Steps:
- Preheat oven to 400F.
- In a large pan or iron skillet, cook the ground beef and drain off the fat. Add the dark brown sugar, green onions, Worcestershire sauce, and pepper. Mix well. Pour off and discard some of the liquid but don't drain all the liquid from the canned beans. You want to pour off just the little bit of liquid that's settled on top of the beans. Then add the canned beans and gently mix. Taste the mixture and add salt if desired; gently stir again. Over mixing will cause the beans to get too soft and/or mushy.
- Pour into a large casserole dish. Lay the bacon strips on top. MY BEST TIP: Cut the bacon first, with a pair of scissors, into approximately 1-inch squares. Then spread the chopped bacon on top of the beans. This method makes serving the beans a lot easier as you don't have to deal with the bacon flopping around! Also, it ensures everyone gets a bite of bacon.
- Bake in the oven uncovered for about 30 minutes. Then, turn on the broiler and broil the baked beans for about 5 minutes to get the bacon nice and crispy.

Steps:
- Heat the oil in a large pot and add the jalapeno peppers and onions. Cook them down about 5 minutes, or until they become tender.
- Add the garlic and cook for another minute, until the garlic becomes fragrant.
- Add the ground turkey and break apart with a wooden spoon. Cook until the turkey is mostly cooked through, about 5 minutes.
- Stir in the tomato paste and cook another minute.
- Add in the beans, chicken stock (or beer), and seasonings, plus hot sauce to taste. Bring to a boil.
- Reduce heat and simmer for at least 30 minutes. You can easily let it simmer for an hour to let the flavors develop even further.
- Serve!

BEEF AND BLACK BEANS WITH RICE
Steps:
- Gather the ingredients.
- Heat the vegetable oil in a large skillet over medium heat. Add the ground beef and onions and cook, stirring frequently until the beef is no longer pink. Add the bell peppers and garlic and continue cooking for 2 to 3 minutes.
- In a small bowl combine the lemon juice, mustard, chili powder, soy sauce, and cayenne pepper with a small amount of tomato sauce; whisk until thoroughly blended. Stir in the remaining tomato sauce and then add the sauce mixture to the ground beef in the skillet. Add the drained black beans and cook for 20 to 30 minutes. - Heat 1/2 tablespoon vegetable oil in a large pot over medium-high heat. Pat the beef dry and season with salt and pepper. Brown in batches, about 4 minutes, adding more oil as needed. Transfer to a plate.
- Reduce the heat to medium and add 1 1/2 tablespoons oil to the pot. Add the onions and garlic; cook, stirring, until golden, about 6 minutes. Add 1/3 cup chili powder, the oregano and tomato paste; cook, stirring, 30 seconds.
- Return the meat to the pot and stir in the tomatoes with their juices, broth, espresso and pinto beans. Bring to a boil, then reduce the heat and simmer, partially covered, until the beef is tender, about 2 hours.

- Heat oil in heavy large pot over medium-high heat. Add onions; sauté until brown, about 6 minutes. Add jalapeños and garlic; sauté 1 minute. Add beef; sauté until brown, breaking up with back of fork, about 5 minutes. Add chili powder, cumin, and paprika, then mix in tomatoes with juices, beans, and broth; bring to boil. Reduce heat and simmer until chili thickens and flavors blend, stirring occasionally, about 45 minutes. Skim any fat from surface of chili. (Can be made 2 days ahead. Cool slightly. - Saute the bacon in a large pan over medium heat. Remove and drain on paper towel.
- Saute the chopped meat, onion, peppers and garlic in the bacon renderings until the meat is browned.
- Chop the bacon into 1/2 inch bits and add to the meat.

- Reduce the heat, cover and simmer 20-30 minutes.
- Serve over white rice.
GROUND BEEF, CORN AND BLACK BEAN CHIMICHANGAS
The filling for these chimichangas is delicious! Adjust all seasonings to suit taste, I add in 2-3 jalapeno peppers, seeded and finely chopped in with the ground beef mixture for extra flavor and heat but that is only optional. The amounts listed are enough for 6 chimichangas you can double the complete recipe, but keep the garlic amount no more than 2 tablespoons. These are really good!

- In a skillet cook the ground beef with onion, garlic and bell pepper until no longer pink; drain fat.
- Add in 1-2 tablespoons oil, chili powder, cumin, thyme and cayenne; cook stirring until well browned (about 10-12 minutes) season with seasoned salt (or white salt) and black pepper.
- Add in chopped tomatoes and salsa; cook stirring for about 15-20 minutes.
- Add in corn, refried beans and black beans; stir with wooden spoon until heated through (about 5-6 minutes) season with more salt and pepper if desired; remove from heat.
- Place about 1/2 cup ground beef filling down the middle of each tortilla; fold opposite sides of the tortilla to center over the beef mixture, then fold ends toward center; secure with a toothpick; place on a plate and refrigerate for about 20 minutes.
- Heat about 2-inches oil in a heavy skillet until 375°F.
- Fry 1-2 chimichangas at a time in hot oil about 1-2 minutes or until golden brown.
- Place a bed of shredded lettuce onto a large serving plate or dish (this is only optional) then top with chimichangas.
- Sprinkle each hot chimichanga with cheddar cheese then dollop with sour cream.
- Serve with salsa and/or guacamole if desired.
