- Preheat oven to 350 degrees. Prepare a 9x9 baking pan with non-stick spray or line with foil for easy removal (spray the foil with non-stick spray).
- Sift together the flour, baking powder, salt and ¼ tsp cinnamon in a medium bowl. Set aside.
- In a large bowl, mix together the melted butter, brown sugar and the ¼ cup granulated sugar.
- Add in the egg and vanilla, and then mix until combined.
- Slowly mix in the flour mixture until all combined. Fold in the apples.
- Spread the mixture into your prepared pan.
- In a small bowl, mix together the cinnamon topping.
- Sprinkle over the top of the batter.

- Adjust an oven rack to the middle position and heat the oven to 325 degrees. Lightly coat an 8-inch-square cake pan with vegetable oil spray.
- Whisk the flour, baking powder, spices, and salt together in a large bowl and set aside.
- Beat the brown sugar and butter together in a large bowl with an electric mixer on medium speed until light and fluffy, 3 to 6 minutes.
- Beat in the eggs, one at a time, until incorporated, scraping down the bowl and beaters as needed.
- Beat in the applesauce and lemon zest.
- Whisk the flour mixture into the egg mixture until no streaks of flour remain.
- Stir in the apples and raisins (if using).
- Pour the batter into the prepared pan and smooth the top.

- Spray a 8" round baking pan with cooking spray.
- Chop up your apples.
- Beat the eggs in a small bowl until fluffy.
