1/2 lb lean (at least 80%) ground beef
1 small onion, chopped (1/4 cup)
1 cup frozen mixed vegetables (from 12-oz bag)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
1 jar (12 oz) fat-free beef gravy
1/4 teaspoon dried marjoram leaves
1/4 teaspoon pepper
1 1/3 cups water
2 tablespoons light stick butter
1/2 teaspoon garlic salt
1/3 cup low-fat (1%) milk
1 cup Betty Crocker™ mashed potatoes
1 tablespoon chopped fresh parsley

Steps:

  • In 12-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Stir in mixed vegetables, tomatoes, gravy, marjoram and pepper. Heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in 2-quart saucepan, heat water, butter and garlic salt to boiling. Remove from heat; add milk. Stir in potatoes (dry) and parsley. Let stand about 30 seconds or until liquid is absorbed.
  • Fluff potatoes with fork. Serve stew over potatoes.

Steps:

  • In a Dutch oven or skillet, brown beef well in oil. After the beef is cooked, remove and put into a deep pot. Add the garlic and mix well. Add water, tomatoes, lemon, onions, salt, pepper, and sugar. Mix well and simmer 2 hours, stirring occasionally. Add carrots, potatoes, cloves, and crushed basil leaves. Cover, and cook until vegetables are tender. Add canned peas, and cook until they are heated through, about 4 minutes. If necessary, to thicken gravy, thicken with flour, dissolved in water. Serve hot.

3 strips bacon, chopped
1 1/2 cups coarsely chopped onion
1 cup strong black coffee or beef broth
2 tablespoons Worcestershire sauce
2 1/2 pounds boneless beef chunk, cut into 1-inch cubes, well trimmed
2 large bay leaves
3 pounds Idaho potatoes, scrubbed and peeled, then halved
1 1/2 cups grated sharp cheddar or Monterey pepper jack cheese, or more to taste
Salt and freshly ground pepper to taste
1/4 cup chopped fresh parsley, for garnish (optional)

Steps:

  • 20 minutes high pressure plus 15 minutes natural pressure release Set the bacon in cooker and set the heat to medium high. Fry until quite crisp, stirring frequently to prevent sticking, and lowering the heat to medium, if needed, to prevent the bacon from burning, about 4 minutes. Transfer the bacon to a bowl and pour off the thin film of fat. Add the onions and cook over medium-high heat, stirring frequently, until softened slightly, about 2 minutes. Add coffee and stir well, taking care to scrape up any browned bits that are sticking to the bottom of the cooker. Add the Worcestershire sauce, beef, and bay leaves. Stack the potatoes on top for garnish the beef (Some will end up in the liquid and become extremely soft and flavorful.) Lock the lid in place. Over high heat, bring to high pressure. Reduce the heat to maintain high pressure and cook 20 minutes. Allow the pressure to come down naturally for 15 minutes. Quick-release any remaining pressure. Remove the lid, tilting it away form you to allow excess steam to escape. With a slotted spoon, lift the potatoes out of the cooker and set them in a large bowl. Taste the beef and, if not sufficiently tender, return to high pressure for 5 minutes more. Again, let the pressure come down naturally. Use a potato ricer or fork to mash the potatoes coarsely, mixing in the cheese and reserved, crisp bacon as you go. Season the potatoes with salt and lots of pepper. Reheat the potatoes in the microwave, if necessary. Remove the bay leaves from the stew and season to taste. Ladle the stew into large, shallow bowls. 1 (28 ounce) can tomatoes, chopped
1 cup water
1 teaspoon oregano leaves, crushed

1/2 cup yellow cornmeal
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup all-purpose flour
1/4 cup milk
1 egg, beaten
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • FOR THE STEW: Cut beef into 1 inch pieces. In paper bag, combine 1/4 cup flour, chili powder, cayenne and 1/2 teaspoon salt. Add meat a few pieces at a time; close bag and shake to coat. Repeat with remaining meat. Reserve remaining flour mixture in bag.
  • In 5 quart Dutch oven over medium heat, cook bacon until crisp; remove bacon, reserving drippings in pan. Drain bacon on paper towels; crumble and set aside.
  • Over medium high heat in bacon drippings, cook meat until browned on all sides. With slotted spoon, remove meat to bowl, reserving drippings. In drippings, cook onion, green pepper, celery and garlic until tender. Stir in reserved flour mixture.
  • Gradually stir in tomatoes, water, oregano and sugar. Over medium heat, cook until mixture boils, stirring constantly. Return meat to Dutch oven. Reduce heat to low. Cover; simmer 2 hours, stirring occasionally.
  • FOR THE CORNMEAL DUMPLINGS: In medium bowl, stir together cornmeal, baking powder, 1/8 teaspoon salt and 1/4 cup flour. Add milk, egg and butter; stir just until smooth. Stir in reserved bacon. Drop batter by rounded tablespoonfuls onto simmering stew. Cover; simmer 15 minutes more without lifting lid. Yields 6 cups.

5 cloves garlic, cut into small pieces
2 seeds whole cardamom seeds
1 large bay leaf
1 large tomato, cut into chunks
1 cup beef stock
1 cup sunflower oil
2 large potatoes, cut into 1-inch cubes

Steps:

  • Place beef in a bowl and season with salt, pepper, and paprika. Mix in flour to dredge the beef.
  • Heat olive oil and butter in a large pot over medium-low heat. Add onion and cook, stirring occasionally, until onion has softened and turned translucent, about 5 minutes.   • Meanwhile, if you're adding sausages to any portion, snip each sausage into 3-4 chunks. Heat the olive oil in a frying pan and brown the chunks for 5 mins, then stir in appropriate portions of the stew and gently simmer for the remaining cooking time. Serve with the mash.
