BAKED SKINNY FRIES



Baked skinny fries image

A simple side dish of homemade chips isn't always unhealthy - this version coats the potatoes in spices too

1 tbsp vegetable oil
2 tsp fine cornmeal or polenta
½ tsp paprika
¼ tsp garlic powder
2 large potatoes , cut into 1cm-thick chips

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pour the oil onto a baking tray and put in the oven for 3 mins. Mix the cornmeal or polenta, paprika and garlic powder together and season. Toss the chips in the mix, then tip onto the tray. Shake well, then cook for 40 mins, shaking halfway through, until crisp and golden.

6 baking potatoes, peeled or unpeeled
Cold water to cover
1/4 c (50 mL) cooking oil
Paprika (sprinkle)
Salt (sprinkle)

Steps:

  • Cut potatoes in half lengthwise. Cut each half into 4 pieces. Soak in cold water for 30 minutes, to remove starch and avoid clumping. This step may be omitted if desired. Drain. Blot dry. Put cooking oil into bowl. Add potato pieces. Stir well to coat all pieces. Arrange on baking tray in single layer. Sprinkle with paprika. Bake in 475 degree F (250 C) oven for about 20 minutes. Turn after 12 minutes to brown other side. Sprinkle with salt and serve.

95g sweet potato, cut into fries
1 tsp rapeseed oil
¼ tsp cayenne pepper

Steps:

  • Heat oven to 200C/180C fan/ gas 6.
  • Put 95g sweet potato, cut into fries, on a baking tray and mix with 1 tsp rapeseed oil and ¼ tsp cayenne pepper.
  • Bake in the oven for 20 mins.

750g Desirée potato (about 3 medium large), peeled
groundnut oil, for drizzling
sea salt and freshly ground black pepper

Steps:

  • Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.
  • Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.
