minutes. Let rest 10 minutes before serving.

SO EASY AND TASTY APPLE STREUSEL
"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. - Preheat oven to 350°.
- Grease the bottom only of a small (4 cups or so) casserole dish. Peel and core the apples, slice and place in a bowl. Top with sugar, cinnamon and vanilla, toss to coat. Set aside while preparing topping.
- Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, and nutmeg, if using. Rub it through your fingers until the streusel is a coarse, sandy/pebbly texture.
- Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.

This came from the Yankton, South Dakota Press and Dakotan newspaper. My DD does not like cinnamon rolls (my child?) so I thought this might be more like a caramel apple and less like cinnamon. It is very caramel-like and the apples are soft and fragrant. Worth the time to make the filling. If you have a kitchen aid mixer, follow your manufacturer directions to make the dough with the mixer!

- To prepare apple filling:.
- In medium saucepan, combine apples, flour sugar and butter.
- Bring to a boil over medium high heat.
- Cook 3 minutes.
- Reduce heat to medium low and cook 10 minutes, stirring constantly until thick.
- Stir in cinnamon and nutmeg.
- Cool completely.
- While filling cools, prepare dough.
- In a large bowl, combine 1 cup flour, sugar, undissolved yeast and salt.
- Heat 1/2 cup water with milk and butter until very warm (120-130°F).
- Gradually add to dry ingredients.
- Beat 2 minutes at medium speed, scraping bowl occasionally.
- Add eggs and 1 cup flour; beat 2 minutes at high speed, scraping bowl occasionally.
- Stir in enough remaining flour to make a soft dough.
- Knead dough on lightly floured surface until smooth and elastic, 8-10 minutes.
- Cover and let rest 10 minutes.
- Divide dough into 2 equal parts.
- Roll each part into a 12x8 inch rectangle.
- Spread cooled apple filling evenly over dough.
- Beginning at long end of each rectangle, roll up dough as tightly as you would for a jelly roll.
- Pinch seams to seal.
- Cut each roll into 12 equal pieces.
- Place, cut sides up, in two greased 9 inch round pans.
- Cover and let rise in warm, draft-free place until doubled in size, about 45 minutes.
- While dough is rising, prepare cinnamon-sugar topping.
- Stir together sugar, cinnamon, and nutmeg until well blended.
- After dough has doubled in size, sprinkle rolls with cinnamon-sugar topping.
- Bake in 375°F oven for 25-30 minutes or until done,.
- Remove from pan, serve warm.

- Preheat oven to 350 degrees.
- To make the crust, combine the graham cracker crumbs and sugar, then add melted butter, mixing with a fork.
- Press into bottom and slightly up sides of a 9 inch spring-form pan and bake in the oven for about 8 minutes to set it.
- Next start to make the streusel. In a large bowl, mix together the graham cracker crumbs, brown sugar, and cinnamon, then add your melted butter and stir thoroughly.
- In a medium sized bowl mix together the cream cheese and sugar. Add the vanilla, then add eggs one at a time, beating well after each egg. Make sure you scrape the sides of the bowl with a spoon or rubber spatula to fully mix all of the ingredients.
- Pour half of the cheesecake mixture onto the crust, then top with half of the streusel.
- Pour the remaining cheesecake batter on top, then add another layer with the remaining streusel.
- Place spring-form pan on baking sheet and place in the middle rack of the oven. Bake about 50-60 minutes.
- Allow to cool fully in fridge before topping.
- For the topping, mix together the melted butter, vanilla and powdered sugar. Add small amounts of milk to thin, if needed. Place topping into a piping bag (or ziploc bag with a small corner cut out.) Drizzle/pipe over cheesecake in a criss-cross pattern before serving.
- Variations:Add a 1/2 cup of chopped/crushed pecans to the streusel mixture for added flavor. Your favorite cream-cheese frosting can be substituted in place of the topping.

- Preheat over to 350°.
- Unroll crescent rolls and separate.
- Spread a small amount of margarine on each roll but don't do the tips.
- Sprinkle with sugar to your taste and then sprinkle with a small amount of cinnamon. Sprinkle to your taste on the cinnamon and sugar, some like less and some more.
- Roll up into the crescent shape and after rolling all crescents spread the remaining sugar and cinnamon out of surface and roll each roll in the mixture to coat. Bake tip side down for 10 to 13 minutes or until golden brown.
- Mix confectioners sugar, vanilla and milk together and strudel over each roll. You may need more cinnamon and sugar to do all rolls my measurements are approximated according to individual taste.
- Can use Splenda and low fat crescent rolls for those on low sugar/low fat diets.

CINNAMON-APPLE STREUSEL CRêPES
I love making crêpes. They are easy, and lend themselves to all kinds of fillings. Use fruit and cheese for breakfast, fish or chicken for lunch, and make them larger and fill with creamed meat and vegetables for a great supper meal. For dessert, fruit and syrups are great. Crêpe pans are available, but I use a slick 10" nonstick skillet and get excellent results. Crêpes can be made in advance, covered in plastic wrap, and kept overnight in the refrigerator before filling. Warm them in the microwave or a steamer prior to filling.

- Prepare crêpe batter: Stir together dry ingredients and make a well in center. Put beaten egg, milk, and vanilla in the well; mix rapidly with a fork until almost all the lumps are gone. Let batter rest 5 minutes.
- Make streusel filling: Place apples, butter, oatmeal, brown sugar, cinnamon, and vanilla in a medium microwave-safe bowl. Stir to blend well.
- Microwave on high power for 30 minutes at a time, stirring after each session, until apples and oats are soft, about 2 minutes total. Stir in applesauce and blend well. Set aside.
- Make crêpes: Heat a crêpe pan or 9-10" nonstick skillet over medium heat. When hot, brush with coconut oil or other cooking oil. Pour about 1/4 cup crêpe batter in center of pan. Tilt and swirl pan to allow batter to spread out into a flat, thin, round pancake about 7" in diameter.
- Cook about two minutes, until top of crêpe begins to dry out. Then flip over and cook until done on the other side, about 2 more minutes. Crêpes should turn a light golden brown but not get too dark. Keeping the pan at medium-low to medium heat is key here.
- Serving crêpes: Cook all crêpes in the same manner, lightly brushing pan with oil for each crêpe. As they are done, stack them on a plate nearby. Then remove one crêpe to a serving dish. Place about 2 tablespoons apple filling on 1/4 of the crêpe.
- Fold the crêpe over into fourths. Prepare next crêpe in the same manner.
- Serve 2 to 3 crêpes on a plate, drizzled with maple syrup or dusted with powdered sugar.
