Give leftover or rotisserie chicken a takeout-inspired treatment in this Chicken Chow Mein Casserole. A variety of vegetables, sliced almonds, and chow mein noodles make this Chinese chicken casserole colorful, crunchy, and completely satisfying.

4 cup chopped cooked chicken
4 stalks celery, chopped (2 cups)
2 medium carrots, shredded (1 cup)
1 cup chopped red sweet pepper
2 4 ounce cans (drained weight) sliced mushrooms, drained
0.667 cup sliced or slivered almonds, toasted
2 tablespoon diced pimiento, drained
2 10.75 ounce can condensed cream of chicken soup
2 cup chow mein noodles

Steps:

  • Preheat oven to 350 degrees F. In an extra-large bowl, stir together chicken, celery, carrots, sweet pepper, mushrooms, almonds, and pimiento. Add soup to chicken mixture; mix well.
  • Transfer chicken mixture to an ungreased 3-quart rectangular baking dish. Bake, covered, for 45 minutes. Sprinkle with chow mein noodles. Bake, uncovered, for 5 to 10 minutes more or until heated through. Makes 8 servings.

This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

1 (12 ounce) can chow mein noodles (the crunchy kind)
2 cups celery, chopped
1 cup onion, chopped
1/4 cup green pepper, chopped
3 lbs cooked chicken, cut up
2 (11 ounce) cans cream of mushroom soup
1 (11 ounce) can water
1 tablespoon soy sauce (I prefer Kikkoman's Lite)

Steps:

  • Preheat oven to 350 degrees F.
  • In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
  • Mix soup with 1 can of water. Spoon soup mixture over vegetables.
  • Drizzle soy sauce over all.
  • Bake at 350°F for 30-40 minutes.
  • Enjoy!

I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts.

2 cups diced cooked chicken
1/4 cup chopped onion
1 cup finely slivered celery
1 tablespoon butter
1 (10 3/4 ounce) can cream of mushroom soup
1/3 cup chicken broth
1 tablespoon soy sauce
3 drops hot pepper sauce
1/8 teaspoon pepper
1 cup chow mein noodles
1/3 cup cashews

Steps:

  • Saute onion and celery in butter.
  • Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
  • Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.
  • Bake at 350 for 20 minutes.

Also, I serve this with white rice and more chow mein noodles on the side and frozen egg rolls when I find them on sale.

2 tablespoons butter or 2 tablespoons margarine
2 garlic cloves, minced
1 lb fresh mushrooms, sliced (OR 2 cans - 8 ounces each mushroom pieces and stems)

1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
3/4 cup mayonnaise

This is my Mom's recipe. Don't know where she got it, but it is delicious. We always put it over chow mein (toasted) noodles, but it is good over rice, soba and Marco Polo noodles as well. Even my Father liked this and he always swore he hated cooked onions.

1 -1 1/2 lb lean hamburger
1 (15 ounce) can bean sprouts, drained and rinsed
2 (8 ounce) cans sliced water chestnuts, drained and rinsed
2 cups celery, chopped
1 medium onion, chopped
2 -3 tablespoons low sodium soy sauce
2 (10 1/2 ounce) cans cream of mushroom soup
10 1/2 ounces soup can water
2 (5 ounce) cans chow mein noodles
1 dash black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Lightly brown hamburger and drain off excess fat.
  • Add pepper, onion and celery plus enough water to cover.
  • Simmer for 20 minutes.
  • Add sprouts, water chestnuts and canned soup plus one soup can of water. Should be a little thin, as it will thicken upon baking.
  • Add soy sauce and pour mixture into 2 -3 qt, casserole.
  • Bake 25 - 30 minutes (until thickened and well seasoned).
  • Served over noodles.

1 tablespoon cornstarch
2/3 cup reduced-sodium chicken broth
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 pound sliced fresh mushrooms
2/3 cup thinly sliced celery
1/4 cup sliced onion
1/4 cup thinly sliced green pepper
2 tablespoons julienned carrot
1 teaspoon canola oil
1 garlic clove, minced
1 cup cubed cooked chicken breast
1 cup cooked brown rice
2 tablespoons chow mein noodles

Steps:

  • In a small bowl, combine the cornstarch, broth, soy sauce, salt and ginger until smooth; set aside., In a large skillet or wok, stir-fry the mushrooms, celery, onion, pepper and carrot in oil for 5 minutes. Add garlic; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened.
