SPICY CILANTRO-YOGURT DIP



Spicy Cilantro-Yogurt Dip image

This green dip is tangy and spicy and great with grilled flat bread or cut-up vegetables for dipping.

Yield 6 to 8 servings

Number Of Ingredients 10

1 1/2 cups packed fresh cilantro leaves, plus more for garnish
3/4 teaspoon ground cardamom
3/4 teaspoon ground cumin
1 garlic clove
1 jalapeno pepper (seeds removed for less heat)
Juice 1 small lemon
1 1/2 cups Greek yogurt
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil (optional)
For Serving: Grilled flatbread and/or cut-up vegetables

Steps:

  • Put the cilantro, cardamom, cumin, garlic, jalapeno and lemon juice in a blender and puree until smooth. Transfer the mixture to a medium bowl, stir in the yogurt and season with salt and pepper.
  • Spoon the dip into a serving bowl and drizzle with the olive oil if using. Garnish with cilantro. Serve with grilled flatbread and/or cut-up vegetables for dipping.

I go this out of the local newspaper. I LOVE, LOVE this dip, in fact a friend of mine and I make it and finish it all in one sitting. Great with corn chips. My main suggestion is to have some sort of breath freshener available afterwards.

Number Of Ingredients 9

1 bunch cilantro, long stems trimmed
2 cloves garlic, chopped
2 1/2 tablespoons water
1/2 tablespoon mayonnaise
1 1/2 tablespoons white vinegar or 1 1/2 tablespoons red wine vinegar
3 tablespoons fresh lemon juice
3 tablespoons finely chopped white onions
3 tablespoons light olive oil
1 small dried chili, crumbled

Steps:

  • Place Cilantro, garlic, water, mayonnaise, vinegar and lemon juice in food processor.
  • Process until finely minced but not pureed.
  • Add remaining ingredients.
  • Process for several pulses, or until just combined but not emulsified.
  • Transfer to bowl.
  • Refrigerate for at least 30 minutes.

This is one of the best dips we've ever had. I got it from a friend at a party. She said it was a Weight Watchers recipe, but I've found you can "do" or "undo" the weight watching part by using light sour cream or whatever... either way, it's awesome!!

1 bunch cilantro
2 (1 ounce) packages hidden valley ranch dip mix
3 garlic cloves
1/2 cup buttermilk
1 cup salsa verde
2 pints sour cream
1/4 cup jalapeno

Steps:

  • Blend in blender all ingredients besides sour cream and then add sour cream.

Want something different to serve your guests for bread dipping? This Good Housekeeping recipe is it. The chile-hot salsa gets its emerald-green color from cilantro. This is great served with warmed French or Italian bread.

1 bunch fresh cilantro, tough stems trimmed
2 green onions, cut into 2-inch pieces
1 tablespoon red wine vinegar (malt vinegar can also be used)
1 tablespoon fresh lemon juice
2 tablespoons olive oil
1 teaspoon hot pepper sauce
1/8 teaspoon salt
2 tablespoons water
1 loaf French bread, warmed and sliced

Steps:

  • Rinse cilantro; drain, but do not spin dry.
  • In food processor with knife blade attached, pulse cilantro and green onions until coarsely chopped. Transfer mixture to small serving bowl.
  • Stir in vinegar, lemon juice, olive oil, hot pepper sauce, salt, and 2 tablespoons water.
  • Slice bread; serve with salsa.
  • Salsa can be covered and refrigerated up to 2 days if not being served right away.
