CILANTRO-LIME RICE
A stir-in of cilantro and lime juice transforms plain cooked rice into a lively side that's an ideal accompaniment for Mexican main dishes, such as Chicken Fajita Tostadas.

- In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and 1/4 teaspoon salt; cover, and reduce to a simmer. Cook until water is absorbed and rice is just tender, 16 to 18 minutes.
- Meanwhile, in a blender, combine cilantro, lime juice, oil, garlic, and 2 tablespoons water; blend until smooth. Stir into cooked rice, and fluff with a fork.

MEXICAN CILANTRO LIME RICE

- Rinse the rice under cold water to release some of the excess starch.
- Heat a medium sauce pot over medium heat. Add the oil. When the oil is warm, add the diced onion, garlic, rinsed rice, and bay leaf. Cook for 1 to 2 minutes, stirring, until the onion starts to turn translucent.
- Add the water, salt, and garlic. Bring to a boil, then lower to a simmer and cook, covered, until the water is fully absorbed, about 20 minutes.
- Remove the lid. Fluff the rice with a fork. Remove the bay leaf. Stir in the lime juice, zest, and cilantro. Taste for seasoning. Serve hot with sliced jalapeño pepper and a few stems of cilantro as a garnish, if desired.
LIME CILANTRO RICE

- Heat the oil in a large saucepot over medium-high heat. Add the rice and toast until lightly golden, about 1 minute. Add the stock, lime peel, salt and 1 1/2 cups water and bring to a boil. Cover the rice, reduce the heat to low and simmer until all of the liquid is absorbed, about 15 minutes. Let the rice stand, covered, about 5 minutes, then stir in the lime zest, juice and cilantro. Transfer to a serving bowl and top with more cilantro leaves and green onion.
CILANTRO-LIME RICE

- Place the rice in a fine-mesh sieve and rinse under cold water until the water runs clear. Drain well.
- Melt the butter in a medium saucepan over medium heat. Add the garlic; stir and cook until sizzling and golden, about 1 minute. Add the drained rice; stir to coat in the butter and garlic. Season with 1 teaspoon salt and a generous grinding of black pepper.
- Add 3 cups water and the bay leaf. Bring to a boil, then reduce the heat to low so the liquid is just simmering. Cover and cook for 18 minutes. Let the rice rest off the heat for 5 minutes.
- Remove the bay leaf and fluff the rice with a fork. Add the lime zest and juice, the cilantro and the scallions, and toss together. Top with the pepitas and serve.

- Brown the rice: Heat the olive oil in a medium saucepan on medium high heat. Add the raw rice and stir to coat with the olive oil. Cook, stirring occasionally, until the rice has started to brown. Add the garlic and cook a minute more.
- Add water, salt, zest, then simmer: Add water, salt, and lime zest to the rice. Bring to a rolling boil, then cover and lower the heat to low to maintain a very low simmer. Cook undisturbed for 15 minutes (check your rice package instructions), then remove from heat and let sit for 10 minutes. Fluff the rice with a fork.
- Stir in lime juice and cilantro: Transfer the rice to a serving bowl. Pour lime juice over the rice and toss with chopped cilantro. Serve with chicken, steak, shrimp, Mexican or Asian food.

CILANTRO LIME RICE

- Heat up a dollop of oil in a saucepan on medium-high heat
- Saute 1 cup of rice in the saucepan until lightly browned
- Add 2 cups of stock and 1/2 teaspoon salt to the rice
- Bring to a boil and then reduce heat to a light simmer
- Let simmer until the liquid is absorbed
- Turn off heat and cover, letting rice sit in its own steam for a few minutes
- Rinse 1/2 bunch of cilantro and twist off the bottom stems, chopping roughly
- Add to a blender along with 2 Tablespoons lime juice and 1 garlic clove
- Add a couple tablespoons of water (or oil) and blend the ingredients together
- Add the lime cilantro mixture to the cooked rice and mix thoroughly
- Taste for salt
- Add additional cilantro if desired

- In large wide pan with tight fitting lid, heat oil under medium heat.
- Add onion and sautee for 3 minutes.
- Add garlic and sautee 30 seconds.
- Add white rice and stir very often for 6-8 minutes (some onions and rice will begin to brown).
- Add chicken bouillon and sautee for 2 minutes.
- Add water and bring to a boil.
- Cover, turn to lowest setting and do not remove lid for 15 minutes.
- Remove from heat and fluff with fork. Add in lime juice and cilantro.
- Cover (still off heat) and let sit for 5 minutes. Fluff with fork again and serve hot.

- Combine cilantro, garlic, chile, and 2 cups broth in a blender and process until smooth; set aside.
- Heat oil in a large frying pan over medium-high heat. When it shimmers, add onion and cook until softened, about 2 minutes. Add rice and salt stir to coat in oil and cook until rice becomes opaque, about 2 minutes. Carefully pour the cilantro mixture and the remaining 1 1/3 cups broth into the rice and stir to combine. Bring mixture to a boil then reduce heat to low so rice is at a simmer. Cover and cook until rice is tender, about 15 minutes. Turn off heat and let rice rest covered for 5 minutes. Fluff with fork and serve.
CILANTRO LIME RICE
This is a rice recipe that goes great with a fresh mex meal. We moved from Utah and missed our local fresh mex resturant (Cafe Rio). Try it with the Sweet Pork recipe. We like to buy the raw tortillas at Costco and make pork, rice, and bean burritos.

- Chop onion and garlic small. In a food processor, chop cilantro (I remove stems). Set aside.
- In a 4 cup measurer squeeze lime so that all of the juice is extracted. Fill the container with water until it equals 4 cups. (you only want 4 cups liquid total). Place liquid in a sauce pan, add boulion and bring to a boil.
- When liquid comes to a boil, add onion, cilantro and rice. Cover and cook 20 minutes, or as long as instructed on the rice package.
- If you can't find a large lime you may want to do 1 1/2 limes. I tried 2 limes and it was too much.
