CINNAMON APPLES

Steps:
- Combine the candies, brown sugar and 2 1/2 cups water in a large saucepan and place over medium-high heat. Cook, stirring, until the candies and sugar have fully melted, about 10 minutes.
- Add the apples and bring to a boil. Cook until the apples are tender but not mushy, about 5 minutes. Remove the apples with a slotted spoon and transfer to a heatproof dish. Allow the syrup to boil for an additional 5 minutes to thicken and intensify. Pour the syrup over the apples and allow to cool. Transfer to the fridge and chill for at least 4 hours.
- When ready to serve, warm a griddle over medium heat. Butter the griddle and toast the slices of pound cake for about 2 minutes per side, adding more butter as needed.
- To plate, place a piece of pound cake on each plate. Top with a scoop of ice cream and 4 apple slices. Drizzle with additional syrup and garnish with the mint.
SAUTEED APPLES
This is great for any meal, but is great for breakfast. The syrup from the apples is great on homemade waffles. You may add raisins to the sauce if you wish.

- In a large skillet or saucepan, melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes.
- Dissolve cornstarch in water; add to skillet. Stir in brown sugar and cinnamon. Boil for 2 minutes, stirring occasionally. Remove from heat and serve warm.

CINNAMON APPLE SAUTé (FOR ONE!)
This sauté has some of the same flavorings of an apple crisp, but it's not nearly as heavy, and it doesn't leave me with a sense of guilt because it has less sugar and fat than traditional apple crisp. I love apple crisp - so I decided to create this dish: a lighter, easier version that I could cook for one (I'm a college student). Enjoy!

- Heat oil over medium heat in a 10" skillet.
- Add apples, cinnamon-sugar, pecans, and raisins. Sauté until apples near tender.

CARAMELIZED APPLES
These caramelized apples are meant to be slightly sweet, not overpowering and sugary, so they're versatile in nature. - Melt the butter in a large skillet over medium heat.
- Add the apples to the pan and sprinkle with 1 tablespoon sugar.
- Sauté the apples, stirring frequently, for 6-8 minutes, until they just start to turn tender.
- Sprinkle the apples with the remaining sugar, cinnamon, and lemon zest.
- Toss the mixture gently and cook over medium heat for an additional 2 minutes, until the sugar begins to caramelize and the apples are crisp-tender.
- Transfer the apples from the skillet to a serving bowl with a slotted spoon.
- Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits.
- Reduce the heat slightly and allow the cider and the pan juices to simmer for 1-3 minutes, until the sauce has reduced and thickened slightly.
- If you desire a thicker sauce, dissolve the cornstarch in a teaspoon of water, stir it into the sauce, and allow it to thicken for a moment.
- Pour the finished sauce over the warm apples and serve immediately.

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

- In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
- Add sliced, unpeeled apples, cover, and saute, stirring frequently.
- In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
- When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
- Continue cooking until sugar has dissolved into syrup.
- Serve with hot buttered biscuits and sausage on the side; or alongside ham or pork.
