  • Mix cucumber, cilantro, lime juice, garlic, sambal oelek, red pepper flakes and salt together in a bowl until evenly combined; allow to sit until flavors blend, at least 10 minutes.

1/4 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon freshly grated gingerroot
Salt and freshly ground black pepper
6 cups mixed greens
2 tomatoes diced
1 cup peeled and diced cucumber
1 cup sliced red onion
1/8 cup chopped fresh mint leaves
3/4 cup fresh picked cilantro leaves

Steps:

  • Whisk all the vinaigrette ingredients together in a small bowl. Season, to taste, with salt and freshly ground black pepper.
  • In a salad bowl, combine all the salad ingredients. Add a little bit of the vinaigrette and toss to coat. Serve the remaining vinaigrette on the side.

3/4 cup vidalia onions, peeled and thinly sliced or 3/4 cup walla walla onion
1 medium English cucumbers, sliced or 3 cups English cucumbers
2 tablespoons of fresh mint, chopped
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice
2 teaspoons extra virgin olive oil
1/4 teaspoon salt
2 ounces reduced-fat feta cheese, crumbled or 1/2 cup reduced-fat feta cheese
mint, for garnish

Steps:

  • Combine first 4 ingredients in a large salad bowl.
  • Combine chopped mint, cilantro, lime juice and oil in a small bowl, stirring with a whisk.
  • Add juice mixture and salt to watermelon mixture; toss gently to coat.
  • Sprinkle with feta; garnish with mint sprigs, if desired.

2 large cucumbers (washed and spiraled )
3/4 cup fresh finely chopped cilantro
1 red bell pepper diced
1 yellow pepper diced
1/2 tsp sea salt
1/2 tsp black pepper
1 tsp red pepper flakes (optional)
2 tbsp fresh lime juice
3 tbsp extra virgin olive oil
1 pinch kosher salt
1 pinch cracked black pepper

Steps:

  • Peel the cucumbers and slice off the ends.
  • Cut each cucumber in half and then cut those pieces in half length ways.
  • Using the tip of a small spoon, carefully scrape out the seeds from each half of cucumber.
  • Slice the halves into 4 long pieces and then cut into dice. Add to a bowl.
  • Add the chopped cilantro, red pepper flakes, salt, and black pepper.
  • In a separate smaller bowl whisk together the lime juice, olive oil, salt, and black pepper.
  • Add the dressing to the cucumber mixture and toss gently but making sure to coat all of the cucumber.
  • Transfer to a serving platter and serve at once or store covered in the refrigerator until ready to use.
