Cincinnati Chili is a classic Midwestern recipe! This chili is nothing like you have ever had before! Slow simmered meat sauce is served over spaghetti noodles.

- In a large dutch oven combine the water and tomato paste. Whisk together to combine.
- Crumble the meat with fingers and add to the liquid in the pot.
- Add all remaining ingredients to the pot and stir to combine.
- Bring pot of chili to a simmer over medium heat. Cover and lower heat. Let simmer for 2-3 hours stirring occasionally. Skim grease from the top as needed.
- Remove the chili from the heat and allow to cool to room temperature. Cover and store the chili in the refrigerator overnight.
- After chili has cooled overnight, using a spoon, breakup the grease on the top of the chili and remove completely.
- Bring the chili back to a low simmer over medium heat.
- Serve the chili warm over spagehtti noodles or over a hot dog.

AUTHENTIC CINCINNATI CHILI
This was handed down to me by Mom, a Cincinnati native. Skimming the fat makes this a healthier version than most, and gives it the right consistency. I like mine 4-way, with spaghetti, raw chopped onions, grated mild cheddar, and oyster crackers!

- Place the ground beef in a large pan, cover with about 1 quart of cold water, and bring to a boil, stirring and breaking up the beef with a fork to a fine texture. Slowly boil until the meat is thoroughly cooked, about 30 minutes, then remove from heat and refrigerate in the pan overnight.
- The next day, skim the solid fat from the top of the pan, and discard the fat. Place the beef mixture over medium heat, and stir in the onions, tomato sauce, vinegar, Worcestershire sauce, garlic, chocolate, chili powder, salt, cumin, cinnamon, cayenne pepper, cloves, allspice berries, and bay leaf. Bring to a boil, reduce heat to a simmer, and cook, stirring occasionally, for 3 hours. Add water if necessary to prevent the chili from burning.

- Put a skillet over medium heat and drizzle in a 2-count of olive oil. When the oil gets hazy, add the onion and garlic and cook, stirring, until it is soft and translucent, about 5 minutes. Add the ground beef, breaking it up with the back of a spoon, and cook until nicely browned, about 10 more minutes. Stir in the ketchup, chili powder, and mustard and simmer for 15 minutes until thickened. Season with salt and pepper.
- While the chili is cooking, get the grill going. Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Take a few paper towels and fold them several times to make a thick square. Blot a small
- amount of oil on the paper towel. Then carefully and quickly wipe the hot grates of the grill to make a nonstick grilling surface.

- Set the instant pot to sauté function and add the olive oil. Stir in the chopped onions and cook, stirring for 4-5 minutes until the onions are softened and slightly translucent.
- Add the tomato paste and stir well to combine. Cook the tomato paste for 1-2 minutes until very fragrant, then add the tomato sauce.
- Add the chili powder, cumin, garlic powder, cinnamon, allspice, cayenne pepper, cloves, sugar and salt cook and stir one to two minutes until very fragrant.
- Add the consumé or stock and water and mix well to combine.
- Add the ground beef and break apart with the back of a wooden spoon. When the beef is evenly combined, stir in the worcestershire sauce and add the bay leaf.
- Seal the pressure cooker and bring to high pressure. Cook for 30 minutes on high pressure, then let the pressure reduce naturally. Let the chili cool to room temperature, cover and refrigerate several hours or overnight so that the fat layer on top solidifies.
- Once the fat has hardened, remove it with a fork or spoon and discard. Transfer the chili to a large pot and simmer for 20-30 minutes with the lid askew to thicken the sauce.
- Stir in the apple cider vinegar and chocolate. Check for seasonings and adjust to taste.
- In a skillet, heat the olive oil over medium to medium high heat and stir in the chopped onions. Cook for 4-5 minutes until they're softened and translucent. Add the tomato paste and cook for 1-2 more minutes until well combined.

- Prep. In a bowl, mix together the American chili powder, allspice, cinnamon, cumin, paprika, cayenne pepper flakes, salt, ground black pepper, and the bay leaf. In another bowl, mix the tomato sauce, Worcestershire, mustard, vinegar, and water.
- Cook. Normally, at this stage we would brown the meat, but in The Queen City the meat is not browned, it is simmered. In a 2 quart sauce pan melt the lard over medium heat. Add the onions and cook until limp, then add the garlic for 1 minute. Add the spices for 1 minute to release the oil soluble flavors and mix in. Be careful they do not burn.
- Add the wet ingredients and mix thoroughly. Bring to a boil and then knock it back to a simmer. Crumble the meat into the liquid leaving it wormy looking. Simmer on low for about an hour with the lid on. Remove the lid and discard the bay leaf. Cook it down until it is wet, but not runny, perhaps another 20 minutes. Taste and adjust the flavorings to your preference.
