POPCORN SNACK MIX (NO-BAKE RECIPE)
My easy Popcorn Snack Mix involves no baking and is super versatile using what you can find in your store cupboard. Popcorn, cornflakes, chocolate chips, salted nuts and marshmallows are all drizzled with melted chocolate. Its a delicious snack for kids and adults alike.

Steps:
- Add 2 tsp Vegetable Oil and 50g Corn Kernels to a large saucepan. Put on a medium heat shaking the pan occasionally until the popping stops. Tip the popcorn out onto a large tray.
- Chop 75g Salted Nuts. Keep some chunky, chop some a little smaller. It depends on what nuts you are using as to how much you want to chop. Don't got too small. Add the nuts to the popcorn.
- Also add 25g Mini Marshmallows, 30g Corn Flakes and 50g Dark Chocolate Chips.
- Mix everything together well and spread out on the tray.
- Break up 50g Dark Chocolate and 50g Milk Chocolate into a small bowl or saucepan.
- Melt in the microwave or on the hob and stir well.
- Drizzle the melted chocolate over the snack mix.
- Leave to cool then use your hands to break up any bigger pieces where the chocolate has stuck ingredients together. You can leave some clumps for variety.
- Store in an airtight container or eat!

- Line a large baking sheet with waxed paper.
- Combine crispy corn and rice cereal, honey graham cereal, peanut butter corn puff cereal, popcorn, chocolate pieces, and peanuts in a large bowl.
- Melt butter in a large saucepan over medium heat; whisk in flour until smooth, 2 to 3 minutes. Add brown sugar and corn syrup; bring to a boil, stirring occasionally, until sugar is dissolved, about 1 minute. Stir peanut butter into sugar mixture until creamy, about 3 minutes; pour over cereal mixture and gently toss until coated.
- Spread cereal mixture over prepared baking sheet and allow to cool, about 30 minutes. Once cooled, break mixture into chunks and store in an airtight container.

- Preheat oven to 300 degrees F. Line a large rimmed baking sheet with heavy duty foil and spray lightly with non-stick cooking spray.
- Pour popped popcorn out onto foil lined baking sheet. Pick out any kernels. Add Crispix and pretzels and spread out evenly with popcorn.
- Melt butter in a large, heavy saucepan over medium heat. Add brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly, and then allow to boil for two minutes, stirring occasionally. Remove from heat and use a spoon to drizzle the mixture over the popcorn mixture in an even stream. Toss the popcorn mixture lightly to distribute and then spread it back out in an even layer.
- Bake for 10 minutes. Use a spatula to stir the mixture and bake for an additional 10 minutes. Remove from oven and stir once more. Spread the mixture back out in an even layer and allow to cool for 10 minutes or until cool enough to handle. Break apart and allow to cool completely. Add peanut M&M's and toss to combine.
- Store in an airtight container or zippered plastic storage bags.
SWEET AND SALTY POPCORN MIX

- Preheat the oven to 225 degrees F. Coat 2 baking sheets with cooking spray. Toss the popcorn, rice crackers, peanuts, sesame seeds and wasabi peas in a large bowl.
- Combine the brown sugar, corn syrup, butter and salt in a heavy-bottomed saucepan over medium-high heat. Bring to a boil, stirring constantly, then cook, stirring, until thick, about 1 more minute. Remove from the heat. Carefully stir in the vanilla and baking soda (the caramel will bubble).
- Pour the hot caramel over the popcorn mixture and stir with a metal spoon. (Don't worry if the caramel is too thick to coat the mix; it will melt in the oven.) Spread on the prepared baking sheets; bake, stirring every 15 minutes, until evenly coated, 45 minutes to 1 hour. Let cool completely. Break into pieces and store in an airtight container for up to 2 weeks.

- Stir the confectioners' sugar, paprika, salt, garlic powder, cumin and cayenne together in a small bowl. Heat the coconut oil in a very large pot with a lid over medium heat. - Put the oil in a large saucepan with a tight-fitting lid over a medium heat. Toss the popcorn kernels in the oil to coat. Put the lid on, and keep over a medium heat until you hear the first popcorn pop, then turn the heat to medium-low. When you begin to hear lots of popping, give the pan a shake. Continue to shake frequently until the popping stops. Turn off the heat and leave in the pan.
- Line a large baking tray with baking parchment. Put the sugar and 60ml water into a medium heavy-based saucepan and bring to the boil. Stir until the sugar has dissolved, then leave over a medium heat, without stirring, for 6-8 mins. It should start to turn into a golden caramel, swirl it around and add the butter - stand back as it may spit a little. Stir well until combined.
- Pour the caramel over the popcorn in the pan and stir immediately to coat the popcorn, being careful not to touch the hot caramel. Carefully transfer onto the lined baking tray and press down with the back of a spoon to spread evenly. Leave to cool for 5 mins, then break apart and eat.

SPICY SWEET POPCORN

- Combine the butter, sugar, cinnamon, chipotle and salt in a saucepan over medium heat and cook, stirring, until the butter melts and starts to bubble, 4 to 5 minutes.
- Add the popcorn to a large bowl. Working quickly, pour the butter mixture over the popcorn and use 2 rubber spatulas to evenly coat the popcorn.
CHUNKY, SWEET POPCORN MIX
I've been making this recipe for years. I used to put it in individual bags for the kids when I was a room mother. Anytime there's a party at my house, there's always a bowl of this on the table. And by the end of the party the whole bowl is empty. It's wonderful! Also get creative....try different cereals and different types of peanuts (Spanish, pecan, etc.).

- In a large mixing bowl, combine popcorn, rice cereal, and peanuts.
- Put aside.
- In a sauce pan, put the brown sugar, corn syrup, margarine and salt.
- Boil for 5 minutes.
- Remove from the heat and add the baking soda.
- This will cause the mixture to "froth".
- Pour this over the popcorn mixture and stir to combine.
- Spread on a greased cookie sheet (you can cover the cookie sheet with parchment paper and spray this to make clean up easier) and bake at 250°F for 40 minutes.
- Mix once or twice while it is cooking.
- Let cool on the pan.
- Break apart and serve.
