A festive sandwich style cookie. Excellent for Christmas or New years' celebrations.

Ingredients

¾ cup butter, softened
1 cup white sugar
2 egg
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
6 tablespoons strawberry jam
¼ cup green decorator sugar

Steps:

In a large bowl, cream butter and sugar until light and fluffy. Gradually add eggs and vanilla. Mix well. Sift together flour, baking powder, and salt. Stir flour mixture into the butter mixture until well blended. Divide dough in half and wrap in plastic. Refrigerate dough for three hours.
Preheat oven to 350 degrees F (175 degrees C). Grease two cookie sheets or line them with parchment paper.
On a floured surface, roll out half of the dough to 1/8 inch thickness. Cut dough into star shapes using a 3- to 4-inch star cookie cutter. Using a 1- to 2-inch star cookie cutter, cut a star into the center of half of the big stars. Place the full stars on one cookie sheet and the "tops"--the cookies with the center cutouts--on another. Sprinkle colored sugar on the star tops, if desired.
Bake in preheated oven until edges are golden brown, 6 to 8 minutes. Allow cookies to cool completely. (You can re-roll the mini stars cut out of the centers, or bake them separately for about 5 minutes.) Repeat with remaining cookie dough.
After cookies cool completely, spread 1 teaspoon of preserves in the center of each full star cookie. Place a cut-out cookie on top of the layer of preserves. Pack cookies between waxed paper in a covered tin to preserve freshness.

My family love these sweet, quick and easy to make cookies. These are one of our favorite Christmas cookies...we hope that you will enjoy them. You will find they don't last long. These little babies are UNBAKED. You make the batter and shape the cookies, placing them in a covered box in your refrigerator until needed. This recipe can very easily be halved, and they also vary well. We sometimes substitute the maraschino cheeries with drained pineapple chunks.

1 cup butter, unsalted, soft
3 1/2 cups icing sugar, sifted
2 tablespoons juice, orange, fresh squeezed
2 1/2 cups coconut, dessicated
1/2 cup almonds, thinly sliced
84 maraschino cherries, cheeries drained (whole)
1 -1 1/2 cup graham cracker crumbs

Steps:

In a large bowl mix the butter and sugar and juice together.
Next add the coconut and almonds to batter, making sure to blend well.
The cookie batter should be slightly stiff, if not add a little more icing sugar, until they are easier to work with.
To make the cookies, wrap the batter around the cherries, forming a nice ball, then roll the cookie in the graham crumbs.
Place in a waxed lined container, cover and refrigerate.
I don't know how long these last, they always go really quickly at my house.

Someone brought this in to work and I thought I could copy it without a recipe, and did! Have never worked with marshmallows before, WOW (suggestions appreciated)!! Work fast, it's hot! Hint 1: Buy generic corn flakes at the $1 store! Hint 2: If the "berries" don't stick on the "holly", put the cold holly in the microwave for 20 sec. (on waxed paper) and then add the berries.

Ingredients

5 cups corn flakes
3 tablespoons butter
1 teaspoon green food coloring
1 (10 ounce) package regular marshmallows (or 4 C. minis)
1/2 cup red-hot candies

Steps:

Melt butter in a 3 quart saucepan on Low.
Add the marshmallows and melt completely - keep stirring.
Add the green food coloring - keep stirring.
Lower heat to Warm.
Add corn flakes and mix until they are all green.
Drop by teaspoons onto waxed paper to create the "holly".
While each holly is still warm, add 3 Red-Hots as the berries (see Hint 1 at top if berries don't stick).
Repeat until all the holly is on the waxed paper.
Let cool and remove from waxed paper. Put on a party plate and enjoy!
