2 eggs
2 teaspoons vanilla extract
3 tablespoons butter, divided
3 tablespoons honey, or to taste

Steps:

  • Mix flour, sugar, baking powder, cinnamon, and salt together in a large bowl.
  • Mix milk, eggs, and vanilla extract together in a separate bowl. Pour into flour mixture slowly, while stirring, until batter is combined.
  • Heat 1 tablespoon butter in a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and edges are dry, 3 to 4 minutes. Drizzle some honey lightly on pancakes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter, adding 1 tablespoon of butter to the pan before each new batch.

2 cups all-purpose flour, (spooned and leveled)
1/4 cup packed brown sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups old-fashioned rolled oats
2 cups milk
2 large eggs
1/4 cup vegetable oil, plus more for skillet

Steps:

  • In a food processor, combine flour, sugar, baking powder, salt, cinnamon, and 1 cup oats and pulse a few times to coarsely grind oats. In a large bowl, whisk together milk, eggs, and oil. Add dry ingredients and 1 cup oats and whisk just until moistened.
  • Heat a large skillet (nonstick or cast-iron) or griddle over medium. Lightly oil skillet. Using 2 to 3 tablespoons for each pancake, drop batter in skillet and cook until a few bubbles have burst, 1 to 2 minutes. Flip pancakes and cook until browned on undersides, 1 to 2 minutes more. Repeat with more oil and batter.

1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour (or buckwheat)
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg (optional)
1/8 teaspoon ground cardamom (optional)
1/2 teaspoon salt
3 eggs
2 1/2 cups milk (skim is OK)
1/4 cup butter, melted (or margarine)
2 tablespoons maple syrup or 2 tablespoons packed brown sugar
1 1/2 cups shredded apples (about 2 large)

Steps:

  • Combine dry ingredients in a large bowl.
  • Whisk remaining ingredients, in order given, in a separate bowl.
  • Pour wet ingredients over the dry ingredients and stir gently just until combined - a few lumps should remain.
  • Melt a thin layer of butter in a large nonstick skillet; scoop about 1/3 cup batter per pancake into skillet.
  • Cook for 2 minutes or until bubbles break in batter but don't fill in; turn and cook for 1 to 2 minutes longer or until the pancakes are golden & puffed.
  • Repeat with remaining batter, adding butter as required and adjusting the heat as necessary to prevent burning.
  • Serve the classic way with butter & maple syrup or yogurt sweetened with maple syrup.

Steps:

  • Pour dry oatmeal into bowl and add 1/2 cup of soy milk and let sit 10 minutes. Mix with remaining ingredients till well blended, but do not overmix. More milk may be needed depending on desired consistency. Drop 3 tablespoons of mixture onto a nonstick skillet at medium high heat and cook for 1 minute each side. Serve hot.

1 1/4 cups buttermilk
2/3 cup quick-cooking rolled oats (not instant)
1 large egg, beaten lightly
2 tablespoons firmly packed light brown sugar
2/3 cup firmly packed grated peeled Granny Smith apple, excess juice squeezed out
6 tablespoons all-purpose flour
6 tablespoons whole-wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 tablespoons vegetable oil plus additional for brushing the griddle
maple syrup as an accompaniment

Steps:

  • In a bowl whisk together 1 cup of the buttermilk and the oats and let the mixture stand for 15 minutes. In a large bowl whisk together the egg, the brown sugar, and the apple. Stir in the flours, the baking soda, the salt, the cinnamon, 2 tablespoons of the oil, the oats mixture, and the remaining 1/4 cup buttermilk and combine the batter well. Heat a griddle over moderate heat until it is hot enough to make drops of water scatter over its surface, brush it with the additional oil, and drop the batter by half-filled 1/4-cup measures onto it. Cook the pancakes for 1 to 2 minutes on each side, or until they are golden and cooked through. Serve the pancakes with syrup.
