CHRISTMAS TREE EDIBLE CENTERPIECE



Christmas Tree Edible Centerpiece image

I used a mix of cauliflower from the gardenia mix, broccoli and boccoflower for a contrast of color. I quickly blanched the broccoli and broccoflower heads very quickly (just seconds) in salted boiling water and the chilled to brighten the color!You'll need Styrofoam cone and toothpicks. I also used a platter that has a center with with a dip basin which is not really needed.

4 lettuce leaves (optional)
8 cups broccoli, & broccoflower heads blanched
1 cup petite carrot
4 -8 cups mixed vegetables, grape tomatoes, cherry tomatoes, mixed olives, Giardiniera (mixed pickled vegetables)
1 slice carrot (cut in a star with a cookie cutter)

Steps:

  • Place foam on platter.
  • Using toothpicks secure lettuce on foam just to cover.
  • Starting with the largest broccoli and broccoflower heads place on foam starting at the base and work your way up securing with toothpicks.
  • Push 1/2 the carrots randomly into the foam.
  • Take the rest of the veggies cut into small pieces and fill in the empty spots and brighten up the tree. Using toothpicks only IF needed.
  • Mix the remaining carrots with the juice from the carrots, remaining vegetables with the juice from the gardenia mix and place around the base of the tree.
  • Top with the star.
  • Serve with a dip of choice.

Show Stopping Christmas Tree Centerpiece (Edible) image

This will stop people in their tracks at any Christmas party or buffet. You need a styrofoam tree (from the craft store). I got this idea from a Gooseberry Patch Christmas book about 10 years ago, and use this for any buffet or party we go to. You will also need a piece of cardboard, toothpicks and foil. Encourage guests to eat the "tree." They may not want to at first.

24 cherry tomatoes
24 pitted black olives
14 cocktail onions
24 pitted green olives
12 sweet pickles
18 italian peppers
34 medium pre- cooked shrimp
8 ounces cream cheese
2 cups parsley

Steps:

  • Allow cream cheese to come to room temperature.
  • Cover stryrofoam tree base with plastic wrap. Pull tightly and make it smooth.
  • Using a frosting knife or spatula, cover the entire tree with cream cheese (not the bottom).
  • Layer ingredients starting at the bottom, one row per ingredient.
  • Stick a toothpick into the foam and attach the food item to the toothpick.
  • Make layers even
  • I usually start with cherry tomatoes on the bottom since they are tought enough to hold the weight of the next item.
  • Layer the foods in the color combination you like.
  • You may repeat layers.
  • cover any holes with parsley.
  • Buy an inexpensive small star for the top.
  • Refrigerate until serving.
  • Cut a 22" piece of cardboard.
  • Cover it with foil.
  • Put the tree in the center and scatter crackers and a couple of bowls of cocktail sauce at the base.
  • Encourage guests to eat the tree. They may not want to "ruin" it. Please tell them it's okay.
