1 can (30 ounces) pumpkin pie filling
1 can (12 ounces) fat-free evaporated milk
3 eggs
1 package yellow cake mix (regular size)
2/3 cup chopped pecans
1 cup reduced-fat butter, melted
1-1/4 cups fat-free whipped topping

Steps:

  • In a large bowl, combine the pie filling, milk and eggs; beat on medium speed until smooth. Pour into an ungreased 13x9-in. baking pan. Sprinkle with cake mix and pecans; drizzle with butter., Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack. Garnish with whipped topping. Refrigerate leftovers.

1 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 cup packed brown sugar
1/2 cup cold butter
FILLING:
2 cans (15 ounces each) solid-pack pumpkin
2 cans (12 ounces each) evaporated milk
4 large eggs
1-1/2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon salt
TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tablespoons butter, softened
Sweetened whipped cream, optional

Steps:

  • Preheat oven to 350°. Combine flour, oats and brown sugar. Cut in butter until mixture is crumbly. Press into a greased 13x9-in. pan. Bake until golden brown, about 20 minutes. , Meanwhile, beat filling ingredients until smooth; pour over crust. Bake 45 minutes. , Combine topping ingredients; sprinkle over filling. Bake until a knife inserted in the center comes out clean, 15-20 minutes longer. Cool, then refrigerate until serving. If desired, serve with whipped cream.

1 (18 ounce) box Pillsbury yellow cake mix, reserve some for topping
1/2 cup butter or 1/2 cup margarine, melted
1 egg
3 cups pumpkin pie filling
2 eggs
2/3 cup milk
1 cup reserved cake mix
1/4 cup sugar
1 teaspoon cinnamon
1/4 cup butter or 1/4 cup margarine

Steps:

  • Grease bottom only of a 13 x 7 inch pan.
  • Reserve 1 cup cake mix for topping.
  • Combine remaining cake mix, butter,& egg.
  • Press into pan.
  • Prepare filling by combining all ingredients until smooth.
  • Pour over crust.
  • For topping: combine all ingrediants.
  • Sprinkle over filling.
  • Bake at 350 for 45 to 50 minutes.
  • until knife inserted near center comes out clean.
  • If desired serve with whipped topping!

1 (18 ounce) yellow cake mix (reserve 1 cup)
1/2 cup butter, melted
1 egg
1 lb pumpkin pie mix
2/3 cup milk
2 eggs
1 cup reserved cake mix (dry)
1/4 cup sugar
1 teaspoon cinnamon
1/4 cup butter

Steps:

  • Grease bottom only of a 9 X 13 pan. Combine cake mix (reserving 1 cup) butter and egg. Press into pan to make a crust.
  • Prepare fillling by combining pumpkin pie mix, milk and the 2 remaining eggs. Beat with a mixer until smooth. Pour over crust.
  • For topping: combine reserved cake mix, sugar, cinnamon and butter. Cut in butter with pie crust cutter or 2 forks to make a crumbly mixture. Sprinkle over filling.
  • Bake at 350 degrees for 45 to 50 minutes until firm.
  • Cool, then refrigerate to chill.
  • Cut into squares and serve with whip cream.

This pumpkin pie recipe uses melted ice cream instead of evaporated milk. The result is delicious. I have never brought home leftovers of this pie. I recommend using fresh pumpkin, but canned pumpkin can also be used.

1 ½ pints vanilla ice cream, softened
3 eggs
1 ¾ cups pumpkin puree
¾ cup white sugar
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground nutmeg
2 (9 inch) unbaked pie shells

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.) Place ice cream near the warm oven to soften.
  • In a large bowl, whisk together the eggs. Stir in the pumpkin puree, sugar, salt, cinnamon, ginger, and nutmeg. Mix in soft ice cream until smooth. Pour filling into two 9 inch pie shells.
  • Bake for 15 minutes in the preheated oven. Reduce temperature to 350 degrees F (175 degrees C), and bake an additional 30 to 40 minutes, or until filling is set.

This is my baby sister's recipe for pumpkin squares. I have found other recipes that are just not the same--and if they aren't like Ruths, then they simply aren't anywhere near as good.

1 (18 ounce) package yellow cake mix (reserve 1 cup)
1/2 cup margarine, melted
1 egg
2 cups pumpkin
2/3 cup milk
2 eggs
1/2 teaspoon pumpkin pie spice
1/2 cup brown sugar
1 cup yellow cake mix (the one you reserved)
1 teaspoon cinnamon
1/4 cup sugar
1/4 cup margarine

Steps:

  • Bottom Crust:.
  • From the cake mix package reserve 1 cup aside for the topping. Mix the rest of the cake mix with the melted margarine and egg. Combine and press firmly into a greased 9x13-inch pan. Prick with a fork and bake in oven till lightly brown.
  • Filling:.
  • Mix pumpkin, milk, pumpkin pie spice, 2 eggs, brown sugar. Combine filling ingredients and pour over crust.
  • Topping:.
  • Mix the one cup of reserved cake mix, cinnamon, sugar, and margarine together using a fork till crumbly. Sprinkle over filling.
  • Bake at 350°F for 40-45 minutes. Serve with ice cream or whipped cream. This has a better flavor the next day.

These pumpkin squares are sweet and spicy. I was given this recipe by a co-worker over 30 years ago just before I got married, and it's one my husband has always enjoyed. Make sure you use canned pumpkin pie MIX not canned pumpkin.

1/2 cup butter
1 egg
3 cups pumpkin pie mix
2 eggs
2/3 cup milk

1/2 teaspoon ground nutmeg
1/4 cup butter, softened

Steps:

  • Preheat oven to 350°F; grease or spray a 9x13 cake pan.
  • Stir together cake ingredients, reserve 1 cup for the topping, press the rest of the mixture into the bottom of your pan.
  • Mix together filling ingredients pour over the cake layer.
  • Combine topping ingredients sprinkle over the filling layer.
  • Bake 45-50 minutes, cool.
  • Serve with whipped cream.

  • I seldom use cake mix, when I do it's always Duncan Hines, use the classic yellow.
  • For extra crunch add 1/2-3/4 cup of chopped walnuts to the topping.
