BAKED HADDOCK WITH TOMATO AND CILANTRO
Easy low-fat way to make baked haddock with tons of flavor! I love baked haddock but my body does not love all of the calories that go along with the rich flavor, so I decided to try a new twist and it's even better. It's fairly easy though there are a lot of ingredients (Which can be removed depending on taste...the most important part is the tomato cilantro fish and scallions!). The presentation of the fish is beautiful with the red and green colors against the breadcrumbs.

Steps:
- Pre-head oven to 350 degrees.
- In a bowl, combine the breadcrumbs, salt, pepper, garlic powder, onion powder, parsley and red pepper flakes. Mix.
- Spray a bake dish/pan with non-stick cooking spray.
- Place 4 pieces of fish on bake ware, skin side down.
- Add a 1/4 tablespoon of olive oil to each piece of fish. spread on fish.
- Add the breadcrumb mixture on top of each piece of haddock (about 1/4 cup to each piece of fish, more or less depending on the size of the fillet).
- Cook in the oven for 15 minutes.
- Meanwhile -- add the tomatoes, scallions, cilantro and lemon juice to bowl. Mix together with spoon or fingers.
- After the 15 minute cooking time period is up, add the tomato/cilantro mixture to top of each fish and cook for an additional 5 minutes.
- Serve immediately.

COD FILLETS WITH CILANTRO YOGURT SAUCE
This cooling herbed yogurt sauce is adapted from the chef Yotam Ottolenghi in London, who serves it with leek fritters. But it's wonderful with mild fish like cod. The fish, while delicious, is utterly simple: fillets baked in a 300-degree oven until opaque, 10 to 20 minutes depending on the thickness of the pieces. It is the sauce that is the star, and that comes together quickly in a food processor. Combine roughly chopped cilantro and parsley, garlic that has been mashed to a paste, lemon juice, olive oil, salt and yogurt. (Whole-milk yogurt would be best for body and flavor, while low-fat is O.K., and nonfat untenable.) Process until the mixture is smooth and green. There will be sauce left over, which you can use on yet more fish, or as a dip for vegetables or fritters, anything that would thrive when dunked in the refreshing, herb-graced sauce.

- To make the sauce, coarsely chop the cilantro and the parsley leaves. In a mortar and pestle, mash the garlic with a pinch of salt. Place the cilantro and parsley in a food processor fitted with the steel blade and process until finely chopped. Add the garlic, lemon juice, olive oil, about 1/2 teaspoon salt (or to taste), and the yogurt and process until the mixture is smooth and green. Transfer to a bowl.
- Preheat the oven to 300 degrees. Line a sheet pan with foil and oil the foil. Season the fish fillets with salt and pepper and lay on the foil. Place a pan of just boiled water on the floor of your oven and place the baking sheet with the fish in the oven on the middle rack. Bake 10 to 20 minutes, depending on the thickness of the fillets, until the fish is opaque on the surface and you can pull it apart with a fork.
- Remove the fish from the oven, transfer to plates or a platter, and spoon on the sauce. Garnish with lemon wedges and serve.

MEXICAN BAKED WHITE FISH IN CILANTRO SAUCE
Steps:
- Gather the ingredients.
- Preheat oven to 375 F. Mix together cilantro leaves and diced onion and reserve for garnish.
- Melt butter in a medium-sized skillet. Sauté chopped onion and garlic for about 5 minutes, stirring often, until onion is translucent.
- Place sautéed onions and garlic, crema, salt, lime juice, and cilantro into a blender. Process until you have a soft green sauce.
- Lightly grease a glass or metal baking dish. Place white fish filets in dish in a single layer. Pour sauce over filets. Move filets slightly so that some of the sauce gets in under the fish.
- Bake, uncovered, for about 25 minutes. Baking time will vary according to thickness of filets; watch your dish closely so that fish does not overcook. Fish is done when it can be easily flaked with a fork.
- Garnish each serving with reserved cilantro and onion. Serve with white or red rice or boiled potatoes.

BAKED WHOLE CRAPPIE
Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.
- Pat fish dry; score the skin of fish in a diamond pattern with a very sharp knife. Place fish on the prepared baking pan. Cover tails of fish with aluminum foil to avoid overbrowning.
- Combine cilantro, olive oil, lime juice, garlic, salt, and paprika in a blender; pulse until mixture is a soft paste.
- Spread cilantro-garlic paste on each fish, pressing the paste into the scored sections. Place 2 lemon slices on each fish.
- Bake, uncovered, in the preheated oven until fish flakes easily when tested with a fork, about 20 minutes.

- Turn on the broiler, and cover broiler pan with aluminum foil.
- Wash, dry and coarsely chop cilantro and parsley. Mince cilantro, parsley and garlic in food processor.
- Add the cumin, hot pepper flakes, lemon juice and olive oil, and process until well blended.
- Wash fish, and cut in half. Place in a single layer on foil, and spread cilantro mixture evenly over fish.
- Broil fish four inches from heat, according to the Canadian rule: measure fish at the thickest part, and cook 8 to 10 minutes to the inch.

- Make aioli by combining all ingredients and stirring well. Store in the refrigerator until ready to serve.
- To make fish, combine milk and egg white in a shallow dish. In a second dish, combine cornflakes, flour, salt and pepper.
- Heat oil in a large skillet (non-stick works best) over medium-high heat.
- Dip fillets in milk mixture and then dredge in cornflake mixture.

CILANTRO LIME FISH
This is a good one for those of us who love lime, since that is the predominant flavor here. Use cod, flounder, or any firm white fish for this. I used Tilapia, and in place of the dried onion I used fresh. I served it with Recipe #120719. From Taste of Home's Quick Cooking (September/October 1999).
