The cinnamon-sugar topping on Cinnamon Cream Cheese Bars reminds me of an elephant ear or churros. These dessert bars are much easier to make at home and have a layer of cream cheese for extra goodness!

Steps:
- Preheat oven to 350°F. Spread one package of crescent roll dough across an ungreased 9 x 13 pan.
- Beat two packages of cream cheese with one cup of sugar and 1 teaspoon of vanilla. Spread mixture over rolls.
- Spread out second package of crescent rolls and lay on top of the cream cheese mixture.
- Melt butter and spread evenly over the top.
- Mix cinnamon and 1/4 cup of sugar and sprinkle over top.
- Bake at 350° for 25 - 30 minutes until lightly browned.
- Cool completely before cutting. Serve at room temperature or chilled. Store extras in the refrigerator.

- Preheat the oven to 350 degrees F.
- Put the milk and 1 cup of the cereal in a medium bowl and let stand until the milk tastes like the cereal, about 30 minutes. Strain the flavored milk and reserve. Discard the soaked cereal.
- Crush the remaining 7 cups cereal in a resealable plastic bag with a rolling pin. Add 1/2 cup of the melted butter and 2 tablespoons of the brown sugar to the bag and shake until the cereal is coated. Pack into a 9-inch springform baking pan, pressing it about 1/2 inch up the sides. Bake until lightly toasted, 12 to 15 minutes. Cool to room temperature, about 30 minutes.
- Meanwhile, combine the gelatin with 1/4 cup water in a small microwave-safe bowl and set aside to soften, about 5 minutes.
- Whisk together the cinnamon, remaining 4 tablespoons melted butter and remaining 10 tablespoons brown sugar in a small bowl to combine; set aside.
- Beat the cream cheese, confectioners' sugar, sour cream, vanilla, salt and lemon juice in a large bowl with an electric mixer on medium-high speed until completely smooth, about 2 minutes. Scrape down the sides of the bowl and add the cereal milk. Continue to beat on low until completely incorporated, about 2 minutes.
- Microwave the gelatin, stirring as needed, until melted, about 30 seconds. Add the gelatin to the cream cheese mixture and beat on medium speed to combine, about 30 seconds.
- Scoop out about a quarter of the batter into another medium bowl and stir in the cinnamon-butter mixture.
- Fill a 1/4-cup measure with cinnamon batter and pour into the center of the crust. Fill a 1/2-cup measure with vanilla batter and pour into the middle of the cinnamon batter. (The batter will spread; as you add alternating scoops, they will widen, forming concentric circles.) Repeat with the remaining batter, alternating between flavors and using the 1/4-cup measure for the cinnamon and the 1/2-cup measure for the vanilla, until all the batter is gone. Refrigerate until completely set, at least 4 hours and up to overnight.
- Unmold the cheesecake. Pipe or dollop whipped cream around the top edge and top each dollop with a few pieces of cereal.

- 1. Preheat oven to 350°. Lightly grease a cookie sheet, or line with parchment paper.
- 2. Cut the crusts off the white bread. You can save the crust to make some breadcrumbs etc. or stuffing.
- 3. Roll each piece of bread with a rolling pin to flatten them out. I place all of them on a board and roll all at once.
- 4. Beat the cream cheese and add sugar to the cheese. Add the vanilla. Beat until it is really soft enough to spread. Spread cheese on one side of each slice of bread that's flattened. Aproimately 2 tsp of cheese each.
- 5. Mix sugars with cinnamon. Set aside. Roll each slice of bread ilike you would for a jellyroll.
- 6. Dip each piece into butter and then roll in the cinnamon and sugar. Place all of them on the cookie sheet seam side down. Bake for about 20 minutes. Serve warm or cool. They are especially good warm.
GOOEY CINNAMON BUNS WITH THICK CREAM CHEESE ICING

- For the dough: Place the yeast and 1 cup lukewarm water in the bowl of a stand mixer and whisk to combine. Fit the mixer with the dough hook and add the flour, butter, granulated sugar, salt and egg. Knead on medium-low speed until the dough forms a ball and releases easily from the sides of the bowl, about 4 minutes.
- Butter a large bowl; transfer the dough to the bowl. Cover with a towel and set aside in a warm, draft-free place until the dough has doubled in size, about 1 1/2 hours.
- Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish.
- For the filling: In a medium bowl, stir together the pecans, brown sugar, cinnamon, salt and butter. Set aside.
- Punch down the dough, then roll or press it into a 16-by-12-inch rectangle on a lightly floured surface. Spread with the filling, leaving a 1/2-inch border.
- Starting at one of the short ends, roll the dough into a cylinder and then slice into 12 rolls. Arrange the rolls, cut-side up, in four rows in the prepared baking dish. Cover with a clean kitchen towel and leave to rise in a warm, draft-free spot until nearly doubled in volume, about 45 minutes. Uncover and bake until golden on top, about 20 minutes.
- For the thick cream cheese icing: Blend the cream cheese and confectioners' sugar in a stand mixer fitted with the paddle attachment. Add the milk and mix until smooth. Top the warm cinnamon buns with icing and serve.
CLASSIC CINNAMON ROLLS WITH CREAM CHEESE FROSTING
Use the basic sweet yeast dough recipe to make these tried and true classic cinnamon rolls with cream cheese frosting.

- Warm the milk to 105-110ºF. Sprinkle the yeast over the warm milk and let it sit until it begins to get foamy. About 5 minutes.
- In the bowl of a stand mixer, stir together the butter, sugar, salt, and egg.
- Fit the mixing bowl onto the mixer with the dough hook. With the mixer on the lowest setting, pour in the milk/yeast mixture and the flour. Increase speed to medium and let the dough knead for about 5 minutes until it forms a soft sticky dough. The mixture will seem quite wet at first, but will form a smooth soft dough once kneaded in the mixer for the full time. If the mixture is too wet after kneading, add more flour 1 TBSP at a time until a soft but sticky dough forms.
- Place the dough in a clean bowl with a towel or loose plastic wrap over it and allow to rise to double in size. About 1 1/2 hours.
- Gently degas the dough by pressing the middle and bringing the sides up. Lightly flour a clean work surface and rolling pin and roll the dough out to a large rectangle. If the dough is snapping back and difficult to work with, place a piece of plastic wrap over the dough and let it rest for 5-10 minutes until it is easier to roll out.
- Using clean hands, spread the melted butter out evenly over all of the dough. Sprinkle on as much brown sugar and cinnamon as desired and use your hands to spread it out and mix it with the butter. With clean dry hands, roll the dough tightly into a large tube starting at the wide side. Pinch the dough shut to seal. Cut into individual rolls and place on a baking sheet or in a greased pie plate.
- Allow the rolls to rise for about 40 minutes. If you are making the dough a day ahead, cover the rolls in plastic wrap and place in the refrigerator. Remove from the refrigerator about 30 minutes prior to baking the next day. Preheat oven to 350ºF.
- Bake the rolls at 350ºF for 30 minutes, or until golden brown.
- Meanwhile, make the frosting by combining all of the ingredients in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl with a hand mixer), and mix until incorporated. Allow the rolls to cool slightly before frosting.

- In a small bowl, stir the yeast in warm water until dissolved. Set aside.
- In a large bowl, stir together milk, 1/4 cup of sugar, 1/3 cup melted shortening or butter, salt, and egg. Add two cups of flour and stir until smooth. Stir in the yeast mixture. Add the remaining flour until the mixture turns into a dough.
- Dust a clean, dry, and flat surface with flour. Knead the dough for 5 to 10 minutes. Add more flour if the dough is too sticky. Transfer the dough to a well-greased bowl and let rise until doubled, about 1 to 1 1/2 hours.
- Punch down the dough to remove air bubbles. With a rolling pin, roll the dough into a 15x9-inch rectangle. Spread the melted butter over the dough.
- In a bowl, combine 3/4 cup sugar and cinnamon. Sprinkle mixture over the dough. Top with raisins, walnuts, or pecans, if using.
- Roll the dough lengthwise towards you and finish with the seam side down so the filling is sealed in. Pinch the edges to seal the roll. Slice into 12 slices.
- Grease a baking pan with butter and sprinkle with sugar. Place the cinnamon roll slices close together in the pan. Set aside until the dough has doubled in size, about 45 minutes.
- Bake the puffy cinnamon rolls in a preheated 350 °F oven for about 25-30 minutes or until browned.

- Preheat oven to 325°F/160°C.
- In a bowl, beat the cream cheese and sugar until smooth.
- Add the sour cream and vanilla, and beat until there are no lumps.
- Add the eggs one at a time, mixing completely after each one. Set aside.
- In another bowl, mix the butter, brown sugar, and cinnamon until fully combined. Set aside.
- In a greased springform pan, press all of the cinnamon rolls flat, until they completely cover the bottom of the pan.
- Evenly spread the cheesecake batter, then drop spoonfuls of the butter mixture onto the cheesecake batter.
