2 tablespoons olive oil
1 small onion, chopped
1 large jalapeno, seeded and minced
2 cloves garlic, minced
2 cups white rice (Japanese best)
1 (14 1/2 ounce) can reduced-sodium fat-free chicken broth
1 (4 ounce) can diced green chilies (mild)
1/2 teaspoon salt
3/4 cup lightly packed chopped cilantro

Steps:

  • In a large heavy saucepan, heat oil over medium high heat.
  • Add onion and cook 2 minutes.
  • Add jalapeno and garlic, cook 2 to 3 minutes, until onion is soft and beginning to color.
  • Add rice and cook, stirring constantly, until grains turn translucent, 1 to 2 minutes.
  • Pour in broth and 1 can water and bring to a boil.
  • Stir in chiles and salt.
  • Cover, reduce heat to low and cook 15 to 17 minutes, or until liquid is absorbed and rice is tender.
  • Stir in cilantro just before serving.

1 1/2 cups long-grain rice
3 tablespoons unsalted butter
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
1 bay leaf
Zest and juice of 1 lime
1 cup loosely packed fresh cilantro leaves, roughly chopped
1/2 cup chopped scallions, white and green parts
1/4 cup toasted salted pepitas (hulled pumpkin seeds)

Steps:

  • Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Drain well.
  • Melt the butter in a medium saucepan over medium heat. Add the garlic; stir and cook until sizzling and golden, about 1 minute. Add the drained rice; stir to coat in the butter and garlic. Season with 1 teaspoon salt and a generous grinding of black pepper.
  • Add 3 cups water and the bay leaf. Bring to a boil, then reduce the heat to low so the liquid is just simmering. Cover and cook for 18 minutes. Let the rice rest off the heat for 5 minutes.
  • Remove the bay leaf and fluff the rice with a fork. Add the lime zest and juice, the cilantro and the scallions, and toss together. Top with the pepitas and serve.

1/2 teaspoon kosher salt

2 green onions, green parts only, chopped

Steps:

  • Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. 1 bunch cilantro, stems and leaves separated, both finely chopped
1 cup long-grain white rice, such as jasmine or basmati
1/2 teaspoon kosher salt (Diamond Crystal), plus more to taste
1 large jalapeño, thinly sliced
Juice of 1/2 lime, plus more to taste

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the oil, then stir in the onion powder and cilantro stems until fragrant, about 30 seconds. Add the rice and stir until oil-slicked, just a few seconds.
  • Add 1 1/2 cups water, raise the heat to high and bring to a simmer. Reduce the heat to low, cover the saucepan and cook until all of the water is absorbed, 17 to 20 minutes. Remove from the heat and let the rice sit, covered, to steam for 10 more minutes.

1 tbsp (15 mL) vegetable oil (any neutral flavoured oil that can withstand high heat like sunflower, canola, or a vegetable blend)
4 cloves garlic, crushed (or finely minced)
1.5-2 cups (approx 800 mL when cooked) of rice, cooked (it doesn't have to be exact)
1/4 cup (15 g) finely chopped cilantro (stems and leaves)
1/2 tsp (2.5 g) kosher salt or salt to taste

Steps:

  • In a large non-stick pan, heat oil over medium heat.
  • Fry the minced garlic until fragrant, about 45 seconds.
  • Add the cooked rice (can be day-old or freshly cooked), then mix well to break up the rice and mix the garlic and oil into the rice.
  • Once the rice has heated through, add chopped cilantro and salt and mix well. Taste for seasoning, add salt if more is needed, then enjoy!

1/4 cup olive oil
1/4 cup white wine vinegar
2 medium tomatoes, diced
1 medium red onion, minced

Steps:

  • Cook rice according to package directions, either on stove top or in rice cooker.
  • Once rice is cooked, transfer to a large bowl and allow to cool, tossing with a rubber spoon until at room temperature.
  • Wisk together ingredients for the dressing: oil, vinegar, salt and pepper in a bowl.
  • Fold tomatoes, onion, cilantro and olives into the cooled rice.
  • Add vinaigrette and toss to combine.
  • Add salt and pepper to taste.
  • **Notefor Leftovers: Leftover rice salad can be tossed with a can or two of white tuna, drained and flaked.

2 cups white rice
4 teaspoons chicken bouillon
2 garlic cloves
1/2 onion, chopped
1 large limes or 1/4 cup lime juice, for more lime flavor
1/2 bunch cilantro, chopped fine

Steps:

  • Chop onion and garlic small. In a food processor, chop cilantro (I remove stems). Set aside.
  • In a 4 cup measurer squeeze lime so that all of the juice is extracted. Fill the container with water until it equals 4 cups. (you only want 4 cups liquid total). Place liquid in a sauce pan, add boulion and bring to a boil.
  • When liquid comes to a boil, add onion, cilantro and rice. Cover and cook 20 minutes, or as long as instructed on the rice package.
  • If you can't find a large lime you may want to do 1 1/2 limes. I tried 2 limes and it was too much.

3 1/2 cups packed cilantro leaves (about 3 ounces)
3 medium garlic cloves
1 medium serrano chile, halved lengthwise and seeded
3 1/3 cups low-sodium chicken broth
1 tablespoon vegetable oil
1/2 cup minced yellow onion
2 cups long-grain white rice
1 tablespoon kosher salt

Steps:

  • Combine cilantro, garlic, chile, and 2 cups broth in a blender and process until smooth; set aside.
  • Heat oil in a large frying pan over medium-high heat. When it shimmers, add onion and cook until softened, about 2 minutes. Add rice and salt stir to coat in oil and cook until rice becomes opaque, about 2 minutes. Carefully pour the cilantro mixture and the remaining 1 1/3 cups broth into the rice and stir to combine. Bring mixture to a boil then reduce heat to low so rice is at a simmer. Cover and cook until rice is tender, about 15 minutes. Turn off heat and let rice rest covered for 5 minutes. 1 large onion, chopped
2 cups long-grain rice
1 teaspoon kosher salt

Juice of 3 limes and zest of 2 limes (hold back juice of 1 lime for garnish)
Chopped fresh cilantro, for garnish

  • Heat the oil in a large skillet over medium heat. Add the garlic and onions and cook for 3 to 4 minutes. Reduce the heat to low and add the rice and salt. Cook over a low heat for 3 minutes, stirring constantly to make sure the rice doesn't burn. Add 2 cups of the broth and the juice and zest of 2 limes and bring it to a boil.
