These award winning Chorizo and Sweet Potato enchiladas have a perfectly balanced sweet and spicy flavor that will leave you wanting more.

1 lb. sweet potato ($1.17)
1 poblano pepper ($0.75)
2 cloves garlic ($0.16)
2 Tbsp vegetable oil ($0.08)
3 links 3/4 lb. chorizo ($3.00)
8 7-inch tortillas ($1.26)
1 batch homemade enchilada sauce* ($0.80)
1.5 cups shredded cheese ($1.50)
3-4 green onions, sliced ($0.21)

Steps:

  • Peel the sweet potato and cut it into small cubes (about 1/4-inch). Remove the stem and seeds from the poblano and also dice into 1/4-inch pieces. Mince the garlic.
  • In a large skillet, sauté the sweet potato, poblano, and garlic in vegetable oil over medium heat until they begin to soften (about 5-7 minutes). Squeeze the chorizo out of it's casing into the skillet. Continue to sauté over medium heat, breaking up the chorizo into pieces as you stir, until the chorizo is cooked through (5-7 minutes more).
  • Spray a large casserole dish with non-stick spray and preheat the oven to 375ºF. Scoop about 1/2 cup of the chorizo sweet potato filling into each tortilla, then roll into a cigar shape. Place the filled and rolled tortillas in the baking dish, seam side down. They should fill the dish and fit tightly against each other to prevent unrolling.
  • Pour the enchilada sauce over the the rolled tortillas and top with shredded cheese. Bake in the oven until the edges begin to bubble (about 20-25 minutes). Top with sliced green onions after baking. Serve hot.

This dish is a favorite of my family's. It sounds awful and even looks that way, but it is very tasty as well as having a bit of your veggies. My kids don't know that it's better for them than a cheeseburger!

3 tablespoons vegetable oil
6 potatoes, peeled and shredded
1 (8 ounce) package processed cheese, melted
2 (10 ounce) cans diced tomatoes with green chile peppers, drained
1 (8 ounce) can sweet peas, drained
1 (8.75 ounce) can whole kernel corn, drained
12 (8 inch) flour tortillas

Steps:

  • Heat oil in a large, heavy skillet over medium heat. Cook the shredded potatoes until golden brown on both sides. In a small bowl combine the melted processed cheese with the diced tomatoes with chiles.
  • Stir in half of the peas and half of the corn, and mash them into the hash browns. When well combined, add the remaining peas and corn; continue mashing to combine. Stir in about 1 cup of the cheese and tomato mixture and mix well. Cook for 10 minutes, or until heated through.
  • Spoon the potato mixture into the tortillas and roll like a burrito. Smother with cheese/tomato mixture.

2 tablespoons canola oil
1 small onion, diced
3 cloves garlic, chopped
2 cups chicken stock
2 tablespoons chili powder
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
One 6-ounce can tomato paste
8 ounces fresh Mexican chorizo
1/2 cup canola oil
8 corn tortillas
3/4 cup frozen home fries or refrigerated diced potatoes
2 cups shredded Mexican blend cheese
1/4 cup sour cream
2 teaspoons hot sauce
Juice of 1/2 lime
2 tablespoons chopped fresh cilantro

Steps:

  • For the enchilada sauce: Heat the canola oil in a medium saucepot over medium heat. Add the onion and saute until softened, 5 to 6 minutes. Add the garlic and cook another 2 minutes. Transfer the onions and garlic to a blender. Add the stock, chili powder, salt, pepper and tomato paste and blend on high until smooth, about 30 seconds.
  • For the enchiladas: Heat a large skillet over medium heat. Add the chorizo and cook, breaking it up into small pieces with a wooden spoon, until cooked through, 6 to 8 minutes. Drain off the rendered fat. Let cool.
  • Preheat the oven to 375 degrees F.
  • Heat the canola oil in a small skillet over medium heat. Fry each tortilla until lightly crisp but still pliable, 10 to 15 seconds. Drain on a baking sheet lined with paper towels.
  • In a large bowl, toss together the chorizo, home fries or potatoes and 1 cup of the cheese.
  • Ladle about 3/4 cup of the enchilada sauce into the bottom of a 9-by-13-inch baking dish. Place about 1/4 cup of the chorizo mixture in the center of each tortilla and roll up. Arrange the filled tortillas in the baking dish seam-side down in a single row from end to end. Pour the remaining enchilada sauce over the top. Top with the remaining 1 cup cheese. Bake until the cheese is melted and bubbly, 15 to 20 minutes.
  • While the enchiladas cook, combine the sour cream, hot sauce and lime juice in a small bowl.
  • Drizzle the enchiladas with the sour cream mixture and garnish with the cilantro.

  • Add the 1 tablespoon olive oil to a large skillet over medium heat. Once hot, add the sweet potato, seasoning with 1/2 teaspoon kosher salt. Stir to coat. Cook, stirring occasionally for 4 to 5 minutes, until the sweet potato begins to soften. Remove from the skillet and into a small bowl and set aside.
  • Add the 1/4 cup onion and minced garlic into the same heated pan and stir until it becomes fragrant about 30 seconds. Add in the 3 ounces of chorizo. Brown the chorizo for 4 to 5 minutes, using a wooden spoon to break it into bite-sized crumbles as it cooks.
  • Once the chorizo is crumbled and browned add the sweet potato and 1 cup spinach. Stir to combine with the chorizo mixture. I like to use a wooden spoon to mash the sweet potato ever so slightly, binding the mixture together. Cook until heated through, 1 to 2 minutes.
  • Preheat the oven to 350 degrees F. and into a baking dish (8x8-inch square or 7x11-inch rectangle dish), lightly spray each side of the corn tortillas and add to the microwave for 30 seconds to make pliable. Remove from the microwave and the baking dish and set aside.
