EASY CHEESE FONDUE
Using mild cheese means everyone in the family can enjoy this classic starter

Steps:
- Heat oven to 200C/180C fan/gas 6. Mix the vinegar with the cornflour and place in a heatproof bowl with the cheeses. Set over a pan of boiling water. Slowly melt the cheese, stirring occasionally. When it's nearly melted, add the crème fraîche and a little black pepper, if you like. Lower the heat and keep warm.
- To make croutons, toss the bread in the oil and a little seasoning on a baking sheet, then bake for 10-15 mins until golden and crisp.
- To serve, put the cheese fondue on a large platter and arrange the croutons, veg and salamis alongside it.

CHEESE FONDUE RECIPE
Steps:
- Add the wine and lemon juice to the fondue pot and bring to a simmer. Add the cornstarch and stir to blend.
- Add the cheese in small handfuls while constantly stirring until the cheese combines with the wine and melts. Do not stop stirring and do not let the cheese come to a boil. Simmer only, folks.
- When all the cheese is added and melted into a creamy substance, add the pinch of nutmeg and a little freshly ground pepper.
- Now give yourself 30 seconds to rest your arm before serving with all the prepped dipping ingredients.
- If you don't have enough "fondue forks" try using wooden skewers. They make great substitutes.
GRUYèRE AND CIDER FONDUE

- Preheat oven to 300°F. Heat heavy large skillet over high heat. Add kielbasa slices and sauté until browned on both sides, 2 to 3 minutes. Transfer to baking sheet and place in oven to keep warm.
- Toss cheese and cornstarch in large bowl to coat. Bring hard cider and vinegar just to simmer in medium saucepan over medium heat. Reduce heat to medium low (mixture should be barely simmering). Add a handful of cheese to simmering cider mixture. Stir until cheese is melted. Add remaining cheese 1 handful at a time, stirring until melted between additions. Increase heat to medium and cook until fondue begins to bubble, stirring constantly. Stir in Calvados. Season to taste with pepper.
- Transfer fondue to pot. Set fondue pot atop stand; light candle or canned heat burner. Arrange sausage slices, apple slices, and bread cubes in bowls alongside fondue pot.
- Alcoholic apple cider; available in the liquor department of most supermarkets and at liquor stores.

CHEESE FONDUE WITH APPLE CIDER
Deliciously melted cheese fondue with a mixture of fun things to dip in it! Fondue parties are the best and this cheese fondue is made with apple cider, Fontina, and Gruyere for maximum flavor!

- In a pot bring the apple cider to a simmer and then turn the heat to medium
- Toss the Fontina cheese with one tbsp of the cornstarch and toss the grated Gruyere with the remaining tbsp of cornstarch.
- Add the Fontina cheese gradually to the warm apple cider whisking as you do. Don't add any more until the last cheese has melted, it'll still be stringy.
- Once all of the Fontina has been added begin adding the grated Gruyere in stages.
- Keep whisking until the cheese has melted and the fondue becomes thick and less stringy, but more like a cheese sauce.
- You can serve the fondue in another container or just keep it in the pot that it was cooked in.
- If the cheese fondue begins to thicken too much after it's been away from the heat, place it back on the heat and add about 1/4-1/2 cup heavy cream or milk and stir over the heat for a few minutes until the consistency becomes thinner.

- Heat cider, broth, Worcestershire, and garlic in a medium pot over medium heat and simmer for 5 minutes.
- Toss the cheeses together in a medium bowl. Sift the corn starch over the cheese, and toss to coat lightly.
- Using a wooden spoon, sprinkle some cheese mixture into the warm liquid and continue to stir in small amounts of cheese until it is all incorporated and the fondue is smooth and melted, about 15 minutes. Stir in cayenne, salt and Bourbon, if using.
- Transfer to a fondue pot or double boiler and serve with desired dippers.
