- In a bowl, combine the contents of the roll mix and yeast packets. Add the water, oil and egg white; beat until smooth. Turn dough onto a lightly floured surface; knead until smooth and elastic, about 5 minutes. Cover and let rest for 10 minutes., Roll into a 16-in. x 12-in. rectangle. Cut widthwise into sixteen 1-in. strips. Cut strips in half widthwise, forming 32 strips. Twist each strip 5-6 times; place on a baking sheet coated with cooking spray., Combine sugar and cinnamon. Spray dough sticks generously with refrigerated butter-flavored spray; sprinkle with cinnamon-sugar. Cover and let rise in a warm place until doubled, about 25 minutes. Bake at 375° for 10-12 minutes or until golden brown. Serve warm.

CINNAMON BREAD STICKS
Steps:
- Start by adding the warm water and yeast to your mixing bowl. Allow to sit for 5 minutes so that the yeast can proof.
- While you are waiting for the yeast to do it's thing place flour and salt into a large bowl.
- Once the yeast has proofed 2 ½ cups flour with proofed yeast and mix well in Kitchen Aid with a dough hook.
- Add additional 2 ½ cups flour and knead until smooth.
- Next place the bowl with plastic wrap. You will want to let the dough rest for 15 to 20 minutes.
- Grab your baking sheet and coat it with olive oil. This is to ensure the dough won't stick to the pan.
- Preheat your oven to 375 degrees.
- Grab the dough from the bowl and add more flour as needed (a little at a time) to alleviate the stickiness of the dough if needed.
- Split dough in half and roll each ball of dough onto a floured surface. Knead a few times to ensure the dough is a uniformed ball.
- Now it's time to roll into a pizza and breadsticks!
- With your pizza dough roll out into the shape of your pan & create your pizza.
- For the Cinnamon Breadsticks roll the dough into a rectangle. Then using a pizza cutter cut the dough in half length wise and then vertically every 1" or so. This will be the size of your breadstick.
- Next top each breadstick with a brush of melted butter topped with the cinnamon and sugar mixture. Bake Breadsticks for 15-22 minutes, until they have risen and baked through. They'll be a beautiful golden color.

- Preheat oven to 425 degrees. Place oil and butter or margarine in 9x13 pan and place in oven to melt.
- Stir dry ingredients together. Gradually add milk stirring till a dough forms and leaves the side of the bowl. Knead 5-6 times in the bowl. Place on floured countertop and roll into 9x13 rectangle. Lay dough into pre-heated pan on top of the butter and oil. Sprinkle with cinnamon and sugar OR garlic salt. Cut into strips. Bake at 425 for 20 minutes.

THE ULTIMATE BREADSTICKS
I did it! I finally found the recipe for the absolute best breadsticks. This recipe makes big, beautiful breadsticks and lots of them too. I experimented with the original recipe and made several adjustments and made many variations as well. The recipe can easily be halved, but you might as well make them all and freeze what you don't use (we never have to do this though, they all get gobbled up).

- In a large bowl, dissolve yeast in 1 cup of water with sugar.
- Let stand 5 minutes.
- Add the rest of the ingredients except the butter.
- Stir into dough and knead until smooth and elastic and slightly sticky (I use a heavy- duty mixer).
- Place in greased bowl, cover and let rise until double, about 1 hour.
- Punch down. Divide dough in half.
- Roll one half dough out into a 12 x 18 inch rectangle on a floured surface.
- Brush with melted butter.
- Cut dough in half vertically, and then cut horizontally into 8 strips (16 bread sticks from one half of dough).
- Repeat this same step with other half of dough. You should have 32 bread sticks all together.
- Now at this point you can do the following variations:.
- Cheesy Bread Sticks: Press buttered side down of breadstick in freshly grated Parmesan cheese. Twist bread stick multiple times and lay out on parchment lined cookie sheets. (I do about 8 to a pan-parchment necessary so the cheese won't stick to the pan). Cover and let rise 30 minutes or until double in bulk and then bake. After baking, brush with remaining melted garlic butter.
- Garlic Butter Bread Sticks: Twist bread sticks that have already been spread with garlic butter mixture. Place on greased baking sheet and let rise 30 minutes. After baking, brush again with melted garlic butter.
- Herb & Cheese Breadsticks: Use plain melted butter to spread on dough, then sprinkle bread sticks with Parmesan cheese and Salad Supreme. Place on sprayed baking sheets and let rise 30 minutes before baking. Brush again with remaining melted butter after baking.
- Pizza Breadsticks: Let buttered bread sticks rise on parchment lined baking sheets 30 minutes. Spread with pizza sauce and place pepperoni on top. The last 5 minutes of baking add shredded cheese.
- Cinnamon Sugar Breadsticks: Dip bread sticks in 1 stick melted of butter (skip the brush with melted butter step). Roll in a mixture of 2 cups brown sugar and about 1 Tbsp cinnamon (might need more sugar mixture depending on how much you use). Twist and let rise on parchment lined baking sheets. Bake.
- *Spray pans or use parchment paper and cover lightly while rising.
- **Let bread sticks rise 30 minutes before baking.
- ***Note all bread sticks will be cooked 15 to 18 minutes at 350° or until lightly browned.

- Warm the milk and 2 tablespoons of the butter in a small pot over medium-low heat until the milk is warm and the butter is melted. You do not want to bring the milk to boil or it will be too hot and kill the yeast. Remove from the heat and sprinkle the yeast over the mixture. Stir once or twice and set aside until it becomes foamy, about 5 minutes. Put the raisins in a small bowl and add 2 tablespoons water. Heat in the microwave on high until the raisins plump, about 45 seconds. Whisk both flours with the salt in a small bowl and set aside. In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs and granulated sugar on medium-high speed until the sugar is dissolved and the eggs have lightened in color, 2 to 3 minutes. Reduce the speed of the mixer to low and slowly pour in the yeast mixture. Beat until smooth, and then add the flour mixture. Beat until just blended, and then switch to a dough hook and continue to mix the dough until it is soft, just a bit sticky and forms a loose ball shape, about 5 minutes. At this point touch the dough; it should only leave a small bit of sticky dough on your finger. Twist and stretch, and then place on a lightly greased baking sheet, leaving 2 inches between each strip. Loosely cover with a piece of plastic wrap until the strips have doubled in size, about 1 hour longer. Preheat the oven to 350 degrees F. Melt the remaining 1 tablespoon butter and brush over the twists. Bake until lightly browned, about 15 minutes. Whisk the confectioners' sugar with 1 to 2 teaspoons very hot water until a smooth thick glaze, and brush over the warm twists. Serve warm.

- In a bowl, mix flour, salt and yeast.
- Mix milk and water and heat it just luke warm. Dissolve sugar in it.
- Now add this milk and oil/ butter to the flour and mix.
- Make a smooth dough. Knead for 5 minutes.
- Keep aside covered with a cling wrap. Preferably in a warm place.
- I keep inside the oven with oven light ON. After an hour or 1 & 1/2 hour, the dough would have doubled and risen.
- Punch it down and knead well again. Roll into thick round.
- Transfer to pizza pan. Cut into strips, no need to fully cut out, just make marks.
- I realize I cut broader, but cut more thin so that it resembles stick.
- Preheat oven at 190 deg C and brush the bread sticks generously with milk.
- Bake for 14 mins or until pale golden.
- Prepare glaze by mixing icing sugar, cinnamon, milk, vanilla extract.
- Once the bread is warm, spread over it and cut out to serve.
