6 oz. Mexican chorizo
1 large onion, chopped
2 Tbsp. chopped canned chipotle peppers in adobo sauce
2 cloves garlic, minced
1 can (28 oz.) diced tomatoes, undrained
1/2 cup water
1 can (16 oz.) reduced-sodium kidney beans, rinsed
1 can (15.5 oz.) black beans, rinsed
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Brown beef and chorizo in Dutch oven or large deep skillet over medium heat; drain. Return meat to pan. Add onions, peppers and garlic; cook and stir 5 min. or until crisp-tender.
  • Add tomatoes and water; stir. Bring to boil; cover. Simmer over low heat 30 min., stirring occasionally. Add beans; cook, stirring frequently, 2 to 3 min. or until heated through.
  • Serve topped with sour cream and cheese.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
3/4 pound chorizo, chopped
2 pounds ground chicken
3 tablespoons chili powder, 3 palm fulls
1 tablespoon ground cumin, a palm full
1 onion, chopped
3 cloves garlic, finely chopped
1 red bell pepper, chopped
1 (15-ounce) can red beans, drained
1 bottle beer
1 (28-ounce) can diced fire roasted tomatoes
Salt
6 cups chicken stock
2 cups quick cooking polenta
2 tablespoons butter
2 scallions, finely chopped
2 tablespoons freshly chopped thyme leaves

Steps:

  • Heat a big, deep skillet over medium high heat with 1 tablespoon extra virgin olive oil. Add chorizo and render its fat, 2 minutes. Push the chorizo off to the sides of the pot and add chicken meat. Brown and crumble the chicken, 5 to 6 minutes. Season the chicken with chili powder and cumin while it cooks. Combine the onions, garlic, peppers and beans to meats and cook another 5 to 6 minutes. Stir the beer into the chili and reduce the liquid a minute then add the tomatoes and heat through. Season the chili with salt, to taste, and reduce heat to low.
  • Bring 6 cups stock to a boil in a medium pot, stir in polenta and keep stirring until the polenta masses and thickens to a porridge, 2 to 3 minutes. Stir in butter, scallions and thyme and season with salt, to taste.
  • Fill bowls half way with polenta and make a well in the center. Fill up bowls with chili and serve.

1 pound Mexican chorizo, cut from casings
4 cloves garlic, chopped
1 onion, chopped
1 red or green bell pepper, chopped
1 tablespoon ground coriander (a palmful)
1 tablespoon ground cumin (a scant palmful)
One 15-ounce can diced tomatoes
1 pound cooked, diced turkey breast
2 to 3 cups chicken stock
2 tablespoons pureed chipotles in adobo
2 tablespoons cornmeal or quick-cooking polenta
1 tablespoon honey
Chili-flavored tortilla chips or Fritos, for topping
Lime wedges, for serving

Steps:

  • Heat the oil in a Dutch oven over medium-high heat. Brown the chorizo, crumbling the meat as it cooks. Add the garlic, onions and peppers and cook until softened, 5 minutes. Stir in the coriander, cumin and tomatoes, followed by the turkey, stock, chipotles, cornmeal and honey. Simmer over low heat to thicken, 45 minutes. Top with the chips, and serve with a lime wedge alongside. Cook's Note: Cool and store for a make-ahead meal, reheating over medium heat.

8 ounces pepper jack cheese, divided
2 finely chopped chipotle peppers in adobo sauce plus 1 tablespoon sauce, divided
1 can (15 ounces) crushed tomatoes
1/2 cup chili sauce
1 medium head cabbage
2 tablespoons olive oil
8 ounces bulk pork sausage
8 ounces fresh chorizo
2/3 cup chopped onion
1 jalapeno pepper, seeded and finely chopped
2 garlic cloves, minced
1/2 cup dry bread crumbs

Steps:

  • Preheat oven to 350°. Grease 12 muffin cups. Shred a fourth of the cheese; cut remaining cheese into 12 cubes. Set aside., In a small saucepan, bring 1 chipotle in adobo sauce, crushed tomatoes and chili sauce to a boil over medium heat. Reduce heat; simmer, uncovered, 5 minutes. Reserve 1/2 cup; cover remaining sauce and keep warm., Meanwhile, core cabbage head. In a Dutch oven, cook cabbage, stem side down, in boiling water to cover just until outer leaves begin to separate from head, about 2 minutes. Carefully remove outer leaves and repeat until there are 12 leaves. (Refrigerate remaining cabbage for another use.) Pat leaves dry. Trim the thick vein from the bottom of each leaf, making a V-shaped cut. Set aside., In a large nonstick skillet, heat oil over medium-high heat. ¼ cup chopped onion
2 cloves garlic, minced
1 pound ground beef
12 ounces chorizo sausage
1 (14 ounce) can diced tomatoes

1 (14 ounce) can butter beans
¾ cup tomato sauce
1 tablespoon chili powder
1 tablespoon salt-free seasoning blend (such as Mrs. Dash® Chipotle seasoning)

  • In medium pot (about 2 to 3 quarts) combine water, rice, salt, and bay leaf. Boil, uncovered until steam holes appear in rice, and grains on surface appear dry, about 8 minutes. Cover pot and cook rice over lowest heat 15 minutes more, until moisture is mostly absorbed. Remove pot from heat and cover. Let rice stand for 5 minutes undisturbed Transfer rice to a medium bowl fluff with a fork, stir in lime juice and cilantro.

Cook until meat has browned all over, and is fully cooked, 12 to 15 minutes. Remove from heat and stir in vinegar. Serve chorizo over cilantro- lime rice.
