This Tuscan Chopped Salad Recipe is incredibly healthy and delicious with my special homemade balsamic vinaigrette dressing.

3 cup Tuscan Kale (organic (about 1 bushel))
1.5 cup Broccoli (chopped)
¼ cup green olives (sliced)
¼ cup pepperoncini peppers (chopped)
¼ cup marinated artichoke hearts (chopped)
1 can chickpeas
½ cup provolone cheese (block, diced)
½ cup olive oil (high quality)
2 cloves garlic (minced)
1 tbsp parmesan cheese (finely grated)
¼ cup balsamic vinegar
¼ cup red wine vinegar
½ tsp salt (Pink Himalayan)
½ tsp pepper

  • Chop all ingredients into bite-sized pieces, accept the chickpeas. Add all ingredients to a bowl and toss with dressing. I recommend using only 1/2 cup and allowing diners to add additional

2 tablespoons lemon juice
2 tablespoons Dijon mustard
2 teaspoons dried oregano, crumbled
1/2 teaspoon dry mustard
1/2 teaspoon sugar
1 cup olive oil
8 cups chopped iceberg lettuce, one large head
2 1/2 cups diced cooked chicken
1 1/4 cups chopped seeded tomatoes
8 ounces dry salami, chopped
1 cup shredded mozzarella cheese
3/4 shredded provolone cheese
2/3 cup drained canned chick-peas (optional)
1/2 cup chopped fresh basil
3 green onions, sliced thin
1/8 cup olive (black or green sliced-optional)

Steps:

  • Vinaigrette:.
  • Whisk first 7 ingredients in bowl to blend; gradually whisk in oil.
  • Season with salt and pepper. Can prepare vinaigrette 1 day in advance. Cover and refrigerate; bring to room temperature and rewhisk before using.
  • Salad:.
  • Mix all salad ingredients in large bowl.
  • Toss with enough vinaigrette to cover.
  • Tip: Toss together vinaigrette and salad base at last minute.

⅓ cup Champagne vinegar
¼ cup chopped fresh parsley
½ shallot, chopped
½ tablespoon Dijon mustard
1 clove garlic
2 teaspoons salt
1 pinch ground black pepper to taste
1 large egg yolk
⅔ cup extra-virgin olive oil, or more to taste

Steps:

  • Combine vinegar, parsley, shallot, mustard, garlic, salt, and pepper in a blender. Add egg yolk. Blend together for 30 seconds to 1 minute. Keep the blender running as you add olive oil in a long, steady stream. Continue to blend until fully emulsified. Serve immediately.

1 head romaine lettuce, rinsed, trimmed, chopped into bite sized pieces, chilled
1/2 cup ditalini, uncooked
4 slices cooked and chopped bacon
1/2 cooked chicken breast, rotisserie chicken, cubed
1 large tomatoes, diced
2 ounces goronzola blue cheese, crumbled, any good blue will work
2 -4 green onions, sliced
1/2 ripe avocado, cubed
1/4 cup balsamic vinaigrette, Paul Newman's (lite)

Steps:

  • Cook pasta to package instructions.
  • Cook bacon until crisp, cool then chop.
  • Slice then chop tomatoes. Place in a strainer or colander to drain off any excess liquid.
  • Arrange lettuce in the bottom of a bowl. Top with pasta, tomato, cheese, cubed chicken onions, avocado. This can be done ahead of time. It looks very pretty to arrange the toppings in row.
  • Immediately before serving top & toss with vinaigrette dressing.
