FLOURLESS CHOCOLATE TORTE

Categories     dessert

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 6

1 1/2 sticks (12 tablespoons) unsalted butter or margarine, cut into small pieces, plus more for the pan
12 ounces bittersweet chocolate, chopped
6 large eggs
1/2 cup sugar
Pinch of kosher salt
Unsweetened cocoa powder, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter the bottom and side of a 9-inch springform pan. Combine the chocolate and 1 1/2 sticks butter in a heatproof bowl. Place the bowl over a saucepan of simmering water (do not let the bowl touch the water) and stir until melted and combined. Remove the bowl from the saucepan and let cool slightly.
  • Combine the eggs, sugar and salt in a large bowl. Beat with a mixer on medium-high speed until pale and thick, 5 to 8 minutes.
  • Gently fold half of the melted chocolate mixture into the egg mixture until just combined, then gently fold in the rest. Pour the batter into the prepared pan and bake until the top is no longer shiny and barely jiggles and a toothpick inserted into the center comes out with only a few crumbs, 35 to 45 minutes. Transfer to a rack and let cool completely in the pan. Remove the springform ring and transfer to a platter; dust with cocoa powder.

FLOURLESS COCOA COOKIES

Flourless Cocoa Cookies image

Whenever I'm called upon to make something gluten-free, I opt for classics that are naturally sans wheat flour--like Pavlovas, Macarons, Macaroons, and these flourless cocoa delights. These cookies are tender, delicately chewy, and incredibly chocolaty--if a brownie and a cookie had an affair, this would be their love-child. I like to add a sprinkling of flaky Maldon salt, because these are for grown-ups.

Categories     dessert

Time 25m

Yield 22 cookies

Number Of Ingredients 8

170 grams (3 large) eggs
340 grams (3 cups) powdered sugar
106 grams (1 1/4) cups unsweetened cocoa powder
1 gram (1/2 teaspoon) ground cinnamon
1 gram (1/4 teaspoon) fine sea salt
7.5 grams (1 1/2 teaspoons) vanilla extract
142 grams (1 cup) bittersweet chocolate chunks
Maldon salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a medium bowl, lightly whisk the eggs.
  • Sift together the powdered sugar, cocoa powder, cinnamon, and salt. Add to the eggs, whisking until the mixture forms a smooth batter, about 1 minute. Add the vanilla and chocolate chunks and mix until fully incorporated; switch to a rubber spatula if necessary. The batter will be very thick and sticky.
  • Use a No. 30 (2-tablespoon) scoop to portion the batter onto the prepared baking sheets--stagger the cookies, leaving about 1 1/2 inches between them. Sprinkle a little Maldon salt on each cookie.
  • Bake the cookies, rotating the sheets from front to back and top to bottom at the halfway mark, until set around the edges and cracked on top, 10 to 12 minutes. The cookies may look slightly underbaked in the center--that's exactly what you want. Cool the cookies completely on the pans.

FLOURLESS CHOCOLATE CAKE

Flourless Chocolate Cake image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 3h50m

Yield 12 servings

Number Of Ingredients 10

Nonstick cooking spray, for the pan
8 ounces chopped semisweet chocolate
2 sticks (1 cup) salted butter
3/4 cup granulated sugar
1/4 cup packed brown sugar
6 large eggs
1/2 cup cocoa powder
1 tablespoon vanilla extract
Dash of kosher salt
Powdered sugar, for sprinkling

Steps:

  • Preheat the oven to 325 degrees F. Spray a springform pan with cooking spray and line the bottom with a circle of parchment. Coat the top of the paper with the spray.
  • Melt the chocolate and butter in a double boiler, stirring in 45-second intervals to avoid burning. Set aside to cool for several minutes.
  • In the bowl of a mixer, beat the granulated sugar, brown sugar and eggs until fluffy. With the mixer on low, add the cocoa powder, vanilla and salt. Slowly drizzle in the cooled chocolate mixture and mix until just combined.
  • Pour the batter into the pan and smooth the top. Rap the pan on the counter a couple of times to release any trapped air bubbles. Bake until just set on top, about 50 minutes. Remove and allow to cool completely, then chill in the refrigerator for at least 2 hours or overnight.
  • Just before serving, remove the cake from the pan and place it on a platter. Sprinkle the top with sifted powdered sugar.

FLOURLESS CHOCOLATE CAKE

Flourless Chocolate Cake image

This gluten-free cake can be enjoyed at room temperature, but chilling it transforms the texture, making it deliciously dense.

Provided by Food Network Kitchen

Categories     dessert

Time 1h25m

Yield 8 to 10 servings

Number Of Ingredients 7

8 tablespoons (1 stick) unsalted butter, plus more for buttering the pan
8 ounces bittersweet chocolate (not chips), chopped
3/4 cup sugar
1/3 cup unsweetened cocoa powder, plus more for dusting the cake
1/4 teaspoon fine salt
6 large eggs, separated
Whipped cream, for serving

Steps:

  • Preheat the oven to 325 degrees F and butter the inside of a spring-form pan. Melt the chocolate and butter in a medium saucepan over medium-low heat; stirring frequently until smooth. Stir in the sugar, cocoa powder and salt until all of the lumps are gone. Remove from the heat and let cool for a few minutes.
  • Meanwhile, beat the egg whites in a large bowl with an electric mixer on medium-high speed until they form stiff peaks, 2 to 3 minutes.
  • Stir the egg yolks into the cooled chocolate mixture, then stir in about a quarter of the whipped egg whites. Scrape this lightened chocolate mixture into the remaining whipped egg whites and gently fold until mostly combined (it's ok if there are some streaks of egg white). Pour into the prepared pan and bake until the center of the cake no longer wiggles, 40 to 45 minutes. Let cool completely in the pan, on a wire rack (the cake will deflate slightly). Unlock the pan and dust the top of the cake with some cocoa powder. Cut into slices and serve with whipped cream.

½ cup water
¼ teaspoon salt
¾ cup white sugar
18 (1 ounce) squares bittersweet chocolate
1 cup unsalted butter
6 eggs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.

  • Flourless Chocolate Cake. This cake not only tastes intensely chocolatey, but it looks like it came straight from a bakery. The best part? It needs just one bowl and a handful of ingredients, including butter, sugar, cocoa powder, eggs, and (of course) chocolate.
  • No-Bake Cookies. I know some people that don’t like the idea of eating raw flour. I’ve never had any issues, but I get where you’re coming from. So to avoid all that, why not try these easy-peasy, no-bake, flourless cookies?
  • Flourless Peanut Butter Cookies. In my eyes, the perfect peanut butter cookie is soft, moist, and bursting with peanut butter flavor. No additions, please!
  • Microwave Peanut Butter Fudge (3 Ingredients) Fudge has long been a favorite in my house, and I love any kind you can think of. That being said, I know it can take some time to master, and we don’t all feel like beating a hot pot for 10 minutes to get the right consistency.
  • Flourless Chocolate Cookies. These babies taste like a cross between a chewy chocolate cookie and a brownie. Between the tender middle and the light crackle on top, they might just be perfect.
  • Eagle Brand Fudge. If you’ve ever made fudge at home, you’ll know that most recipes call for condensed milk. So what better recipe than one from the source?
  • 5-Ingredient Flourless Brownies. If like me, you always reach for that ultra-fudgy middle piece, these brownies will knock your socks off. The recipe is quite similar to the flourless chocolate cake recipe, and the only real difference is the quantities of everything.
  • Chocolate Cornstarch Pudding. I know that a boxed pudding mix is about as easy as it gets, but if you find you’re out, did you know you can make a batch in a matter of minutes?
  • Chocolate Banana Cookies. Not only are these gluten-free, but they’re also vegan! All you’ll need is some ripe bananas, cocoa powder, and peanut butter.
  • Chocolate Covered Banana Pops. If you’re looking for something quick and all-natural, you can’t go wrong with chocolate-dipped, frozen bananas. Now, unlike the recipe above, you won’t want super ripe bananas.
