After sampling this cake at a picnic, I had to find the lady who made it to ask for the recipe. I've made it - and shared the recipe myself - many times since.

- In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, cinnamon, baking soda and salt; gradually beat into sugar mixture (batter will be thick). Fold in apples. Spread into a greased and floured 13-in. x 9-in. baking pan. , For topping, beat the butter, sugar and cinnamon in a small bowl. Stir in coconut and walnuts; mix well. Sprinkle over the batter. Bake at 350° for 35-40 minutes or until a toothpick inserted in center comes out clean.

Layers of cheesecake, apple pie filling, and graham crackers make this Cinnamon Apple Icebox Cake a delicious dessert. It is an easy no bake recipe to make for fall and holiday dinners.

- Beat the cream cheese, brown sugar, vanilla, and 2 teaspoons cinnamon until creamy.
- Stir in 1 cup diced apple pie filling into the cream cheese mixture. Fold in 3 cups of Cool Whip.
- Spread a thin layer of Cool Whip on the bottom of a 9 inch square baking dish.
- Place 9 cinnamon graham squares on the bottom. Gently spread half the cheesecake filling on the graham crackers.
- Place another layer of crackers on the cheesecake filling, then top with one last layer of crackers.
- Cover the top with 2 cups of Cool Whip. Refrigerate for one to two hours.
- Cut into squares. Top with remaining pie filling and sprinkle with cinnamon. Store in a sealed container in the refrigerator.

CINNAMON AND CREAM CHEESE ICEBOX CAKE

- In a medium bowl, add 2 cups cream and 6 tablespoons sugar and whisk, using a hand mixer, until soft peaks form, 3 to 4 minutes. Slowly add the cream cheese and beat until fully incorporated.
- Spread 1 1/2 cups cream cheese mixture on the bottom of a springform pan and arrange a layer of graham crackers on top. Spread another 1 1/2 cups cream cheese mixture and one more layer of graham crackers. Spread the remaining cream cheese mixture on top, making sure you have a smooth top. Cover the pan with plastic wrap, making sure it touches the top layer, and freeze until firm, about 2 hours.
- Remove from the freezer and place in the refrigerator for about 6 hours to defrost but still remain firm.
- Place the remaining graham crackers in a food processor and grind until you have fine crumbs. Using your hand mixer, whip the remaining 1 cup cream until stiff peaks form and add the cinnamon and the remaining 3 tablespoons sugar.
- Remove the plastic wrap and the side of the pan and frost the cake all over with the cinnamon cream. Sprinkle the whole top of the cake with graham cracker crumbs. Serve cold.
- What Really Makes This Recipe Sing: This is a wonderful cake to serve while entertaining in the summer. Your guests will be amazed at this. And to think, you didn't even have to turn your oven on.
- BYOC: Melt your favorite farmer's market berry preserve and serve as a sauce. If you can't fine chocolate graham crackers, try using chocolate wafers.

- To make the cinnamon apples, add the chopped apples, brown sugar, cinnamon, nutmeg and lemon juice to a pan. Stir together until apples are well coated.
- 2. Cook apples on medium heat until at desired tenderness, about 10 minutes. Set aside to cool to about room temperature.
- 3. To make the filling, beat the cream cheese, brown sugar and cinnamon together in a large mixer bowl until smooth.
- 4. Add the milk and beat until smooth. Set cream cheese mixture aside and make the whipped cream.
- 5. Add heavy whipping cream, vanilla and powdered sugar to a large mixer bowl and whip on high speed until stiff peaks form. Set aside 1 1/2 cups of whipped cream.
- 6. Carefully fold the remaining whipped cream into the cream cheese mixture into two parts, folding until well combined.
- 7. To layer the dessert, use a 9 inch square pan. Add a full layer of graham crackers to the bottom of the pan, breaking some into smaller pieces to fill in gaps as needed.
- 8. Add about half of the filling on top of the graham crackers and spread into an even layer.
- 9. Add about half of the cooled apples on top of the filling in an even layer and gently press into the filling.
- 10. Repeat with another layer of graham crackers, then filling, then remaining apples.
- 11. Add one additional layer of graham crackers on top.
- 12. Spread the remaining whipped cream that was set aside earlier onto the top of the graham crackers.
- 13. Refrigerate until firm, 4-5 hours.
- 14. Top the icebox cake with crushed graham crackers or crushed apple chips, then cut into pieces and serve.

- To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean. To make Caramel Sauce: Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat. Stirring constantly, bring to a boil for 1 minute. Add cinnamon and vanilla. Cool. Cut cake and serve with caramel sauce. If desired, top with ice cream or whipped topping.

- In a mixing bowl, beat egg white,cream of tartar and salt on medium speed until soft peaks form. Add sugar, 2 Tablespoons at a time, beating well after each addition; beat until smooth and glossy and stiff peaks form. Add extracts on low speed. Combine 1 1/2 cups confectioners' sugar and flour; gently fold into egg mixture. Pour into an ungreased 10-in tube pan. - Preheat oven to 350°.
- Beat 1 1/2 cups sugar, margarine, vanilla, and cream cheese at medium speed of a mixer until well-blended (about 4 minutes). Add eggs, 1 at a time, beating well after each addition. Combine flour, baking powder, and salt. Add flour mixture to creamed mixture, beating at low speed until blended.
- Combine 1/4 cup sugar and cinnamon. Combine 2 tablespoons cinnamon mixture and apple in a bowl, and stir apple mixture into batter. Pour batter into an 8-inch springform pan coated with cooking spray, and sprinkle with remaining cinnamon mixture.
- Bake at 350° for about 1 hour or until the cake pulls away from the sides of the pan. Cool the cake completely on a wire rack, and cut using a serrated knife.
- Note: You can also make this cake in a 9-inch square cake pan or a 9-inch springform pan; just reduce the cooking time by 5 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Spray an 8-inch springform pan with cooking spray.
- Beat 1 1/2 cup of sugar with the butter, vanilla extract, and cream cheese in a bowl until soft and creamy; beat in the eggs one at a time, beating well after each addition. Whisk together the flour, baking powder, and salt in a bowl.
- In a separate small bowl, stir together the cinnamon with 1/4 cup of sugar. Stir 2 tablespoons of the cinnamon-sugar mixture into the flour mixture; reserve the rest of the cinnamon sugar.
