Steps:
- In a medium bowl, combine chopped tomatoes, onion, garlic, jalapeño pepper and parsley. Add lime juice, salt and pepper to taste. Stir until the ingredients are evenly distributed. Enjoy!

CILANTRO-FREE PICO DE GALLO SALSA
For those of you who can't stand cilantro, we have the salsa recipe for you. Mexican oregano is used in place of cilantro, satisfying that much needed herbal accent.

- Combine ingredients and mix thoroughly. Crush the Mexican oregano leaves between your fingers as you add them to the mix.For milder salsa, remove the seeds and veins from your chiles.Serve with tortilla chips. This makes a great topping for nachos or queso dip too.
FRESH PICO DE GALLO (SALSA FRESCA)
This is an uncooked tomato salsa (salsa fresca) that's great to make while fresh tomatoes are in season. Stir pico de gallo into chopped/mashed avocadoes to make guacamole (see my recipe #112059), or serve as is with warm tortilla chips and Tex-Mex food (tacos, enchiladas, quesadillas, burritos, chiles rellenos). I don't like the stuff that comes out of jars too much so I came up with this! Anyone can make it! This is a traditional Tex-Mex recipe.

Steps:
- Put tomatoes in container with garlic, onion, and jalapenos and stir together. If using the jar jalapenos add a little splash of juice from jar of jalapeno slices.
- Squirt lime juice on and stir. Add cilantro.
- Add salt, pepper, and any other seasonings to taste. Refrigerate and let "marinate" for a little while for flavors to incorporate. Enjoy!
