Steps:
- In a medium saucepan set over medium high heat, bring apple cider to a boil. Reduce heat slightly and simmer until reduced to about 1/2 cup, about 10 minutes.
- Add the brown sugar, butter, heavy cream, and cinnamon and simmer for 10-15 minutes until thickened, stirring frequently.
- Remove from heat and stir in vanilla and salt to taste. Use immediately or store in the fridge for up to 2 weeks. Reheat in the microwave.

- Make sauce:
- Heat sugar in a 12-inch heavy skillet over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt, then stop stirring and cook, swirling skillet occasionally so sugar melts evenly, until it is dark amber. Stir in butter, water, rum, vinegar, and a pinch of salt (caramel will harden and steam vigorously) and cook over low heat, stirring occasionally, until caramel has dissolved. Add cream and bring to a boil, stirring, then remove from heat. Cool to warm.
- Make beignets:
- Preheat oven to 250°F with rack in middle. Set a cooling rack in a large shallow baking pan.
- Heat 2 inches oil in a 5- to 6-quart heavy pot over medium-high heat to 375°F.
- Meanwhile, peel apples and cut crosswise into 1/4-inch-thick slices. Cut out core with cutter, then pat apple rings dry.
- Put 1 1/4 cups flour in a large shallow bowl and make a well in center. Beat egg in a small bowl with a fork, then stir in cider and 1 tablespoon oil and pour into well. Stir with fork until a lumpy batter forms.
- Working in batches of 3 or 4, dredge apple rings in remaining 1/2 cup flour, shaking off excess, then dip in batter to coat, letting excess drip off, and fry, gently turning over once with a slotted spoon, until golden brown on both sides, about 2 minutes total per batch. Transfer to rack and keep warm in oven. Return oil to 375°F between batches.
- Just before serving, dust warm beignets with confectioners sugar. Stir sauce, then serve on the side.

- Place cider in heavy large skillet. Scrape in seeds from vanilla bean; add bean. Boil cider mixture until reduced to 2 cups, about 15 minutes. Add sugar and butter. Cook until sauce thickens slightly and is reduced to 1 1/2 cups, stirring occasionally, about 6 minutes longer. (Can be made 3 days ahead. Transfer to small bowl. Cover; chill. Remove vanilla bean before using.)

- Preheat oven to 350 degrees.
- Peel the skin from the top third of each apple.
- With a melon baller or a paring knife core the apples, leaving the bottom intact so that it can hold the delicious filling.
- In a bowl combine the pecans, raisins, sugar, butter, orange rind, flour and cinnamon, blend well.
- Gently stuff the apples with the mixture.
- Place the filled apples upright in a small baking dish and pour the apple cider over top of the apples.
- Cover with tin foil and bake for 45 minutes.
- Remove the apples from the oven, (keep them covered) drain the cider, into a small pot and cook over medium heat for 5 minutes, set aside until needed.
- In a small pan, on medium, heat the sugar and orange juice until sugar dissolves.
- Bring to a boil and simmer for 5 minutes or until sugar has turned a golden color.
- Carefully pour the reserved apple cider into the orange sugar mixture. It will bubble and spit, once it has stopped then slowly stir to blend together.
- When ready to serve pour sauce over the apples and enjoy.

PUMPKIN SQUARES WITH CIDER CARAMEL SAUCE
First published in Family Fun magazine Oct.09 edition. Great alternative to pumpkin bread. Taste great w/ vanilla ice cream, caramel cider sauce or just caramel ice-cream topping. Also can enjoy plain. Great way to sneak some veggies to your kids! Recipe calls for sugar, but try using a sugar alternative for a more healthier snack.

- 1) Heat oven to 325 degrees. Grease 9 x 13 baking pan.
- 2) Combine sugar, flour, baking powder, baking soda, spice, and salt in a large bowl. Add oil, pumpkin, and eggs. Whisk until evenly blended. Pour batter into prepared pan.
- 3) Bake for about 30 minutes Remove and cool completely, approximately 1 1/2 hours.
- 4) Just before serving, make the cider caramel sauce. In a medium saucepan, whisk together brown sugar and cornstarch. Add the cider and mix until dissolved in to the sugar mixture. Cook over medium-high heat, stirring constantly, until large bubbles form (about 3 minutes). Reduce heat to low and allow sauce to simmer until thickens, (about 2 minutes).
- 5) Remove the sauce from the heat and whisk in cream and butter. Let sauce cool slightly. add a pinch of salt to taste.
- 6) To serve: Cut out cake in 3" squares. Top with a scoop of ice cream. Drizzle with sauce.

- In a medium saucepan, bring the apple cider to a boil over medium high heat. Continue boiling, stirring occasionally, for 10-15 minutes until the cider reduces to a dark, thick syrup that is about 1/4 cup in volume. Watch very carefully in the last few minutes to ensure the cider doesn’t burn.
- Reduce the heat to medium low, then add the granulated sugar and brown sugar. Let bubble for 2 minutes, until the sugar dissolves, then add the butter and heavy cream. Boil over medium low, whisking constantly, until the mixture thickens somewhat, 3-5 minutes. The caramel will still seem fairly thin at this point. Remove from the heat completely and stir in the vanilla, cinnamon, and salt. Allow the caramel to cool for 5 to 10 minutes, until it reaches a thicker but still pourable consistency (it will still be warm) or let it rest for longer to cool to a more solid, dip-like texture. Drizzle over ice cream, pie, apple slices, coffee, or just eat with a spoon.
