CINNAMON APPLESAUCE
A snack doesn't need to be heavy to be satisfying. This nonfat, high-fiber applesauce, made in the microwave, fits the bill. If you prefer a sweeter applesauce, choose red apples, such as Fuji or Gala, instead of adding more sugar.

Steps:
- Core the apples, but it isn't necessary to peel them.
- I like the texture of having the peels in the sauce.
- Dice them very fine.
- Tumble everything into a large pot and bring to a boil.
- Reduce to the slowest simmer you can arrange on your stove so the sauce won't burn on the bottom of the pot.
- Cover, stirring occasionally, until you reach the consistency you want.
- The longer, the finer texture.
- I usually cook it about 3 hours.

I have been making this sauce for over 10 years and it is thoroughly enjoyed by all and especially most children. I am not certain where this recipe originated, but I have experimented with it and came up with this tasty sauce.

Steps:
- In a small saucepan, add 1 cup water and cinnamon candies; bring to boil, reduce heat and simmer for about 5 to 6 minutes or until candies are dissolved.
- In a large saucepan or cooking pot, add apples and the dissolved candy mixture along with the additional 1/2 cup of water.
- Cook until apples are soft; mash apples.
- Now add 1 cup sugar, hot-tamale jelly beans and continue to simmer until most of the tamale beans are dissolved, about 10 minutes.
- Some of the jelly beans will not be dissolved and this is okay, they will be light in color.
- Serve hot or refrigerate until ready to serve.
- Serve with ice cream, whipping cream or whipped cream or serve as is.
- The apple sauce has a vary light touch of a cinnamon"spicy" taste.
- You may adjust to your taste by adding more cinnamon candies or using less.
- If you desire to have the sauce spicier, just add a few more cinnamon candies and a small amount of water to a small saucepan and dissolve.
- Add to applesauce and mix well.

Steps:
- Cut peeled & cored apples into wedges.
- Place the apple wedges into a large enameled cast-iron pot or Dutch oven. Add water and cinnamon candies.
- Over medium-high heat, bring to a boil, stirring constantly.
- Reduce the heat to medium, stirring constantly until the candies have dissolved and apples are soft but not mushy. Continue to boil until 1/2 cup of the liquid remains. Taking care not to break up the apples. The more concentrated the liquid, the more intense the color and flavor of the apples.
- Serve warm or at room temperature.
CHUNKY CINNAMON APPLESAUCE
This is a fun twist to homemade applesauce. Red hot candies give it some "bite" and those can be adjusted to one's personal taste. We love to serve this when we make City Chicken and Mashed potatoes. Great Fall/Winter food. I found this recipe in a '98 issue of Taste of Home and have been making it ever since.

- Core apples. I recommend using the method described above. No need to peel or chop further.
- When the apples are boiling, turn down to a simmer. Keep covered and simmer for about 40 minutes until apples are soft. You do not want them to disintegrate.
- While apples are simmering crush red hots in a ziplock bag. If you find the little ones, no need to crush those. You may add more red hots according to taste. The cinnamon flavor is mild and there is not heat!

- Place all of the ingredients into a large saucepan. Stir to get the sugar mixed in. Turn the heat onto medium and place a lid on the saucepan.
- Let it boil until the apples become very soft and the candies are completely melted, about 25 minutes.
- Once the apples are very soft and the candies are melted, remove from the heat and let cool for about 30 minutes.
- Place the apple mixture into a food processor and process on high until the applesauce is super smooth. If you prefer a chunkier applesauce, only pulse the mixture a few times to the desired consistency.
