Steps:
- Instructions Pour the milk and water into a large sauce pan. Add the oats and stir. Slice two of the bananas and add to the pan. Add the brown sugar and cinnamon and stir. Turn the heat on to medium high and bring the mixture to a boil. Turn the heat down to low and simmer for about 5 minutes until the oats have absorbed most of the liquid and are creamy. Remove from the heat and stir in the vanilla extract. Divide the oatmeal between 4 bowls. Slice or dice the remaining bananas and place on the top of the oatmeal in the bowls. SIMPLE AND QUICK BANANA CINNAMON OATMEAL
When I am not eating my "Cottage Cheese Banana Breakfast Delite", I am eating this for breakfast. I NEVER miss breakfast, and when I know I may have to go a long time before lunch, this one is sure to hold me over. The secret is in the extract, and in not overcooking the oats. They remain a bit coarse, and not all mushy. However, if you prefer mushy, go ahead and add a few minutes to the cooking time. This is especially good with VERY ripe bananas.

- Place water, salt, and almond extract in medium size pot.
- Heat to boiling.
- Add oats and banana.
- Heat, stirring, ONLY until mixture comes back to a boil.
- Turn off heat, cover and let sit for about 5 minutes.
- Add sweetener and cinnamon; stir to combine.
- Pour into bowl and ENJOY!

- Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
- Place 1 cup rolled oats in a food processor and process until ground. In a large bowl, combine ground oats with flour, 1 tablespoon rolled oats, chopped walnuts, baking powder, cinnamon and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the banana and vanilla. Stir in sour cream. Mix oat/flour mixture into egg mixture. Spoon batter into prepared muffin pans.
- To make Topping: In a small bowl, combine 1/3 cup rolled oats, brown sugar, cinnamon. Cut in butter until mixture resembles coarse crumbs; stir in 1/4 cup chopped walnuts. Generously sprinkle muffins with topping.
- Bake in preheated oven for 25 to 30 minutes, until golden brown and a toothpick inserted into a muffin comes out clean.

- In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.

- Preheat oven to 350˚F (180˚C).
- In a large bowl, mash the bananas with a fork.
- Add in the oil, egg, sugar, and vanilla. Stir until combined.
- Add in the flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined.
- Pour the banana bread batter into a greased loaf pan.
- Bake for 45-55 minutes, or until a toothpick comes out clean.
- In a small saucepan, combine the cream, milk and chocolate, and melt over low heat.
- Add the vanilla and stir to combine. Remove from heat, and cover with a lid.
- Let the banana bread cool in the pan for 30 minutes, then remove from the loaf pan and place on a serving dish.
- Using a knife cut a rectangle out of the top center of the loaf, leaving a 2- to 3-inch (5 cm to 7cm) perimeter of banana bread, making sure to not slice through the bread. Cut the rectangle into 2-inch (5-cm) slices. Gently pull out each slice one at a time. Press the crumbs into the base of the cut out bread.
- Reheat the chocolate if needed then pour the chocolate into the banana bread boat.
- Place sliced bananas, strawberries, and the inside of the banana bread around the fondue boat.
- Enjoy!

BANANA-OATMEAL BREAD
I love bananas and oatmeal, so when I saw this in the September 2004 issue of Cooking Light, I just knew I had to make it! I wasn't at all disappointed. The oatmeal makes it hearty and somewhat chewy, while the bananas and buttermilk make it sweet and moist - yet it is not as sweet or sticky-moist as some other banana breads I've had. This makes a smaller loaf than some recipes. I made 2 mini-loaves instead of one large one, and they were done in 30-35 minutes. EDITED to mention- Since I posted this recipe, I've made it several times. It has become THE banana bread recipe for this household, and when I give it as gifts it never fails to receive compliments. It is extremely versatile also. I have made it with yogurt in place of buttermilk, walnut oil for the vegetable oil, and I have cut back the sugar and added cinnamon as a couple reviewers suggested. This last time I made an eggless version by substituting 2 Tablespoons ground flax seed + 6 Tablespoons water for the eggs. (I think next time I will try a vegan version by also replacing the buttermilk with soymilk.) Every time it has turned out perfect!

- Preheat oven to 350°F and spray a 8 x 4 inch loaf pan with cooking spray.
- Combine dry ingredients together in a large bowl.
- Combine banana, buttermilk, oil, vanilla, and eggs in a small bowl or measuring cup.
- Pour wet ingredients into the dry ingredients and stir gently just until the dry ingredients are moistened.
- Spoon batter into the prepared pan and bake for 55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack, in the pan, for about 15 minutes (I left mine in longer and it was fine).
- Remove the bread from the pan after 15 minutes and cool thoroughly on the rack.

- Spray a 9x13 pan with cooking spray and set aside.
- In a large bowl, combine oats, cinnamon, baking soda, salt, and walnuts. Toss until well combined.
- In a separate bowl, mash bananas and stir in eggs, maple syrup, vanilla, and almond milk.
- Pour wet ingredients into the bowl of dry ingredients and stir to combine until all oats are coated.
- Pour oat mixture into 9x13" pan. Top with additional walnuts and sprinkle with cinnamon if desired.
- Bake for 30 minutes and serve warm.
