This is from The Cake Mix Doctor. Posted to go with Tomato Soup Spice Cake, but I think it'd be good with any spice cake recipe. Very simple to make. If you want plain buttercream frosting, omit cinnamon and replace it with another teaspoon of vanilla.

Ingredients

1/2 cup butter, room temperature
3 3/4 cups powdered sugar, sifted
3 -4 tablespoons milk
1 teaspoon vanilla extract
1 teaspoon cinnamon

Steps:

Place butter in large bowl.
Beat on low 30 seconds.
Add sugar about a cup at a time, beating on low between each addition.
Add 3 tablespoons milk, vanilla and cinnamon.
Beat on medium 1 minute.
Blend in up to 1 tablespoons of milk if frosting is too thick.

2-1/3 cups flour
1/4 cup packed brown sugar
2-1/2 tsp. baking powder
1 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/4 cup cold butter, cut into pieces
1 small apple, finely chopped
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1 egg
1/3 cup milk
1/2 tsp. vanilla

Steps:

Heat oven to 400ºF.
Mix flour, sugar, baking powder and spices in large bowl until blended. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in apples. Beat Neufchatel and egg in small bowl until blended; gradually add milk until blended. Add to flour mixture; stir until blended and mixture forms soft dough.
Drop dough into 8 mounds, 2 inches apart, on baking sheet.
Bake 16 to 18 min. or until golden brown. Remove from baking sheet; cool on wire rack. Serve warm or at room temperature.

The inspiration for the whipped cream came from Bon Appetit December 2002 issue. I've changed the measurements to my own taste. This whipped cream is delicious on anything with apples such as pie, cobbler and apple bread (see recipe 76946 for a great combo). Also would be nice on top of hot chocolate or coffee!

Ingredients

2 cups heavy cream
1/4 cup sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract

Steps:

Pour heavy cream into chilled glass bowl (I use a small but deep glass bowl).
Beat on high speed.
Slowly add sugar, cinnamon and vanilla.
Continue beating until stiff peaks form.
Tip: When making whipped cream I dampen a paper towel with vinegar and wipe the inside of a glass bowl with it.
Continue to wipe until dry and place inside freezer with beaters or whisk.
Leave in freezer for 10 minutes to chill then use to make whipped cream.
