Steps:
- Preheat the oven to 400 degrees F.
- Wash the potatoes and boil them until just tender, 10 to 15 minutes. Cut in half. Meanwhile, in a pan, cook the bacon until crispy. Drain the potatoes and place them in an oven-safe pan with the bacon, bacon fat, and rosemary sprigs. Season with salt and pepper.
- Bake in the oven for about 20 to 25 minutes, remember to stir the pan once or twice so that the potatoes are evenly browned and the bacon fat completely coats the potatoes.

Steps:
- Preheat oven to 400 degrees.
- Wash and cut potatoes into bite-size pieces. Place potatoes in a medium sized roasting pan.
- Add diced onion, shallots, garlic and bacon. Mix potatoes and other ingredients with softened butter until ingredients are coated thoroughly with butter.
- Cover with foil and cook approximately for 1 hour or until the potatoes are almost fork tender.
- Remove foil. Season with salt and pepper and place back in the oven for 20 to 25 minutes or until potatoes have a nice golden brown color.
- Garnish with grated cheese and chives.

- Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. - Rinse potatoes under cool water.
- Scrub with a vegetable brush.
- Pat dry with paper towels.
- Cut potatoes in half lengthwise.
- Place thin onion slices between potatoes.
- Sprinkle with salt and pepper.

- Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. Drain on paper towels; pat to remove excess grease.
- Using a 24-cup, non-stick mini muffin pan, line bottom and sides of each mini muffin cup with a half strip of the par-cooked bacon in a circular fashion, making a well in the center, folding or creasing if needed to fit.
- In a large mixing bowl, beat potatoes, eggs, and 1/2 cup of the cheese with an electric mixer on medium-high speed until smooth and fluffy.
- Transfer potato mixture to a large pastry bag fitted with a large star tip. Pipe potato filling evenly into bacon-lined muffin cups in a spiral fashion (cups will be full and potato spirals will extend beyond the height of muffin cups). Sprinkle tops with remaining 1/4 cup cheese. Bake for 12-15 minutes or until tops are golden brown. Let rest 5 minutes. Run knife around edges to remove from pan. Place on serving platter and garnish with chives. Serve warm. Makes 24.
- Note: A plastic freezer bag can be used in place of a pastry bag and decorator's tip. Fill freezer bag with potato mixture and seal. Using kitchen scissors, cut off a small corner of the bag, about 1/2 inch, and pipe potato mixture into mini muffin cups as directed.

CHUCK (BACON WRAPPED BAKED) POTATOES
These are named after my dad Chuck... chuck potatoes cause he invented the recipe.... thanks dad...love ya I sometimes cook these on the grill as well, be careful of flare-ups cause of the grease, I put in a baking dish and then cook on the grill. Can easily double or triple the recipe, just adjust the cooking time.

- Turn oven onto 350. Get 6 squares of aluminum foil lined up place potato on each one.
- Cut a large V shape out of each potato. Put about 1 tablespoon of butter in the V of each potato, place 2-3 slices of onion ontop of butter. Sprinkle potato with salt and pepper. Put the cut out V section of potato back in (it will stick out some because of the butter and onion but it will be okay. Wrap bacon around the entire potato starting at one end,ending up on the other end. Wrap each potato in foil closing foil tightly around potato.
- Place on rimmed baking sheet (I put a piece of foil down on my baking sheet to catch any grease drips). Bake for 1 to 1/4 hours, turning potatoes halfway through. Check for potatoes doneness with a knife inserted into potato. Bacon will be done but not crisp, and a little pale in color because of the foil steaming/cooking.

- Wash and dry potatoes. Cut potatoes going almost all the way through; you still want your haves to be attached. You want them to lay sideways without falling over, so lay the potato down and cut parallel with the counter.
- Stuff a piece of bacon and a slice of butter into each potato. It works best to put the butter and bacon together and shove them into the potato at the same time. Brush potatoes with olive oil and sprinkle generously with salt and pepper. Turn potatoes and oil, salt and pepper the second side.
- Bake at 400˚F for 30 min then flip them over with tongs and bake another 30 min or until easily pierced with a knife. Garnish with finely chopped fresh parsley if desired.
