1/2 cup cheddar cheese, grated
3 ounces cream cheese, softened
1/3 cup mango chutney
1 tablespoon minced onion
1/4 teaspoon ground ginger

Steps:

  • Remove fruit chunks from chutney and cut fine.
  • Place prepared chutney in medium bowl and add remaining ingredients.
  • Mix well.
  • Cover and chill one day before serving.
  • Serve with thin crackers.

1/4 cup mayonnaise
2 tablespoons grated onion
2 tablespoons chutney
3 teaspoons curry powder
1 large garlic clove, minced
1/8 teaspoon pepper
1 can (9-3/4 ounces) chunk white chicken, drained
1/4 cup slivered almonds, optional
Assorted crackers

Steps:

  • In a small bowl, beat cream cheese until light and fluffy. Stir in the mayonnaise, onion, chutney, curry, garlic and pepper until blended. Fold in the chicken. Transfer to an ungreased 3-cup baking dish. Sprinkle with almonds if desired. , Bake, uncovered, at 350° for 18-20 minutes or until heated through. Serve with crackers.

3/4 cup diced dried fruit and raisin mixture (from 7-ounce package)
1/4 cup sweetened dried cranberries
1/2 cup apple cider
1 tablespoon cider vinegar
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts
1 package (8 ounces) cream cheese, softened
Crackers, if desired

Steps:

  • Mix all ingredients except walnuts, cream cheese and crackers in 2-quart saucepan. Cook over medium heat about 5 minutes, stirring frequently, until fruit is plump and mixture is thick. Cover and refrigerate about 1 hour or until completely cooled.
  • Meanwhile, heat oven to 350°. Spread walnuts on cookie sheet. Bake 5 to 7 minutes, stirring twice, until light golden brown; cool.
  • Mix walnuts and cream cheese in medium bowl. Spread cream cheese mixture in 1/2-inch-thick layer on serving plate. Top with chutney. Serve with crackers.

1/4 cup finely chopped onion
1 cup whole berry cranberry sauce (from 16-oz. can)
2 tablespoons cider vinegar
1 teaspoon pumpkin pie spice
1 teaspoon dried thyme leaves
1/4 teaspoon freshly ground black pepper
Dash hot pepper sauce
3/4 cup (about 6 ounces) fat-free or light cream cheese spread (from 8-oz. container)
35 water crackers

Steps:

  • Heat oil in small saucepan over medium-low heat until hot. Add onion; cook 3 to 4 minutes or until softened, stirring frequently.
  • Add cranberry sauce, vinegar, pumpkin pie spice, thyme, pepper and hot pepper sauce; mix well. Bring to a boil over medium heat. Cook 10 to 12 minutes or until thickened and reduced slightly, stirring frequently. Cool 20 minutes. Cover; refrigerate at least 4 hours or overnight.
  • Just before serving, spread about 1 teaspoon cream cheese spread on each cracker. Top each with about 1 1/2 teaspoons cranberry mixture. If desired, garnish each with fresh thyme.
